You may have just asked yourself, ‘Juli, what makes this pulled pork sweet?’ Or maybe not. And that’s fine as well. Either way, I will tell you. This pork is not actually the sweet part. No sir. This mayo that is layered on the sliders is slightly sweet. SAY WHAAAA? I know I might sound crazy, but I added a little bit of maple syrup to my mayo. I’m naughty. But I saw it on some kind of sandwich on the show ‘Diners, Drive-ins, and Dives’ and I had to do it. Just had to.
You know how I told you that one time that there were a million flies in my house? And a bunch of you guys told me that I should check for a dead animal in my chimney. Or behind the stove. Or in a cabinet. Well, after the last fly incident, they all went away. And after yesterday, they all came back. Common denominator? (holy balls, I haven’t said that since high school math) A dead animal in my crockpot. Pig. I cooked a roast and the flies went insane. I don’t have a chimney nor do I have dead animals in my cabinets, but I do cook them in my crockpot. And I live in a house that is about a million years old (not really) and has absolutely no insulation(yes really). And barely any screens lining our windows and doors. Not to mention, it’s about 86 degrees in our house, every.single.day. So the flies think my house is a slaughter yard. This pork thing in the crockpot does not seem to work for my fly infested household. I sound so gross. I’m sorry.
So I’ve become obsessed with Pinterest again. I used to be completely obsessed, spending hours upon hours on it at night. Sometimes, Laura and I wouldn’t even speak to each other because our eyes were glued to do it yourself crafts and double chocolate layered sex cakes that filled the computer screen. Our conversations seemed to only include “LOOK” or “Oh.My.God.” But our addiction faded. And we found out that conversation was more important than 100 ways to use popsicle sticks.
Back to the point. I’m obsessed again. If you follow me on twitter, you would have seen my Pinterest rampage the other night. Don’t forget to turn off that twitter button, that can get embarrassing. But I’m super into home decor at this point in my life. I’m beginning to want a place of my own. I want to live on my own and create my own little happy home. It makes total sense that I’m planning my home decor when I don’t have a new house and my lease isn’t up until May. I’m like one of those girls who has a wedding Pinterest board without even having a boyfriend. One of thoooose.
Can we just touch on the fact that Miley Cyrus has gone off the deep end? I saw her performance at the VMA’s and it was quite a sight. I’ve had some trashy times in my life, believe me, but never have I groped a married man or worn skin colored spandex. Skin colored spandex is never ok. Did you see Will Smith and his family. Google it. Hilarious. Ok. I’m done trash talking about someone who has made more money than I will ever make before she can legally drink.
Sweet Pulled Pork Waffle Sliders
- Yield: 4-6 1x
Ingredients
For the pulled pork
- 2 pounds pork butt
- 1 yellow onion, sliced
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- salt and pepper, to taste
For the mayo
- ⅔ cup avocado oil
- 1 egg
- 1 teaspoon lemon juice
- 1 teaspoon dijon mustard
- ¼ teaspoon garlic powder
- salt and pepper, to taste
- 1 teaspoon maple syrup (use 1 more teaspoon if you would like it sweeter)
For the waffles
- 2 cups almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon garlic powder
- salt and pepper, to taste
- 3 eggs, whisked
- 1/2 cup canned coconut milk
- 2 tablespoons bacon fat
- 3 pieces of bacon, cooked and chopped
- 2 tablespoons chives, finely chopped
For the toppings
- 5–6 pieces of bacon, cooked
- slice pickles
Instructions
- Place pork butt (or other roast) in a crockpot. Add sliced onions around it and top with garlic powder, onion powder, and salt and pepper. Cover and cook on low for 6-8 hours until it falls apart.
- Once pork is done cooking, shred in the crockpot.
- Now make the mayo so it can cool in the fridge. Place all mayo ingredients, except for the maple syrup, into a tall container. Place your immersion blender to the bottom of the container, turn on and wait until the mixture thickens. You may need to raise the immersion blender a bit to help mix all of the oil. Once it is thick, pour in the maple syrup and mix with a spoon. Place in fridge to cool.
- To make the waffle buns, mix together almond flour, baking soda, garlic powder, and a bit of salt and pepper.
- Then add eggs, coconut milk, bacon fat, chopped bacon, and chives and mix well to combine.
- Heat up a waffle iron and pour mixture into the center of each waffle area. You want the buns to be small so only about 2 tablespoons of the mixture will do to create a small waffle bun. Cook until slightly crispy.
- Once waffles are done, begin the layering: waffle bun, sweet mayo, pork, pickles, bacon, mayo, bun. Feel free to add other toppings as well!!

Is it okay to substitute olive oil for the avocado oil?
yes, but it will be a very different flavor than the avocado oil and will over power some of the flavors in the slider

Random couple of questions… I don’t have avocado oil on hand.. how about coconut oil? annnddd don’t use maple syrup.. anything else to give it a sweet flavor? we only use stevia in our recipes?
coconut oil would give it a very different flavor, but that could be used. as for stevia, I don’t cook with it
For everyone who can’t find avocado oil, I highly recommend almond or walnut oil. I tried to use light olive oil and threw that batch away because it was disgusting.
How long will the mayo stay in the frig?
up to 2 weeks has worked for me!
I made this tonight, but used the Maple Blueberry Bacon Breakfast Carnitas recipe instead for the pork. my son & hubby went crazy over it! My 9 year old son said he wants to eat it for breakfast, lunch, and dinner. Thanks for keeping the recipes fun & YUMMY!
Juli, this recipe is awesome! I substituted honey for the maple syrup and it was great. Question: can you recommend a good substitute for the egg in the mayo? I want to recommend this recipe to a friend who is allergic to eggs, but I don’t know how to tweak the mayo for her. And the mayo is seriously the BEST part!! 🙂
Ignore my question, Juli. I re-read through the other comments and then googled for an egg substitute in mayo. Found a lady who uses 1T ground flaxseed mixed with 3T hot water. I’ll see how that does. 😉

Another amazing recipe!!! I lightened up the waffles by using only one and a quarter cup of almond flour and modified the other 3/4 cup using half cup of arrowroot powder, and 1/4 cup coconut flour. They came out perfect. they were crispy, but didn’t taste like a mouth full of nuts. the flavors of bacon and green onions with the garlic powder really made them taste great with the pork. I put BBQ pulled pork on mine and pickles. I made the sauce as well but with already prepared mayo. very yummy accompaniment. Also, I finally broke down and bought your book. I can’t with till it gets here. I love sooo many of your recipes. you truly are a kitchen and paleo guru! Thanks again!
