You may have just asked yourself, ‘Juli, what makes this pulled pork sweet?’ Or maybe not. And that’s fine as well. Either way, I will tell you. This pork is not actually the sweet part. No sir. This mayo that is layered on the sliders is slightly sweet. SAY WHAAAA? I know I might sound crazy, but I added a little bit of maple syrup to my mayo. I’m naughty. But I saw it on some kind of sandwich on the show ‘Diners, Drive-ins, and Dives’ and I had to do it. Just had to.

You know how I told you that one time that there were a million flies in my house? And a bunch of you guys told me that I should check for a dead animal in my chimney. Or behind the stove. Or in a cabinet. Well, after the last fly incident, they all went away. And after yesterday, they all came back. Common denominator? (holy balls, I haven’t said that since high school math) A dead animal in my crockpot. Pig. I cooked a roast and the flies went insane. I don’t have a chimney nor do I have dead animals in my cabinets, but I do cook them in my crockpot. And I live in a house that is about a million years old (not really) and has absolutely no insulation(yes really). And barely any screens lining our windows and doors. Not to mention, it’s about 86 degrees in our house, every.single.day. So the flies think my house is a slaughter yard. This pork thing in the crockpot does not seem to work for my fly infested household. I sound so gross. I’m sorry.

So I’ve become obsessed with Pinterest again. I used to be completely obsessed, spending hours upon hours on it at night. Sometimes, Laura and I wouldn’t even speak to each other because our eyes were glued to do it yourself crafts and double chocolate layered sex cakes that filled the computer screen. Our conversations seemed to only include “LOOK” or “Oh.My.God.” But our addiction faded. And we found out that conversation was more important than 100 ways to use popsicle sticks.

Back to the point. I’m obsessed again. If you follow me on twitter, you would have seen my Pinterest rampage the other night. Don’t forget to turn off that twitter button, that can get embarrassing. But I’m super into home decor at this point in my life. I’m beginning to want a place of my own. I want to live on my own and create my own little happy home. It makes total sense that I’m planning my home decor when I don’t have a new house and my lease isn’t up until May. I’m like one of those girls who has a wedding Pinterest board without even having a boyfriend. One of thoooose.

Can we just touch on the fact that Miley Cyrus has gone off the deep end? I saw her performance at the VMA’s and it was quite a sight. I’ve had some trashy times in my life, believe me, but never have I groped a married man or worn skin colored spandex. Skin colored spandex is never ok. Did you see Will Smith and his family. Google it. Hilarious. Ok. I’m done trash talking about someone who has made more money than I will ever make before she can legally drink.

  • Yield: 4-6 1x

Ingredients

Scale

For the pulled pork

  • 2 pounds pork butt
  • 1 yellow onion, sliced
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper, to taste

For the mayo

  • ⅔ cup avocado oil
  • 1 egg
  • 1 teaspoon lemon juice
  • 1 teaspoon dijon mustard
  • ¼ teaspoon garlic powder
  • salt and pepper, to taste
  • 1 teaspoon maple syrup (use 1 more teaspoon if you would like it sweeter)

For the waffles

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • salt and pepper, to taste
  • 3 eggs, whisked
  • 1/2 cup canned coconut milk
  • 2 tablespoons bacon fat
  • 3 pieces of bacon, cooked and chopped
  • 2 tablespoons chives, finely chopped

