It’s freezing here. Just freezing cold. And I’m completely ready for this snow season to be over. Spring is the best time of year in Colorado. Truly. It’s absolutely gorgeous. And when you’re close to the greatest park in Denver like I am, you appreciate and adore the spring time even more. But while Colorado is deciding if it wants to be warm and sunny again, I’m going to travel to Austin, TX where it is 75-80 degrees out. Beautiful.

What dress am I going to pack? Oh gosh.

As you’re reading this, I’m probably on my way out there. I’ve never been to Austin so I’m pretty excited what the town has available…meaning what kind of food I can try. All I hear about Austin is how amazing the food is out there, so I’m ready. I’ve expanded my stomach, bought aprons to wear, and colored my hair. But I colored my hair about a week ago so it’s already time to dye my roots. Damnit. Stupid blonde hair. I HATE YOU.

I watched the show ‘The Following’ the other night. That sh*t is kind of addicting. I thought it was way scarier than it actually is. And I don’t really like scary. Who likes being scared? Weirdos. The last time I went in a haunted house, I wet myself. I was in high school at the time. Anywho, I already want to watch that show again. And have you ever watched the show ‘Shameless’. Obsessed with that too. Not sure how I became obsessed with these weird shows. They don’t hold a coin to ‘New Girl’. That’s totally not how the saying goes, is it? Damnit.

I am really over this whole basketball thing. I watched way more basketball than I would ever like to in my entire life, the other day. At least 45 minutes. It’s so boring. I don’t know how people get into it. I went to a hockey game about a week ago and I can see why people like that. It goes by fast, it’s over before you know it, and people get in fights. I get it. But basketball, come on. So boring.

Remember when I made Thanksgiving Bacon and Chive Sweet Potato Biscuits? And how some of you thought they were delicious. Well, I made the same ones but with shrimp and jalapeño. Why? Because it seemed like the right thing to do with biscuits and gravy. Yes, there is a gravy coming to you for these biscuits by the end of the week. Just you wait.

  • Yield: 12 1x

Ingredients

Scale
  • 1 large sweet potato or yam (equivalent to 2 cups mashed)
  • 3 eggs, whisked
  • 3 tablespoons Coconut Flour
  • 45 shrimp, cooked, diced small
  • 3 tablespoons bacon fat, melted (or butter if you do dairy)
  • 1 jalapeño, thinly diced
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 415 degrees.
  2. Pork holes in your sweet potato with a fork.
  3. Place in oven and bake for 30-40 or until soft.
  4. Once the sweet potato is done baking, turn oven down to 375 degrees.
  5. When your sweet potato is done, peel and place in a bowl and mash with a fork.
  6. Then add in your eggs and mix well with your sweet potato. Then add in your bacon fat and mix well.
  7. Then your dry ingredients: coconut flour, baking powder, garlic powder, and salt and pepper.
  8. Finally add your diced cooked and diced shrimp and jalapeños. Mix thoroughly
  9. Now line a baking sheet with parchment paper and use an ice cream scoop to drop your biscuits on the sheet, for the perfect shape. Try to make them all equal in size so they cook the same.
  10. Place in oven and bake for 22-27 minutes.
  11. Let rest.
  12. Top with some melted grass fed butter. You don’t have to, since it’s not paleo, but I did it, and it was delicious.
  13. Eat with gravy. What gravy? Wait until later this week!

Ok, so I made these Friday night. I must have used every dish in the kitchen, trying to make sure the hot sweet potato cooled before I added the eggs, and so I could mix the dry ingredients with the wet ones. I also subbed sweet mini peppers since I was fresh out of jalapeños.

I cooked them 25 mins, and they were a bit on the moist side, but they were still a big hit. Had them the next day with some eggs and bacon…fantastico!

I’ve been lurking at your recipes for months; glad I finally tried one. I eat paleo, but prefer the quick and dirty 3-4 ingredient type of meals. Looking forward to trying some of your other baked treats soon.

Thanks for the recipe. Mine came out a bit spongey. Any tips?

    1. juli says:

hmmmm I haven’t ran into that issue yet. could need a bigger sweet potato next time

  5. Kristine says:

Made these today with ham instead of shrimp- delish! But I had the spongy, too moist problem, too. I added a little extra flour to try to dry them out, but no dice. 🙁 Still yummy!

  6. Brenda says:

Don’t have coconut flour…would rice flour work?

    1. juli says:

not sure, never used rice flour

    2. Skye says:

I use rice flour pretty often since I can’t find a place with coconut around here. Usually I use 4x as much rice flour as it calls for coconut and it turns out pretty good.

  7. Chad says:

Mine also came out spongy and don’t look anything like biscuits. Your picture looks like biscuits 🙁 I had a bunch of sweet potatoes already cooked and mashed so I just measured out two cups. Next time what should I try different?

They taste amazing BTW, just need to work on the texture and firmness.

    Thanks

I am new to paleo and this was my first time using coconut flour. They are amazing! I already added the ingredients on myfitnesspal.com. I will be experimenting with this recipe with other proteins and spices…can’t wait! I will be toasting one up tomorrow for a breakfast sandwich!
