I’m obsessed with parfaits right now. Remember my Blueberry Carrot Cake Parfait? NO?? YOU HAVEN’T TRIED IT?!?! Oh dear lord. You need to. It was by far the best thing I’ve ever eaten. Thank gosh I don’t exaggerate, ever.

Ok, so it’s pumpkin season again. I know this because when I went to Whole Foods the other day, all pumpkin puree was sold out. That’s some bullish*t right there. I needed that pumpkin so I could make this recipe. Hence why it wasn’t posted yesterday. THE BASTARDS. Anywho, since the state of Colorado is flooding and no sunlight is to be seen, it makes me want pumpkin even more. Not sure why, but it must officially be fall. And I know this because I’m craving a pumpkin spice latte from Starbucks. Please do not give me the run down about needing to support local coffee shops. I get that enough on instagram. And I’m literally sitting in my favorite local coffee shop, Sugar Bake Shop, as I type this. But it doesn’t mean I can’t crave their competition. I want one. I want one bad, make with heavy cream to make it like a warm milkshake. Thanks, Clark. You’re a genius.
My thighs rubbing together have totally ruined the inner lining of my lululemons. Can I send them back and tell them they need to improve their wunder unders for us thicker girls? I don’t even consider myself a thicker girl, but my pants do. And Sergio does. He told me I’ll always be a bigger girl. What is that suppose to mean, Sergio? This f*ckin’ guy.

It’s a competition for ANY CrossFitter. Newbie, professional athlete, whoever. This partner competition is a challenge with over 2 miles of running and 5 workouts with a fun twist. Pumpkin Pie Granola Parfaits
- Yield: 4-5 1x
Ingredients
For the pumpkin pie
- 1 (14 ounce) can of pumpkin puree
- 3 tablespoons almond butter (or sunbutter if you are nut free)
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon powdered ginger
- pinch of salt
For the coconut whipped cream
- 1 (14 ounce) can of coconut milk (refrigerated overnight)
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
For the granola
Instructions
- Mix together all pumpkin pumpkin pie ingredients together in a bowl until well combined.
- In a different bowl, add the coconut cream that sits on top of the coconut water and whip together all coconut whipped cream ingredients until smooth. (leave behind the coconut water for shakes or whatever else)
- In a bowl or an adorable jar, layer it up. Pumpkin, whipped cream, and paleo krunch cereal. Then eat up!
Notes
*The 10 hour prep time is the time that you leave the can in the fridge overnight. Duh.

Instead of maple syrup in the filling, I soaked 10 dates over night and whipped all the ingredients in my blender. I also used ground cloves instead of allspice because that’s how I roll.

Juli, you’re awesome. You are my first paleo blog I follow, and it’s awesome that you’re in Denver too.
Question for you, do you know anywhere to find the ingredients list of foods online? I am currently working at an office where they will pick up my lunch, but no one else has as many restrictions as I do. I want to give them some commercial/pre-packaged foods that are handy, but I don’t want to spend an entire saturday afternoon at the grocery store.
Any tips? (Other than pack my own food, because while that’s handy some of the time, I’d love to cut down my food bills and have them pay for some of it!)
i like to cook in bulk and lots of stuff in the crockpot. that way i have food for the week and don’t have to run back in the middle of the week and spend more money!

I spent most of last night engulfed in your “Rants” section of your blog.. I just love reading all of your posts! I think they are honest, real, personable, and best of all, HI-LAR-I-OUS!!!!! One that really go to me was the “How CrossFit & Paleo Took Over My Life”. I really appreciated your honesty and felt that in some way, I could relate. It makes me sad that you don’t always see how awesomely fit and strong you are (regardless of if your lulu pants rub!!!).

Omgosh! Ok, so I made this & it was Suuuper Yummy!
Make couple of adjustments: used your granola recipe instead of paleo krunch; and made half coconut cream and half cashew cream (whipped up both together in blendtec, with maple syrup and vanilla).

I am a “thicker thigh” gal and i had a pair of lululemon pants that wore a lot in the crotch region. I read somehwere or was told by someone that they would exchange them. I think I had them for less than a year …they exchanged then for a totally new pair! They told me they has issues with some of the styles. I have another pair that I have had for probably 5 years that didn’t wear like these did. Try it out, im sure they would work with u! Ps. I love all of yoru recipes!! I’m looking to have lower calorie intake and lose some weight before I try some of them, but they all look amazing!!
I am really surprised the pumpkin doesn’t get cooked at all…I always find that uncooked canned pumpkin has a very “raw” taste. Is that true here? Or do all the other ingredients make taste not raw?
I agree, but you could always roast your own pumpkin!! Here it works because I add stuff so it doesn’t have that same raw taste
