I want curry all the time right now. I think I’ve said that at least 6 times on the blog in the last week, but I’m serious. Who cares about anything else when there’s curry to eat. I’ve gone out to get curry, my friend Vanessa made me curry, and now I’ve made curry myself. What’s cool about this dish is if you want to make it in under 15 minutes, all you have to do is swap the beef out for shrimp and just remove the broccoli since it doesn’t cook through as quickly. Boom, easy quick meal. No complaining about food taking long. Because complaining is gross. Nobody likes a complainer, unless I’m doing the complaining, then it’s totally fine. Wait, what?
Crap, you know what I haven’t done in quite sometime. Given you a wedding update!! I’ve been writing a book, buying a house, trying to figure out what the f*ck to put in the house, feeling broke from buying a house, going on book tour, oh yeah…and planning a wedding? Sh*t, I need to get on it.
Here’s what we do know:
- We are getting married in Montego Bay, Jamaica in spring
- We booked the hotel we are staying at and we’ve sent out invitations via email. No paper invitations for us. Pretty sure 2 out of 80 people have booked it. Killing it, friends, you’re killing it.
- Brian will have 9 groomsmen and I will have 5 or 6 or 4 bridesmaids? I still haven’t even asked all of mine. Dammit, Juli. One bridesmaid got knocked up on me and will have a child hooked to her boob that month, so she won’t be making it. Selfish.
- I have a wedding dress. Wellllll, I pick it up next week in LA. I still need a veil though.
- Also, I bought a dress a while ago because I found one I loved and now I need to sell it since I found the one I will actually be wearing. Where the hell do I do that? Teach me stuff.
Here’s what we don’t know:
- Colors. Who the hell wants to choose colors? Not me. So I think I’m going to tell my girls that they can get a taupe, mauve or blush dress. Short or long. I plan on giving them dresses to choose from or they can choose whatever they want. We are going to be tipsy, in Jamaica, on the beach…I absolutely do not care what they wear. They’re trustworthy humans. Oh crap, I have a bridesman too to think about.
- Flowers. I could give a crap about flowers. Flowers die. I don’t want my love to. So I do not care about them. Isn’t that a charming analogy?
- Flights. Sh*t, we need to book that.
- My hair and makeup. They have a person who does it there, but that’s nerve racking to me. I need to figure that out. I also want extensions. Just the clip in ones. I want so much hair that Brian can’t find me face when he pulls my veil up. Ok, maybe a little less than that.
- Should I have a bachelorette party? Brian already had his bachelor party. He’s on top of his sh*t. I just feel bad asking my girlfriends to do anything that costs money when I’m already asking them to go to Jamaica. Tell me what to do.
- Everything else. I need to check in with my travel agent. I need to get on top of my sh*t.
I’m exhausted from thinking about wedding planning. Let’s just eat curry instead.
Red Thai Beef Curry
- Yield: 4 1x
Ingredients
- 2 tablespoons ghee
- 1 pound flank steak, thinly sliced
- a couple pinches of salt
- 3 minced garlic cloves
- 1/2 medium yellow onion, diced
- 2 teaspoons grated fresh ginger
- 2 (14 ounce) cans of coconut milk
- 2 tablespoons red curry paste
- 1 teaspoon fish sauce
- 1 tablespoon coconut aminos
- 1 red bell pepper, sliced
- 1 head of broccoli, cut into florets
- 1 cup sliced mushrooms
- 1 lemongrass stalk
- 2 lime leaves
For garnish
- fresh sliced limes
- chopped fresh cilantro
- cauliflower rice (optional)
Instructions
- If you are making cauliflower rice, make that first.
- Place a wok or large saute pan over medium heat. Add ghee and thinly sliced flank steak. Sprinkle with salt and cook until seared and browned, about 3-4 minutes. Remove and set aside for later. To the hot pan, add garlic, yellow onion, and ginger and sauté for about 1 minute.
- Next add 1 can of coconut milk (cream and water) along with red curry paste, fish sauce and coconut aminos. Use a whisk to break up the curry paste and mix to combine. Then add pepper, broccoli, mushrooms, lemongrass and lime leaves. Cover and let cook for 15 minutes or until broccoli is tender.
- Once the broccoli is fork tender, add seared beef back to the wok or pan along with the cream of the other can of coconut milk.* Cook for 2-3 more minutes to heat through.
- Remove lemongrass stalk and lime leaves. Garnish curry with fresh lime juice and cilantro and serve with cauliflower rice.
Notes
*For the 2 cans of coconut milk, use 1 full can of coconut milk and for the second can, scoop out just the cream and leave behind the water. This will give you a super creamy curry.

