I know what you’re thinking…REAL ORIGINAL JULI…and you’re right. This recipe isn’t a original. Really almost any paleo blog you look at out there, you can find some kind of egg muffin/egg cupcake/egg round, but that’s because it’s simple. And that’s what people like. Simple sh*t. Most people don’t like to spend hours in the kitchen, they’d rather be flirting with men at Whole Foods. That’s just me actually. Whatever. I’ve never even talked to a man at Whole Foods. I have hopes of that occurring though. Someday…someday.
Guess what I got this weekend!?!? PaleOMG Black Tanks!!!! Yes I did! Check out the link to buy your own from Renegade Fitness {NO LONGER AVAILABLE}!! We will be getting something even cooler in soon! Just you wait!

Anywho, even though this recipe is a bit dumb, it’s still super special to me. You know why?!? Because it was the first video I made of myself cooking!! So exciting! I’m not really good with being on camera. But I tried. I talked about a lot of random sh*t…but that’s what I do in my blog posts so I guess it makes sense. If you think I look stupid in the video…you’re correct. Special thanks to Tom who helped me edit this video and spent hours putting up with me and to Laura (the roomie) for recording me on a Saturday afternoon. She’s pretty damn awesome. And btw, the cooking video is on my YouTube station which has all my wod videos I had to turn in when I did the AgainFaster Wod Series. Some embarrassing. Ignore those. My b.
On-The-Go Egg Bites
- Yield: 6 1x
Ingredients
- 1lb ground pork mild italian sausage
- 12 eggs, beaten (if preferred)
- 1–2 narrow sweet potatoes, sliced
- salt and pepper, to taste
Instructions
- Preheat your oven to 350 degrees.
- Add your ground pork to a large skillet over medium heat. Use a spatula to break it up into crumbly pieces
- While the pork is cooking, slice your sweet potatoes a little bit thicker than a chip would be…I’d say the thickness of 2 quarters stacked together. Real technical. Then beat your eggs (unless you are going to crack them directly into the egg cups).
- Once the meat is cooked through and there is no pink remaining, transfer that to a plate (a slotted spoon will be best because it will keep the leftover fat in it, but just pouring it works as well).
- Now add your sliced sweet potatoes to the pan with the leftover fat and turn the burner on high.
- Cook for about 5 minutes per side, depending how thick they are but you want them to be soft so they will cook through fully when they are in the oven.
- Now place a cooked sweet potato slice into your silicone muffin pan or greased muffin tin, top it with a little ground pork, then another slice of slice potato and top it all off with some beaten eggs or crack an egg into it, it will bind it all together!
- Cook for about 10-15 min or until nothing oozy is moving around in the tins when you check them.
- Let cool, top with hot sauce!!
Notes
I got about 13 cups made with these ingredients!

Hi!
I hope I’m not being redundant, if somebody already asked this question.. Instead of using a whole egg can you use egg whites? Will it cook the same?
-May be a silly question but I am cooking newbie!
Thanks!
Logan
Yeah you can use just egg whites! It should cook just the same!
I made these little bad boys for breakfast this morning, and they were a definite success!!!! My kids are scarffing them down as we speak. Thanks for all the yummy recipe ideas! And your bad a$$ writing style. Lovin paleomg. ;D Happy Sunday!!!
Juli – I started the lurong paleo challenge and have been looking for good recipes. Most of them are boring. I finally found your site and love all of your recipes! So I tried one today, this one, the Egg Bites Muffins. OMG LOVE THEM! Thanks for the great recipe, cant wait to try more of yours! I am so glad I finally found a paleo recipe site by someone who loves food as much as I do! Keep up the great work! 🙂
Thank you for posting your recipes in this video form… it makes the process of actually cooking much easier to follow and to first hand see the results. This recipe was my first pick to attempt from your site. It came out so incredibly good that i cannot wait to try some more! I have already promoted your site to nearly everyone I know! YOU ROCK! p.s. this was the first time i have EVER eaten sweet potatoes and like it!!!
Hi Julie! Love this recipe and can’t wait to try it. Quick question–think the egg bites would stay good if they were frozen? I’m in college and a quick breakfast is always best. Thanks for all these great recipes!
I’m not totally sure, but it woulnd’t be too much work or money to at least try one batch
Hey Juli,
I just came across your website looking for some Paleo recipes and found yours. (I have Lupus and I’m just discovering that the grains might be part of the problem so I’m hard at work to revamp my food.) So anyways I tried the egg cups and they’re great! I put a bit of kale in there too and it was perfect. Thanks so much!
Funny you mention grocery flirting.. I found myself flirting at the Whole foods salad bar one time! I happened so quickly, I was quite shocked because that doesn’t usually happen to me. I am new to your blog but loving it! Good Luck!
JB,
OMG I am in love with this lemme tell you why. This is a PERFECT Zone/Paleo snack! I feel like a good chunk of your website/blog viewers are CrossFitters (myself included) which a lot of CrossFitters follow a Zone/Paleo diet (myself included). ..So basically I wanted to suggest that you maybe make a Zone/Paleo tab that could possibly have different 1, 2, or 3 block snacks and meals!?? I really love all that you do on here but sometimes its hard to fish through and make sure the recipes are balanced blocks before I make them! Again, just a suggestion and I’m not even sure if you’ll notice this comment but I really hope you do because that would be paleoOMG awesome!!
P.S. Ive just ordered a black tank cant wait super excited yeeee!
Just made these!! Can’t wait to try them in the morning.
Hi there! I really enjoy your videos and recipes! You’re a great pick-me-up when I’m feeling down! And holy bajoly I am the laziest when it comes to cooking so I highly appreciate your easy peasy recipes. I would like to buy one of those awesome tanks. On the Renegade site I can’t find a sizing chart (please tell me if I’m just a complete knob and it’s totally there right under my nose). For a 6′ tall 148 lbs gal what size would you recommend? It looks like they are a lovely long fit.
I’m 5’7, about the same weight and I wear a medium comfortably. I think a medium would be good for you!
