It’s freezing here. Just freezing cold. And I’m completely ready for this snow season to be over. Spring is the best time of year in Colorado. Truly. It’s absolutely gorgeous. And when you’re close to the greatest park in Denver like I am, you appreciate and adore the spring time even more. But while Colorado is deciding if it wants to be warm and sunny again, I’m going to travel to Austin, TX where it is 75-80 degrees out. Beautiful.

What dress am I going to pack? Oh gosh.

As you’re reading this, I’m probably on my way out there. I’ve never been to Austin so I’m pretty excited what the town has available…meaning what kind of food I can try. All I hear about Austin is how amazing the food is out there, so I’m ready. I’ve expanded my stomach, bought aprons to wear, and colored my hair. But I colored my hair about a week ago so it’s already time to dye my roots. Damnit. Stupid blonde hair. I HATE YOU.

I watched the show ‘The Following’ the other night. That sh*t is kind of addicting. I thought it was way scarier than it actually is. And I don’t really like scary. Who likes being scared? Weirdos. The last time I went in a haunted house, I wet myself. I was in high school at the time. Anywho, I already want to watch that show again. And have you ever watched the show ‘Shameless’. Obsessed with that too. Not sure how I became obsessed with these weird shows. They don’t hold a coin to ‘New Girl’. That’s totally not how the saying goes, is it? Damnit.

I am really over this whole basketball thing. I watched way more basketball than I would ever like to in my entire life, the other day. At least 45 minutes. It’s so boring. I don’t know how people get into it. I went to a hockey game about a week ago and I can see why people like that. It goes by fast, it’s over before you know it, and people get in fights. I get it. But basketball, come on. So boring.

Remember when I made Thanksgiving Bacon and Chive Sweet Potato Biscuits? And how some of you thought they were delicious. Well, I made the same ones but with shrimp and jalapeño. Why? Because it seemed like the right thing to do with biscuits and gravy. Yes, there is a gravy coming to you for these biscuits by the end of the week. Just you wait.

  • Yield: 12 1x

Ingredients

Scale
  • 1 large sweet potato or yam (equivalent to 2 cups mashed)
  • 3 eggs, whisked
  • 3 tablespoons Coconut Flour
  • 45 shrimp, cooked, diced small
  • 3 tablespoons bacon fat, melted (or butter if you do dairy)
  • 1 jalapeño, thinly diced
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 415 degrees.
  2. Pork holes in your sweet potato with a fork.
  3. Place in oven and bake for 30-40 or until soft.
  4. Once the sweet potato is done baking, turn oven down to 375 degrees.
  5. When your sweet potato is done, peel and place in a bowl and mash with a fork.
  6. Then add in your eggs and mix well with your sweet potato. Then add in your bacon fat and mix well.
  7. Then your dry ingredients: coconut flour, baking powder, garlic powder, and salt and pepper.
  8. Finally add your diced cooked and diced shrimp and jalapeños. Mix thoroughly
  9. Now line a baking sheet with parchment paper and use an ice cream scoop to drop your biscuits on the sheet, for the perfect shape. Try to make them all equal in size so they cook the same.
  10. Place in oven and bake for 22-27 minutes.
  11. Let rest.
  12. Top with some melted grass fed butter. You don’t have to, since it’s not paleo, but I did it, and it was delicious.
  13. Eat with gravy. What gravy? Wait until later this week!

These look delish. Do you think you could use pumpkin instead of sweet potato?

I made these tonight! they were Amaaaazzziiinngg! I didn’t have a jalepeno but I had jalepeno sausage so I chopped that up and added it. They were more then awesome! They taste like the cheddar bay biscuits from Red Lobster only better because they have shrimp and mine had sausage too!

  2. Rachael says:

Going to have to make these, jalepeno addict.

Oh and I completely agree with you on basketball, most assuredly the boringest sport ever. I have said for years I would rather watch golf. or ping pong.

Have fun in Austin, so jealous of everyone going to PaleoFX!

I would think coconut oil would be a perfect substitute for butter or bacon fat. These sound yummy!

omg this makes me cry that I can’t have sweet potatoes. I told myself after a one year of no symptoms of my AI disease, I would try starches again. it’s been 8 months on paleo and still have symptoms so I think I will just have to drool over sweet potato recipes/pictures for now. damn AI conditions!!! they ruin everything.

hope you have a lot of fun in Austin, tx. is that the town that’s known for being unusual and weird? I think I’ve heard a saying but I would be lying if I said I knew it. i’m sure you’ll do really great and pig out on some awesome bbg!

    1. Andrea says:

I’m obsessed with The Following too! I’m also sucked into Justified, both of which my boyfriend wanted to watch and I tried to resist, but I couldn’t help but get into them haha.

Those are my exact sentiments about basketball. It’s so boring!

These look yummy. Enjoy your trip 🙂

alright, since you’re going to austin, there’s one place you have to go–halcyon lounge. it’s downtown, and at night it’s a bar, and in the morning, it’s a fantastic coffeehouse! how convenient for those hung over!

get a cappuccino–you’ll thank me, i promise. don’t know if they have almond milk, but, being that it’s austin and that’s synonymous with progressive, my guess is they do. if not, at least there’s soy milk. oh, swoon. it’s so wonderful!

have a great time in austin!

did NOT know you are a blonde! you certainly aren’t “dumb” … 😉

i’ll be trying this recipe this weekend.
