O.M.G. I am so freaking glad Monday is over. It was the dreariest and lamest Monday I’ve ever had and it did not help with my PMS b*tch mode I had going. Meaning have, it’s definitely still going. I’m still feeling majorly b*tchy today. Luckily, I made key lime pie parfaits yesterday to calm the nerves and bring the sunshine in! Then guess what happened?! GUESS.WHAT.HAPPENED. My husband walked in with a bag from Whole Foods…filled with ice cream, gluten free cookies and flourless chocolate cake. After being together for 4 years, he officially knows when dessert needs to be in our house. He’s so smart. Slow, but still smart.

You know how HGTV has their Smart Home giveaway? They do it every year and give away a home and a car and cash. Is any of this real? Like, who the eff wins this home and do they actually get to keep it? Or do they sell it? And how does taxes work when it comes to that? They have one for Raleigh, NC right now and they’ve been promoting it for a LONG time. And they say you can enter daily. Do they do that in hopes of grabbing more emails to add to their newsletter subscribers? That’s what I imagine. And why do they do it? I just don’t understand it and I would really like to. TELL ME THINGS.

You know what’s funny? I always get annoyed when people ask dumb questions that they could just google themselves, but then I ask you guys to answer a question for me. I’m the worst. I’m just hoping one of you lovely readers have won one of the HGTV homes so you can give me the scoop. And I can congratulate you for entering daily into their home giveaway. That’s straight up dedication that should be acknowledged.

I think it’s pretty obvious when I have nothing to talk about. But nothing happened over the weekend. It rained the whole time so I just worked out and ate brunch. Then slept. I was really good at sleeping. But wait, we should talk about these muffins. I rarely work with rhubarb, but I always feel guilty about it because since it’s in season, I know you guys may have a ton of it! And since I’ve only used it one other time for my Strawberry Rhubarb Mini Pies, I decided they needed to make an appearance once again. And muffins are wonderful for breakfast or snacks or really anything, so just make these, ok!? Okcooltimetostopboringyou. Loveyoukbyeeeeeeee.

Strawberry Rhubarb Cardamom Muffins

Ingredients

Scale
  • 1/3 cup almond flour
  • 1/3 cup tapioca flour
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cardamom
  • pinch of salt
  • 3 eggs, whisked
  • 2 tablespoons maple syrup
  • 1/2 cup almond milk
  • 1 teaspoon almond extract (vanilla extract would work too, I just like the flavor of almond extract)
  • 1/2 cup diced strawberries
  • 1/3 cup diced rhubarb
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F. Line muffin tin with 10 paper liners.
  2. Whisk together almond, tapioca and coconut flour along with the baking soda and powder, cardamom and salt. Then mix in eggs, maple syrup, almond milk, almond extract, strawberries, rhubarb and walnuts until well combine.
  3. Use an ice cream scoop to fill 10 muffins. Place in oven to bake for 30 minutes or until a toothpick comes out clean.
  4. Let cool for about 10 minutes before eating!

    Perfect timing! Except I’ll need to make this recipe at least 45 times since I have at least 15 cups of rhubarb to get of….

    I know you said that nut butters bother your stomach sometimes and you still have nut flours in your new recipes. Do the flours bother you as well or do you find that the since the nuts are cooked before they become flour that it’s not the same for your stomach? Just wondering because after I eat almond butter I feel belgh and I would still like to be able to make things with almond flour.

      no, i still have the same issues with any sort of nut, including flours. so i just don’t eat those things that I make very often. i’ll have half a muffins then my husband will eat the rest! i still try those items that I make, i just don’t eat them often.

    Do you ever eat GF oatmeal or what is your take on that? I am thinking about incorporating it into some of my mornings because I seem to do ok with it but I have not read much on oats. I would most likely make my own oatmeal since most have a bunch of sugar.

      once in a while i eat some gluten free granola but i try to limit it. i still see oat as a grain so it’s something i try not to eat on a regular basis since it can irritate the gut, even if we don’t always feel it. anything that is gluten free, i try to limit it, not eating it on a daily basis but still enjoying it sometimes!

    it’s so funny how food can just transform a mood. just like that!! especially if it’s your hubby bringing it home. yesterday my BF texted me to say he’d had a horrible day, so i bought him some Cinnamon Toast Crunch for when he got home. he literally LIT up because of it.     From what I understand with, the HGTV home giveaway, most of the winners end up selling the homes because the taxes and upkeep were too much money. I obsessively entered the contest for the cabin in Asheville, then I calculated the taxes I would owe should I miraculously win…..and I stopped entering. ON the bright side, it looks like it would still be a lot of fun to win! Plus there’s usually a cash option.

    Ok so I know you work super duper hard on this blog but can I request more food pics on your recipe posts? I totally understand if you’re like BYE FELICIA about this but I would love to see maybe some in process pics (like what you post on snapchat) or maybe just a couple more pics of the finished product like from different angles or on a fork or with a bite out of it or something. Basically I’m asking for more food porn lol. Again, totally understand if you’re not into it, but I had to ask! Keep up the good work!! xo

      hahaha well i can promise you that i’m definitely not going to do process pics. the last thing i want to do is bring my nice camera into my incredibly messy kitchen and show you the disgusting mess going on, and that would take so much more time while making the recipe. but maybe more photos afterwards. problem is, i’m not very good with photography so i’m always learning but i don’t have some of the tools to get those amazing shots that other bloggers have, but i may in the future!

    Ah! Totally agree with this^^^ I think that more cooking videos would be perfect! I’m a visual person, so when cooking things for the first time it really helps a lot to see the process if i can 🙂

      i haven’t tried it that way, but i would say no because the tapioca flour is completely different from coconut and almond
