Is it weird that literally every time I watch Pitch Perfect, I get chills? No seriously, I totally get chills. I keep thinking that I wrote Chili’s. Like the restaurant. I remember back in the day when I used to go to Chili’s for their chips and salsa paired with a chocolate molten cake. Those were the days. Mostly the days of sickness, but they sure tasted good. Crap, back to the point. I really can’t wait for Pitch Perfect 2 to come out. My 2015 will be complete when that occurs.

So this dish was inspired by my friends of Pastured Kitchen. While we were in Austin, they made a breakfast of apples, sweet potatoes and sausage all cooked together. It was delightful. Sweet Potatoes and apples should always be cooked together. I’ve made recipes before mixing the two but only for Thanksgiving. So why not do it again in a different way! I mean, that was 3 years ago! Cray cray. Time flies.

Want to know a cute story about Jackson (my puppy) that may make you think I’m weird? Ok great. So I was showering the other day and we have a glass door shower, so Jackson was hanging out in the bathroom bored as usual and decided he wanted to come in. Was I going to say no?? Of course not!! He’s my little human. So I let him in and he LOVED it. He thought it was super fun. So after we had a grand ole time in the shower, I said “Well sh*t, he smells even worse than he did before.” I don’t keep the puppy shampoo in the shower with me, so I wrapped him in a towel and wrapped myself in one too and took him to the kitchen sink to shampoo him. Well, he was not a fan of that. He about screamed bloody murder. And kept jumping out of the sink. So I decided to take him, all soaped up, to our bath tub. Which proved to be challenging since he was pissed at me already. Final understanding of this experience, I’m going to keep puppy shampoo in the shower with me. Yep, I’m going to shower with my puppy like a freak weirdo.

Rosemary Roasted Apples and Sweet Potatoes

Ingredients

Scale
  • 3 sweet potatoes or yams, cubed
  • 3 pink lady apples, seeded and cubed
  • 1/4 cup melted coconut oil
  • 1 tablespoons finely chopped fresh rosemary
  • salt, to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Cube sweet potatoes and apples and place on a parchment paper lined baking sheet.
  3. Pour coconut oil over the sweet potatoes and apples along with rosemary and salt. Toss with hands to fully coat.
  4. Place in oven and bake for 35-40 minutes or until sweet potatoes are soft and cooked through.
  5. Serve with anything!

    1) I bet now that you’re engaged, your 2015 is already complete!! HA!
    2) Pitch Perfect was based off my sister’s collegiate a capella group, Divisi (from the University of Oregon). I went to see it in theaters the first week it opened and in the theater with me was the guy who does the close-up magic! After the show, he sang to us. It was amazing. I cannot WAIT for it co come out soon!!!!
