Easy lunches are something I strongly support. I’ve worked from home for years now and even though I have access to my entire kitchen and fridge, the last thing I want to do is pause my day to make lunch. I ain’t got time for that! Having easy leftovers on hand, like a chicken salad that just gets better with time, is something I need as a constant in my life. And I think this is my favorite chicken salad to date. Even my husband who hates mayo was obsessed with this chicken salad. Hating mayo is so offensive. I just don’t understand it. What I do understand is having a chicken salad loaded with veggies and herbs. I get that.

PaleOMG Mediterranean Chicken Salad

I’m officially back in Denver after my 2-week trip to Bali, trying to get through the jet lag each day. I wake up feeling well rested and ready to punch the day in the face, then I get to about 2pm and the day punches me back. So many goals, so little energy. But luckily the jet lag has been easier coming back home then it was going to Bali, most likely because I was sick the moment we touched down in Bali. Airplanes are gross, man. I’m so over them. Whoever has sex in airplanes needs to go to the doctor immediately – you definitely have the clap. Sorry, just giving you the facts here. It takes almost 30 hours to get to Bali, which means that’s 30 hours straight of hovering over toilets in urine stained bathrooms. I know this is a recipe post but MAN, I’m pumped to have my own toilet back. Most of the toilets in southeast asian are the ones you stand on and get into a deep squat to go to the bathroom. This is troublesome for most of us Americans who don’t normally have to put that much strain on our ankles. So what happens? We pee everywhere. This also happens with the standard American toilet over there – people try to stand and squat on them and they pee everywhere. Being in a bathroom that is not covered in urine is now officially my favorite hang out spot. If you need me, I’ll be in my bathroom the rest of the week, just sitting on the toilet, living my best life.

Speaking of living my best life, we upgraded to business class for our 13 hour flight back from Seoul to the US, and it was the best decision I’ve ever made. Ever. Being able to lie down on a flight is the most magical experience. I’ve never been loyal to one airline because they are all pretty helpful depending where you’re going (except for Frontier, Frontier can go to hell), but I’m getting pretty hooked on Delta lately. We flew Delta to Bali and their Delta One was unbelievable and their Delta Comfortable was pretty damn spacious. I’m into Delta. Even the Delta Sky Lounges are fabulous. I could live in one and be quite content. Can you tell me something? What’s your favorite airline? And are you loyal AF? I just made silver status with Delta, which is obviously pretty easy since I’ve been loyal for approximately 12 seconds, but I’m quite excited about it. I’m hoping this status upgrades me on my upcoming flight to Charleston this weekend. I officially hate traveling and time change, so I’m hoping Delta feels my negative energy and gives me a better seat. I’ve heard putting negative energy out into the world brings positive change, haven’t you? Ok, my nails are so long, I can barely type. It is disgusting. I must go. But please tell me about your loyalty. I must know!

Mediterranean Chicken Salad

Ingredients

Scale
  • 3 cups cubed cooked chicken, cooled
  • 1 english cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, diced
  • 6 oz marinated artichoke hearts, drained and diced
  • 1/3 cup kalamata olives, pitted and halved
  • 3 tablespoons capers
  • 1/2 cup avocado oil mayo
  • juice of 1 lemon
  • 3 tablespoons roughly chopped fresh dill
  • 3 tablespoons roughly chopped fresh mint
  • 1 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Place all ingredients in a large bowl.
  2. Mix to combined.
  3. Keep in the fridge to cool and help the flavors meld together!
  4. Serve with almond flour crackers, plantain chips or in a gluten free roll.
  5. Live your best life.

    This sounds silly but what is best way to cook the chicken breast for this recipe?

      you can simply cook chicken breasts in the oven! 400 for 15-20 minutes, depending on the thickness

    I’ve made this a few times and it’s been a crowd pleaser. So yummy! Makes me forget I’m doing whole 30. Also subbed some leftover mahi-mahi for the chicken once. Delicious. The fish breaks up a lot during the mixing, which is good if you have kids who think they don’t like fish. Sneaky parenting 😁

    This salad is amazing! I’ve made it several times, sometimes with shrimp or fish. Homemade Mayo is the best!
