The holiday season approaching undoubtedly means that the weather is getting colder. So, waking up to a hot breakfast on a cold morning is just a win all around. This stew is meaty, flavorful, and topped with the perfect poached egg, a go-to breakfast/brunch on a weekend morning (or even one night for dinner)!

Spicy Breakfast Stew (with the perfect poached egg)

Ingredients

Scale
  • 2 organic chorizo chicken sausages, finely chopped
  • 4 pieces crispy nitrate-free bacon, chopped
  • 1 1/2 tsp extra-virgin olive oil
  • 1 onion, sliced
  • Optional: 1 handful spinach
  • 1 can organic diced tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup organic chicken stock
  • 1 tsp chili powder
  • Optional: 1/2 tsp smoked paprika
  • 1 garlic clove
  • Dash Himalayan sea salt
  • Dash freshly ground pepper
  • Optional: 1/2 tsp red pepper flakes
  • 3 organic eggs
  • 2 tsp vinegar

Instructions

For the Stew

  1. Heat oil and garlic in a medium-sized pot
  2. Add sliced onions and sauté for 5 minutes until translucent
  3. Add in chopped sausage and cook, mixing often, until sausage is fully cooked
  4. In a pan or in the microwave, cook bacon until crispy; pat and set aside
  5. Add diced tomatoes, tomato paste, chicken stock, and spices into the pot and mix
  6. Add spinach (if desired), reduce heat to a simmer

For the Poached Egg

  1. Heat 3 cups water and add in a dash of vinegar
  2. Crack 1 egg into a ramekin
  3. Right before boiling, use a spoon and swirl the water
  4. Drop the egg into the water (don’t freak, it’ll look a little crazy for a minute)
  5. Carefully spoon out poached egg and serve over stew

    This looks tasty and simple!) Am just exploring paleo recipes in general.As a beginner sometimes..uh…I feel like there is too much bacon and sausage in these recipes! I feel like I would be engaging in an artery clogging marathon named ‘heartattack at 40!’ Hehheh…seriously, cavemen did not live past 30 usually. If I had so little to live I would want to eat only animal protein foods fried in fat with bananas on top Elvisstyle!!;p That said, I love love your recipes!xxxxxx

    Just made this morning for breakfast – OMG SO dee-lish! I had never made a poached egg and it took me 3 times to perfect it (in the microwave no doubt) but once it was done it mixed well. I didn’t have the meat this calls for on hand so I used Turkey Sausages and it turned out wonderfully. Looking forward to trying more recipes from your site! Paleo eating day 3 in the books. 🙂

    I’m sure this recipe is good when done right, but I had a lot of trouble with the instructions! Very vague and not so accommodating to those of us who don’t already know how to poach an egg. 🙂
    I gave up after three wasted eggs… Also, it left out where to add the bacon. I kinda just guessed it was supposed to go in there.

    This was AMAZING. I couldnt really grasp the how to on the egg and had a slight fail, so i ended up just doing them over-easy. I made a double batch and we had spicy warm goodness every morning this week!

    This was super yummy! I’m vegetarian so I replaced the chicken stock with veggie broth and the chorizo with vegan sausage. I obviously left out the bacon. I added extra spinach. It is a delicious, hearty breakfast. I love doing stews for breakfast. I poached an egg for the very first time and didn’t mess it up, woohoo! It’s easy on the stomach and keeps you full until lunch! I used a “wok” instead of a pot and worked just fine. Next time I will garnish with avocado and use red pepper flakes for more of a kick!
