I’m obsessed with parfaits right now. Remember my Blueberry Carrot Cake Parfait? NO?? YOU HAVEN’T TRIED IT?!?! Oh dear lord. You need to. It was by far the best thing I’ve ever eaten. Thank gosh I don’t exaggerate, ever.

Please do not tell me that Lamar and Khloe are getting divorced. Say it isn’t so. How will any relationship last if they can’t make it work?!

I don’t like high wasted pants. And I especially don’t like that they are making a comeback. I don’t think they shape women well. Because they don’t. Don’t act like I’m not right.

Ok, so it’s pumpkin season again. I know this because when I went to Whole Foods the other day, all pumpkin puree was sold out. That’s some bullish*t right there. I needed that pumpkin so I could make this recipe. Hence why it wasn’t posted yesterday. THE BASTARDS. Anywho, since the state of Colorado is flooding and no sunlight is to be seen, it makes me want pumpkin even more. Not sure why, but it must officially be fall. And I know this because I’m craving a pumpkin spice latte from Starbucks. Please do not give me the run down about needing to support local coffee shops. I get that enough on instagram. And I’m literally sitting in my favorite local coffee shop, Sugar Bake Shop, as I type this. But it doesn’t mean I can’t crave their competition. I want one. I want one bad, make with heavy cream to make it like a warm milkshake. Thanks, Clark. You’re a genius.

My thighs rubbing together have totally ruined the inner lining of my lululemons. Can I send them back and tell them they need to improve their wunder unders for us thicker girls? I don’t even consider myself a thicker girl, but my pants do. And Sergio does. He told me I’ll always be a bigger girl. What is that suppose to mean, Sergio? This f*ckin’ guy.

Ooo before I forget, even though I’ll remind you like 1000x, I will be selling and signing my cookbook coming up October 5th at Sports Authority Field for the Rx Dash ‘n Bash. It’s a competition for ANY CrossFitter. Newbie, professional athlete, whoever. This partner competition is a challenge with over 2 miles of running and 5 workouts with a fun twist. Spectators are welcome to come cheer on their friends and there will be a party awaiting at the finish line. If you want to dress up all weird, that’s supported as well. I’ll be at the finish line selling my book and ready to meet any wonderful people who are ready to eat delicious paleo food!

Pumpkin Pie Granola Parfaits

Ingredients

Scale

For the pumpkin pie

For the coconut whipped cream

For the granola

Instructions

  1. Mix together all pumpkin pumpkin pie ingredients together in a bowl until well combined.
  2. In a different bowl, add the coconut cream that sits on top of the coconut water and whip together all coconut whipped cream ingredients until smooth. (leave behind the coconut water for shakes or whatever else)
  3. In a bowl or an adorable jar, layer it up. Pumpkin, whipped cream, and paleo krunch cereal. Then eat up!

Notes

*The 10 hour prep time is the time that you leave the can in the fridge overnight. Duh.

    Alright.. So I’ve been stalking you and your blog for about a month and it’s so crazy I never knew what “paleo” was but had in fact been eating paleo since I was at least 16 (now 21). You helped me jump into crossfit and I want to thank you for that because it is truly a slice of heaven and the results with eating this way are just under estimated in society.

    Anyway.. Now that I’m done basically praising your gifts I JUST made this and I want to take a bath in it. Really. Thank you.

    I made these a couple nights ago and made my own paleo granola to go with them. It made a few so they have been sitting in the fridge and it’s nice to have a treat to look forward to. This morning I had one for breakfast…who doesn’t need a treat to start the day;)

SOooo this is probably a really dumb question…AND im sure the answer is somewhere in the posted comments, maybe! but im at work trying to type this as fast as i can so i dont get caught being unproductive….im really realllly new at this paleo diet. doing it because i have RA and will try anything before having to go on medication for it! anyway..my question…is coconut milk the same as coconut water? you said to skim the milk off the top and use the water for whatever else. im sorry im confused. i though coconut milk was thick and all white. cause i used it to make that alfredo sauace recipe of yours! (btw i love your blog!) …anyway….so is it the same? i know its a ridiculous question. but educate me please if you would? :/

      hey brittney!! no worries, it’s a bit confusing if you haven’t ever done it. or used the right coconut milk. try using thai kitchen coconut milk, put it in the fridge overnight. when you open it, you’ll have a hard mixture on top which is coconut cream. the cream and the water separate, so the water is at the bottom. you remove the cream with a spoon and that is the whipped cream. does that make sense?

    Just made four of these delicious little parfaits… Good thing they are in separate bowls, because portion control has never been one of my strong suits.

    I had some leftover roasted and spiced pumpkin that I didn’t know how to use up, so I cut it off the skins and blended it. I also used your granola recipe instead of the kind you called for.

    Anyways, AMAZING.
