And since they have such strict standards about what products they offer in their store, you can often find products that you may not have seen anywhere else. Every time I walk into Natural Grocers, I ALWAYS find new brands and products that I’ve never tried. Lately I found Brazilian cheese buns, Birch Benders, paleo toaster waffles, my favorite Honey Bunchies honey bars, Kicao energy bars, coconut flour tortillas, Paleo Puffs, and a ton of other brands I have a tough time finding anywhere else. It’s my favorittttte. The Kicao energy bars are only available at Natural Grocers in the US and they give me life!! Whenever I have a chocolate craving, I eat one of those and the craving subsides without any sugar high or crash! I love them so much.

But now let’s talk about the recipe because it’s a full plate for you and your lover. Or just you if you’re not one for sharing. I used all natural and organic ingredients from Natural Grocers and you can totally taste the difference in the quality! I stuffed the chicken thighs with delicious Treeline dairy-free cheese, made from cashews. And I tossed the salad in Primal Kitchen caesar dressing, made with avocado oil instead of sketchy canola oil like most dressings on the market. And if you live in Denver, you have to check out the Rino Store because they sell organic and biodynamic beer and wine! For this meal, I paired it with a glass of Crémant du Jura sparkling wine, which was the perfect flavor and pairing for this salty plate.

Stuffed Prosciutto Wrapped Chicken Valentine’s Day Dinner

For the potatoes

  • 4 large Yukon Gold potatoes
  • 3 tablespoons ghee, melted
  • Salt, to taste

For the salad

  • 4 pieces peppered bacon, chopped
  • 2 cups baby arugula or spinach
  • 1 bundle radishes, thinly sliced
  • 1/2 cup grape tomatoes, halved
  • 34 tablespoons Caesar dressing (I used Primal Kitchen)
  • Salt and pepper, to taste

For the chicken

  • 4 boneless skinless chicken thighs, pounded thin
  • 1/2 (6-ounce) container dairy-free herb garlic cheese
  • 3 tablespoons roughly chopped parsley
  • 1 tablespoon rosemary, minced
  • Salt and pepper, to taste
  • 4 slices prosciutto

I highly recommend enjoying this meal with a glass of Crémant du Jura sparkling wine and making some paleo, gluten free and vegan chocolate chip cookies like Cappello’s cookies!


  1. Preheat oven to 400 degrees F. Place a wire rack on a rimmed baking sheet, spray with coconut oil spray, and place 4 pieces of bacon on the wire rack. Place in oven to bake for 13-15 minutes, until slightly crispy.
  2. While bacon cooks, cut each potato lengthwise in to 1⁄2 inch pieces. Then use a small heart shaped cookie cutter to cut out heart shapes of each potato slice. Repeat with all potatoes then place in a large bowl, add the ghee and salt, then toss to combine. Place in air fryer, turn temperature up to 400 degrees F and cook up to 20 minutes, depending on size and thickness of the potatoes. At every 5 minutes of the 20 minutes, pause the air fryer and toss the potatoes. This will help them evenly cook throughout. Leave in the air fryer to keep warm.
  3. While the potatoes cook, use a meat tenderizer to pound the chicken thighs to about a 1⁄4 inch thickness. In a bowl, mix together the garlic, cheese, parsley, and rosemary until combined. Place 1-2 tablespoons of the mixture on to each chicken thigh, spreading throughout the entire piece of chicken. Then roll each piece of chicken. Sprinkle with salt and pepper, then carefully wrap each piece of rolled chicken in one piece of prosciutto.
  4. Heat a medium cast iron skillet over medium-high heat and sear each prosciutto wrapped chicken, about 3 minutes per side.
  5. Once the bacon is done cooking, set aside and turn temperature down to 350 degrees F. Place the cast iron skillet with the chicken in the oven and bake for 20 minutes.
  6. Add the arugula and spinach to a large bowl with the bacon, radishes, tomatoes, and Caesar dressing, then toss to combined. Sprinkle salt and pepper on top before serving.
  7. Serve the salad with 1-2 pieces of the prosciutto chicken and the heart shaped potatoes. And don’t forget to pour yourself and your loved one a glass of Crémant du Jura sparkling wine and/or make some gluten free cookies to enjoy after dinner!

    We only made the chicken from this recipe, and we loved it. It’s fairly quick to come together. We used garlic herb Boursin cheese. It was a bit salty so I don’t think I’ll add the extra dash of salt the next time, but it may have been due to the cheese. Definitely going into my recipe box!
