Sunday started off really well. Laura and I grabbed lunch at Wild Eggs then we picked up 2 movies to watch while I baked these muffins and made up a new recipe for dinner. Meaning I destroyed the kitchen and ran the dishwasher a total of 3 times in one day. Let’s just say there is A LOT of bacon grease covering the stove top right now, and maybe the floor. Anyways. The two movies we watched were pretty damn good. We first watched ‘Horrible Bosses’. I might have peed a little on the couch. Hilarious sh*t, I tell you. We then proceeded on to watch ‘Something Borrowed’. Oh.my.god. I legit cried. Legit tears shed from my eyes.  Why? Because it’s a movie about love, and I lack that. So did I eat half a bag of dark chocolate chips? That’s none of your business.

But what I did get out of that movie is the person I’m meant to be with. Sadly, I don’t think he’s a CrossFitter. Really huge bummer. BUT he is ridiculously dreamy so I think it could still work out. I mean, he’s REALLY EFFING DREAMY. Look at this guy. I melt every time he looks at me through the TV screen. Such a tease. Ok, I’m that girl. I’ll stop. But seriously, I love him.

Here is a couple things I’m guessing about my main squeeze. He is most likely shorter than me. Most attractive men are. I’m 5’6″ people, I’m not exactly a giant. And I probably have bigger arms then him. But these are all things I’m willing to look past if he is willing to let me cook for him and kiss me daily. I’m not asking for much.What I do need to do though, is come to terms with knowing I will never meet him. Or kiss him. So where the hell is my prince charming? Ugh. I’m guessing he’s not waiting for me in my living room while I cook on a Friday night. Damn. Damn, damn, damn.

INGREDIENTS :

DIRECTIONS :

  1. Preheat your oven to 350 degrees.
  2. Sift together all your dry ingredients: almond flour, coconut flour, ground coffee, cocoa powder, baking soda, salt and cinnamon.
  3. Whisk your eggs and melt your chocolate in separate bowls. You can melt your chocolate on the stove or in the microwave. I did microwave because it's easy. But be careful not to burn. Heat only 20 seconds at a time and stir to help the melting process.
  4. Add eggs and melted chocolate to your dry ingredients along with honey, coconut milk, and coconut oil. Mix to combine. These muffins are pretty dense. If you want them fluffier, add 2 more eggs. Just FYI.
  5. Add to greased muffin tin. You know you really should add the batter to? Silicone muffin liners. These things are genius.
  6. Bake for 20-25 minutes.
  7. Let cool then consume.

  3. Juli! First, I love your blog and laugh my guts out every time I read it. I loved Something Borrowed as well and find Colin Egglesfield incredibly attractive… I would just rather John Krasinski. I just thought that I'd pass on that Colin is 6' and has very nice arms…he may very well be a CrossFitter- Don't lose hope!

  4. Delving into your psych deeper I am thiking you need a man and quick. I can tell you that I love to eat paleo and have made many of your meals. I think we could do a trial run. I know I am pretty enough and your food ideas look aamazing and are. I will come over for some meals and kiss you for them. What do you say? I crossfit and am only 3.5 inches taller than you.

  9. Hey Julie! I was thinking of making these tomorrow, they sound amazing. A couple of quick questions … 1) how many muffins does this recipe make? 2) how much batter do you use per a muffin tin?

  10. Omg. These were the best cupcake/muffins/baked good I have ever made. Moist. Chocolatey. Sweet. Delish! My only downfall is they are major calorie bombs. I’m trying to figure out how to work them down, without losing the perfection. I managed to get 19 out of my batch of mix. Yum!

  12. These are awesome!! I frosted a few with your coconut/pecan butter~it’s like eating a piece of German chocolate cake! LOVE!! They freeze beautifully so I can make a batch and hide them from myself. 😉 Another awesome recipe. You rock!! You have saved my a$$ with my family! Whenever they complain about the new plan, I pull out one of your recipes and it shuts them right up!!

  13. I just made these and holy cow are they deelish! My batch made 12 regular size muffins and 12 mini muffins.

    Question about the coffee — do you mean coffee grounds, like the stuff I usually put in the filter and then toss? I had some instant espresso powder on hand and used that instead.

    The other question/comment is, do you realize how much sugar is in these suckers? The reason they are so tasty, methinks is because there are 56g of sugar in the chocolate chips and another 130g in the honey!

    I cut the honey to 1/4th but it was still super sweet. I made twiddle with some more to cut down the sugar but the flavor/texture of the muffins was spot on.

  14. So I know I’m a little late to the game with this response but I was looking at this recipe and saw your post about Colin as well. First I’m going to do the whole OMG I looove your food and blogs thing because, well duh, who doesn’t! Second, I had the amazing luck to SEE Coling in person!! Total fluke! I just had to share: If you want to meet him try the DoubleTree Suites in Phoenix! I saw him there in the hot tub (sigh) while relaxing before I went to rehearsal dinner for my best friend’s wedding (also a good movie, but this was real life)!! I snuck a pic of him on someone’s phone….Let me just say 1. He’s soooooo cute in real life (close your mouth Kate you look like a you-know-what)! 2. His arms were huge and perfect! 3. He’s tall! Maybe 6 foot?! Had I of known I would have followed him back to his room and grabbed him for ya but then kept him for myself with every good intention of sharing and then realizing I can’t share something this yummy and good! I guess it’s better this way that I let him walk away.
    Anyway…off to take a cold shower and make these muffins!

  16. Have you found a substitute for almond flour/meal? I’m allergic to almonds (all tree nuts) and would love to make some of these recipes, but don’t know what substitute to use.

  17. Every other week I’ve been making some of your paleo muffins when I prepare my week’s worth of breakfast to take into the office. I was quite pleased that this made almost a dozen muffins. They’re more dessert-y than a muffin you’d eat with breakfast but every day this week I get to start with dessert (after 6AM CrossFit), but I’m not complaining!

    I love your baked goods. That was something I /thought/ I was going to miss when I started paleo. Thanks.