I LOVE curry, especially red! I haven’t had any in a while, but now that it’s getting chilly it really seems like a perfect time.
You should definitely have a bachelorette party! Just keep it low key if you’re worried about your friends spending more $$.

I feel the same way about a bachelorette party! I am doing a destination wedding and don’t want to ask them to travel for two things. But I did. Some are coming and some are not. Regardless we will have fun and I’m sure you will too!
I am LOLing at work at your hair extension comment. I wore clip ins at my wedding and my family was like, wut. This was when hair extensions were less normal…I had to find a stylist that would work with them. She actually ordered them and put them in. BEST DECISION EVER!!!!!
Bachelorette party-have it in Jamaica! All inclusive will make it cheap;) and there are usually a few days before the wedding right? Dress-sell it online or back to the store you got it from
Extensions- I had human hair clip ins highlighted to match my hair-they were easy and awesome to use the day after! Just make sure you have a trial with them with whoever is doing your wedding hair..you don’t want a mullet!!
And dresses- u hit the nail on the head-you’ll be in Jamaica! Comfortable and beach worthy are a must:)
Oh, another bachelorette idea is a Bride-tini shower-that’s right, a martini filled shower where you and your girls can go out afterwords.
You can resell dresses in oncewed.com (there are a few options… Google knows). For veil… you’re on the beach. Do you want a long, flowy veil? I’d consider a birdcage, if you’re not against it. Colors are dumb, so I’m with you. And letting your maids pick their own dresses is an awesome idea. Maybe check out rent the runway and see if they could even rent something!
I sold my dress off preownedweddingdresses.com after my wedding (of course it doesn’t have to be worn – there were quite a few brand new dresses). It was while ago but I remember it was super easy and I got more than I thought I would. Just upload your info and pictures of the dress, wait for responses, receive payment via PayPal, and ship your dress to the buyer. Quick and easy. I’m sure you could also take your dress to a local consignment shop, but you probably won’t get as much and it may take a long time. Best of luck with everything!
Girlllll, I hear you on all these details. I just got married on August. For hair extensions, I would recommend a Halo. Clip ins actually pull out a lot of your hair and are a B to get out. A halo is one large piece and its a great anchoring point for the hair stylist to pin in all your stuff. I had two hair styles on my big day (mostly down for ceremony and then up for the reception). My stylist said a halo was the easiest thing shes ever worked with. You can get them online, or I would recommend going to a mall kiosk (sounds cheesy, but Im not kidding!) to get color matched. Some salons carry them but its hard. As far as colors and stuff…just cruise pinterest and see what you like. Pick a picture and send it to your maids and tell them thats what you like. Its a process! Just be patient, cuz it gets a little nutty in the end.

Best wedding ever from wwhat l can tell in the pictures we took. Lol. We were pretty drunk. Anyway, she gave us bridesmainds 2 hues of blue to chose from and we got to pick our dresses. She figured we should pick something we might wear again. We did her “bachelorette” 2 days b4 the wedding at the club inside the hotel. We were able to walk back to our rooms when we closed the club down. Lol. We arrived 3 days before the wedding. Good luck!
You’ve got plenty of access to local restaurants, food trucks, etc, that love you and would hook you up with a great deal in return for promotion. You could do one of those paint nights where everyone brings wine. Or a group outing to a rock gym and drinks after. You could even combine the shower and turn it into girl’s night out after. Think about that for the Bachelorette party. Hell, my idea of a bachelorette party is yoga pants, board games, and borrowing someone’s lake house.
I didn’t have a bridal shower or any of that business, so I was super glad I did a bachelorette – even though I was nervous to have the attention on me, it was really amazing to be surrounded by women who all mean so much to me. It was so much fun, and it doesn’t have to be extravagant – just an excuse to get all of your favorite ladies together and have fun! Flowers are annoying and expensive, but I’d be sure to do bouquets so the bridesmaids have something to do with their hands while standing up. Plus, for the reception, you can plop then in vases on tables for instant arrangements/centerpieces.
You can rent things like veils and etc on rent the runway, or check out etsy as well for veils, sashes, belts, jewels, bridesmaids and parents gifts. Remember most of all, no matter what, everything will come together and you’ll never remember the small things that didn’t get taken care of:) So don’t sweat it!
