The holiday season approaching undoubtedly means that the weather is getting colder. So, waking up to a hot breakfast on a cold morning is just a win all around. This stew is meaty, flavorful, and topped with the perfect poached egg, a go-to breakfast/brunch on a weekend morning (or even one night for dinner)!

Spicy Breakfast Stew (with the perfect poached egg)

Ingredients

Scale
  • 2 organic chorizo chicken sausages, finely chopped
  • 4 pieces crispy nitrate-free bacon, chopped
  • 1 1/2 tsp extra-virgin olive oil
  • 1 onion, sliced
  • Optional: 1 handful spinach
  • 1 can organic diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup organic chicken stock
  • 1 tsp chili powder
  • Optional: 1/2 tsp smoked paprika
  • 1 garlic clove
  • Dash Himalayan sea salt
  • Dash freshly ground pepper
  • Optional: 1/2 tsp red pepper flakes
  • 3 organic eggs
  • 2 tsp vinegar

Instructions

For the Stew

  1. Heat oil and garlic in a medium-sized pot
  2. Add sliced onions and sauté for 5 minutes until translucent
  3. Add in chopped sausage and cook, mixing often, until sausage is fully cooked
  4. In a pan or in the microwave, cook bacon until crispy; pat and set aside
  5. Add diced tomatoes, tomato paste, chicken stock, and spices into the pot and mix
  6. Add spinach (if desired), reduce heat to a simmer

For the Poached Egg

  1. Heat 3 cups water and add in a dash of vinegar
  2. Crack 1 egg into a ramekin
  3. Right before boiling, use a spoon and swirl the water
  4. Drop the egg into the water (don’t freak, it’ll look a little crazy for a minute)
  5. Carefully spoon out poached egg and serve over stew

    OMG. That looks amazing. I don’t always have breakfast, but it is nice to have a big batch of something that will last all week. Love this. Extra points for anything with bacon in it.

    Anywho.. what kind of chorizo do you prefer? The stuff in the tubes is just nasty and the Boulder brand is pretty…gringo. But I take it you have found some good stuff someplace…. Inquiring minds must know!

    Made this this morning and it was faaaaantastic!

    Ginger Manning: We, too, were not sure what to do with the crisp chopped bacon, so we sprinkled it on top of our bowls. That seemed like as good a thing to do with it as any. (Pssst…we garnished with diced avocado. Mmmmmm.)

    Shayla: We found an Alton Brown video (youtube, like 3 minutes long) that was super helpful. Eggs came out perfectly.

    (Also, equipment note: We ended up using a wide pan for sauteeing the onion & meat; the onion was BIG, and a pot would have ended up steaming the onions rather than getting all that good heat evenly applied.)

    That looks… AWESOME. Oh wow, so yummy lookin’. I think I’m going to try this soon. How long would you think the stew would last in the fridge? I think I’d serve it with some kale chips, since I like crunchy with my stews, but that really looks like a gorgeous bowl of food. Yum!

    Made this this morning for breakfast. Amazing! I used a milder sausage this time… next time… spicier! This might be my new “go to” winter breakfast.