For the toppings

  • 56 pieces of bacon, cooked
  • slice pickles

Instructions

  1. Place pork butt (or other roast) in a crockpot. Add sliced onions around it and top with garlic powder, onion powder, and salt and pepper. Cover and cook on low for 6-8 hours until it falls apart.
  2. Once pork is done cooking, shred in the crockpot.
  3. Now make the mayo so it can cool in the fridge. Place all mayo ingredients, except for the maple syrup, into a tall container. Place your immersion blender to the bottom of the container, turn on and wait until the mixture thickens. You may need to raise the immersion blender a bit to help mix all of the oil. Once it is thick, pour in the maple syrup and mix with a spoon. Place in fridge to cool.
  4. To make the waffle buns, mix together almond flour, baking soda, garlic powder, and a bit of salt and pepper.
  5. Then add eggs, coconut milk, bacon fat, chopped bacon, and chives and mix well to combine.
  6. Heat up a waffle iron and pour mixture into the center of each waffle area. You want the buns to be small so only about 2 tablespoons of the mixture will do to create a small waffle bun. Cook until slightly crispy.
  7. Once waffles are done, begin the layering: waffle bun, sweet mayo, pork, pickles, bacon, mayo, bun. Feel free to add other toppings as well!!

Paleo sister this looks amazing! Now I just need a waffle iron. Pinning this now!

What type of camera and lens do you use? Love your pics too.

    1. juli says:

  3. Jaime says:

This. Looks. Amazing! My Cheftap app is full of your recipes. Freakin’ heart you (I guess I just gave away what state I live in, haha)! Crock pot recipes are my fave, because after a long day at work the LAST thing I want to do is spend an hour or two cooking.

I had a question, though: how do the waffle buns hold up to the sandwiches? I worry that the liquid from the pork would turn them mushy. Have you had that problem or do they work out pretty well? The pics look incredible.

    1. Sue T. says:

      Jaime,

I just made these tonight and the buns/waffles did not get mushy. This was a great meal!

To save some time cooking this for when you come home. Make the mayo when you are able to early so that it will be ready to go. So then all you have to do when you come home is to pull the pork apart and make the waffles.

      1. Jaime says:

        Great tip, thanks!

  4. Sue T. says:

I just made this for dinner tonight, absolutely delicious!! Cannot wait to make them again. The great part, leftovers for lunch!

  5. Tin Man says:

    Juli!
This is cooking as we speak, I love the idea of incorporating waffles into more meals, in fact, fatty me used your maple Aioli (I know you said mayo but I like to church it up) to top off the chicken and waffles I made for breakfast!! Perfect!

    1. juli says:

oh hells yeah. people freak out less when you call it aioli

  6. Elyse F. says:

Is the egg in the sweet mayo raw, or do you cook it?

    1. juli says:

      Raw

  7. Carrie says:

I’m allergic to almonds. Is there an alternative? Craving this!!

    1. juli says:

you could make a flour/meal out of cashews and use that instead!

    2. Jaime says:

Carrie – My BF is allergic to all nuts except cashews so I totally share your pain. I’ve found that ground up sunflower seeds (raw) substitutes almost perfectly for almond meal or almond flour. Just grind them up in your blender and sift them through a wire mesh strainer. They get a tad clumpy, so a wire whisk works well to break them up.

A word of caution: my buns turned green. I’m not talking green tint, I’m talking full-blown emerald green by the time they were completely cool. All I can think of is that it was the sunflower seeds. I’m totally going to try Juli’s suggestion for substituting cashews. I wonder if that would work in all recipes calling for almond meal? Hmm… wheels are turning. 😉

      1. Cat says:

That’s funny! Against All Grain has a recipe posted of cookies that turn green because of the sunbutter. They are St. Patricks day themed. I’ve never heard of such a thing until yesterday!

      2. Sarah says:

There is a chemical reaction between the sunflower seeds and the baking soda that results in the bright green color. You have to cut back on the baking soda to avoid the green color, or just enjoy it!

  8. Sara says:

This was the best paleo meal I’ve ever had….EVER. So delicious!! Love your cookbook, too!!!

  9. Amanda says:

What kind of pickles do you use?

    1. juli says:

      whatever kind is on sale!

      1. Amanda says:

        Regular or sweet?

  10. Miriam says:

Could you substitute the avocado oil for a light tasting olive oil? I’m having a hard time finding avocado oil and I was really looking forward to making this tomorrow.

    1. juli says:

      Surely!

      1. Morgan C says:

What brand avocado oil do you use? Also, my mayo turned out really thin, any suggestions?

        1. juli says:

i used the whole foods brand
