Rosemary Roasted Apples and Sweet Potatoes

Is it weird that literally every time I watch Pitch Perfect, I get chills? No seriously, I totally get chills. I keep thinking that I wrote Chili’s. Like the restaurant. I remember back in the day when I used to go to Chili’s for their chips and salsa paired with a chocolate molten cake. Those were the days. Mostly the days of sickness, but they sure tasted good. Crap, back to the point. I really can’t wait for Pitch Perfect 2 to come out. My 2015 will be complete when that occurs.

So this dish was inspired by my friends of Pastured Kitchen. While we were in Austin, they made a breakfast of apples, sweet potatoes and sausage all cooked together. It was delightful. Sweet Potatoes and apples should always be cooked together. I’ve made recipes before mixing the two but only for Thanksgiving. So why not do it again in a different way! I mean, that was 3 years ago! Cray cray. Time flies.

Want to know a cute story about Jackson (my puppy) that may make you think I’m weird? Ok great. So I was showering the other day and we have a glass door shower, so Jackson was hanging out in the bathroom bored as usual and decided he wanted to come in. Was I going to say no?? Of course not!! He’s my little human. So I let him in and he LOVED it. He thought it was super fun. So after we had a grand ole time in the shower, I said “Well sh*t, he smells even worse than he did before.” I don’t keep the puppy shampoo in the shower with me, so I wrapped him in a towel and wrapped myself in one too and took him to the kitchen sink to shampoo him. Well, he was not a fan of that. He about screamed bloody murder. And kept jumping out of the sink. So I decided to take him, all soaped up, to our bath tub. Which proved to be challenging since he was pissed at me already. Final understanding of this experience, I’m going to keep puppy shampoo in the shower with me. Yep, I’m going to shower with my puppy like a freak weirdo.

Rosemary Roasted Apples and Sweet Potatoes

  • Yield: 5-7 1x

Ingredients

Scale
  • 3 sweet potatoes or yams, cubed
  • 3 pink lady apples, seeded and cubed
  • 1/4 cup melted coconut oil
  • 1 tablespoons finely chopped fresh rosemary
  • salt, to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Cube sweet potatoes and apples and place on a parchment paper lined baking sheet.
  3. Pour coconut oil over the sweet potatoes and apples along with rosemary and salt. Toss with hands to fully coat.
  4. Place in oven and bake for 35-40 minutes or until sweet potatoes are soft and cooked through.
  5. Serve with anything!

  1. Juli, I love your Jackson stories! So cute! I cooked up something similar this weekend with cubed sweet potatoes, cubed pink lady apples and herbs, but also added in cubed rutabaga (tastes a lot like potato) and crumbled in ground pork. That’s this week’s breakfast!

  2. I am a freak weirdo too! I shower with my Frenchie. She loves it and it’s so much easier than making her stay in the sink where she is obviously miserable and cold plus I feel like she gets cleaner that way, maybe? So yeah. Freak weirdo. 😀

Ironically enough, I was listening to David Guetta while cooking the other day and he walked in and told me that he likes the version from Pitch Perfect better and then proceeded to turn on the movie! Hahaha, mission accomplished!

  7. I follow you on Instagram and I love the pics of tiny Jackson. His face is so freakin cute and smooshable. I have two small dogs and usually just bathe them in the sink. They have gotten used to it at this point, but they still don’t like it. One of them literally gets super pissed at us because she’s wet. She sits in the corner of the room looking miserable, and then just gives us the stink eye. No cuddles, no affection, just mean muggin us. The fact that Jackson loves the shower is a great thing to find out Just don’t bathe him more than once a month because it can dry their skin out and cause all sorts of issues.

  8. I totally shower with my dog! She hates it but the chances of me getting her to stay in a bath are about zero. We get it done as quick as possible in the shower.

  10. I used to shower with my dog too! Mostly because we didn’t have a bath tub and she’s a lab so she was too big to fit in the sink. It was good times though. Except that she HATED it and would just sit in the corner cowering away from the water, which broke my heart a little but she was a stinky girl sometimes and she needed a bath. Now we have a bath tub and she is all bout it. Silly pup!

Then you sent an email with a recipe where I had ALL the ingrdients and I didn’t have to buy a single thing! What serendipity!! It came out delicious and I am so happy right now!

    Ps pitch perfect is THE BEST. My hubs and I watch it endlessly. We saw it in the theater with our friends who happen to be a Capella singers! Hahaha i didn’t know there was going to be a sequel for sure!!! I CANT WAIT!

    2. When I had my mini schnauzer I would bring him in the shower with me and shampoo him. Not weird, it’s smart and convenient. He would sit there until I was done and we both were so fresh and so clean! It’s a win win!

  17. I’m totally stealing from a previous poster and making this tonight with the chicken with shallots and dates recipe. I can’t say as though I understand not knowing what to do with leftover rosemary, though 😉 I love the stuff. If anyone’s looking for an idea, make maple-bacon breakfast sausages/meatballs and add some chopped rosemary. So delicious!

    I, too, am a total dork for Pitch Perfect. It has a permanent place on our DVR. Both my husband and me are known to throw it on any random night. My husband always laughs at me because I cannot help but crack up during the final musical number when Gail plays air guitar on John’s leg. Every. single. time. Yup, such a dork.

    I have pretty low expectations about the sequel. I suspect it will try too hard. (Exhibit a – did anyone try watching Fat Amy’s sitcom this past Fall – AWFUL!!) Let’s hope I’m wrong.

  18. Puppy showers aren’t weird at all. I keep dog shampoo in the shower and my little dogs jump in with me all the time. I’ll wash them while the conditioner sits in my hair or I’ll let the shampoo sit on them while I shave my legs. Multitasking!

  19. We made this with sausage stuffed quail. For breakfast, we browned the leftover sausage, added the leftover sweet potatoes/apples, and put a sunny side up duck egg on top… mind blowing. OMG. I have a picture, but can’t seem to post it on here.

    2) Pitch Perfect was based off my sister’s collegiate a capella group, Divisi (from the University of Oregon). I went to see it in theaters the first week it opened and in the theater with me was the guy who does the close-up magic! After the show, he sang to us. It was amazing. I cannot WAIT for it co come out soon!!!!
