I’ve made a meat crust quiche before, but this time, I went the opposite route. Veggie route. And light carb route. I’m not one to watch my carbs that much, I just eat. But I hear spaghetti squash is low carb. So you’re welcome, carb-watchers. If I’m wrong, my b.
So I’ve been trying to keep busy through the weekend. But keeping busy turned into many, many episodes of Sex in the City. Do you ever feel like shows and songs you hear on the radio relate completely to what you’re going through? No? I’m just that self absorbed that I feel like the world is orbiting me? Cool. Anywho, I swear every episode included Carrie going through a break up. Mostly because that’s all that show is about. But that’s besides the point. She even talked about rules to breaking up. It included not going shopping. I broke that rule. But what better thing to make you feel better in life than a new pair of boots? Nothing. I bought these boots online. I’m literally going to squeal when they arrive at my doorstep.
Another way you think will keep your mind from going insane is going for a nice little bike ride. Bullsh*t. You have even more time to think when you’re moseying around on a bike, doing circles around the park, barely being able to hear others around you because of the wind creating white noise in your ears. Whoever said running or biking clears your head obviously was not going through a break up at the time. What does work is CrossFit. You’re in such pain, the mind blurs pretty well at that point in order to not completely break. No wonder I started competing in CrossFit more when I went through my last break up. I spent hours upon hours in the gym in order to keep my mind blank. Oh love, you sonofab*tch.
Back to the point. Laura and I took this nice little bike ride around the park and throughout our neighborhood. I needed to get out of the house, she needed to learn to use her new fancy road bike that she will be using in a month in her triathlon. So, just in case she fell over in public trying to clip in and out, at least she had me there to laugh at her. But while we biked around, geese decided it would be a good idea to cross the street. While the goose sped up his little goose feet so I wouldn’t hit him, a car drove by at the same time. Bad timing for sure on his end. So the car caught his wing, feathers flew everywhere, I had to lift my feet up straight in the air in order not to give him a concussion, and I couldn’t look back. What if he died? That would be awful. But Laura looked back and he was just fine. Do you think he learned his lesson or forgot about it in 34.3 seconds because his brain is rather small? I don’t know, man. I just know I did not witness a hit and run that day. Thank gosh.
In the end, I have had a good break up. I think you see people’s true colors when relationships end. And I saw his. And his colors were bright and wonderful. Just like I always saw him. Love is truly an amazing thing and I feel damn lucky to have experienced it with such a kind and wonderful person. Love shapes and molds us, and I can honestly say I have been molded into a better person because of that man.

Spaghetti Squash Crusted Quiche
- Yield: 4-6 1x
Ingredients
- 1 medium spaghetti squash (2 pounds), cut in half lengthwise
- 3/4 pound pork breakfast sausage
- 6 eggs, whisked
- 1/2 tablespoon dried parsley
- 1/2 tablespoon dried basil
- salt and pepper, to taste
- handful of sliced mushrooms (I used shiitake mushrooms)
- coconut oil, to grease pie plate
Instructions
- Preheat oven to 400 degrees.
- Place spaghetti squash cut side down on a baking sheet. Bake squash for 20-25 minutes or until you can press on the outside of the squash and it gives a bit.
- Once spaghetti squash is done cooking, remove from oven, scoop out the seeds and excess strings and let cool while you finish the rest of the quiche. Once spaghetti squash is cooled, use a fork to remove the threads.
- Turn oven down to 350 degrees.
- Place breakfast sausage in a medium pan over medium heat. Break up and cook until there is no pink left. Remove from heat and drain any excess fat, if needed.
- Whisk together eggs, parsley, basil, salt and pepper in a bowl.
- Pull out a pie plate and grease thoroughly with coconut oil. Add all the spaghetti squash threads to the pie plate and press down into the plate and up onto the sides. Try to make it even throughout.
- Pour the eggs into the plate, then add the crumbled sausage, on top with sliced mushrooms. Sprinkle with a bit more salt on top.
- Place in oven to bake for 30-35 minutes at 350 degrees or until eggs are cooked through in the middle.
- Let rest before cutting into it.
- Breakfast, lunch, and dinner is served!

I fixed the quiche for dinner last night and everyone really liked it. I have never seen, cooked or eaten spaghetti squash before. I was a lot of fun and the crust turned out light and sweet. I think it would work for traditional pies too.
Just made it and suuuuper delish!!! I cheated and added a little cheese on top and used garlic powder too. Genius idea for a crust..perfect!
