I absolutely positively 100% adore this recipe. I love it, I want it, I gotta have it. The leftovers are sitting in my fridge right now, just calling my name. And when I was deciding which dessert recipe to bring to my Friendsgiving, I immediately decided this one as soon as I made it for the first time. I need to throw it in the trash so I stop creeping at the fridge, cutting off tiny slices…every 10 minutes. I made this recipe based off my “Peanut Butter” Cream Pie that you can find in Juli Bauer’s Paleo Cookbook and can also find it on my site since I shared it with you all before the book came out! Just FYI, in this recipe I use a Vanilla Bean Caramel Sauce that you can find on page 250 in Juli Bauer’s Paleo Cookbook. If you have the book, finding this recipe will be easy and PS- I love you! Thanksgiving is creeping up pretty quickly! Have you planned your menu yet? I’m planning to make blue cheese stuffed bacon wrapped dates and this chocolate caramel tart! We are getting our fitness on first thing in the morning then we are getting our mimosa brunch on with multiple mimosas and I’ve heard there will be a turducken gracing us with it’s presence during brunch. Have you ever tried one of those? This will be my first time and I’m not sure how I feel about it since I will be trying it in a CrossFit gym. I see gyms as cesspools of grossness. So the last thing I want to do is eat in one. Aw well, I’ll do it anyways. Then after getting tipsy, we will be heading to a friends house for a Friendsgiving and then have another Friendsgiving on Saturday. Best days of the year.

Should we put Christmas lights up on our house? To me, that sounds like a lot of work. But I don’t want to be the lame neighbor who doesn’t try. The other day, I shoveled my driveway just to look like a good neighbor. Everyone else’s driveway and sidewalk melted within hours but I didn’t want to be the sh*t neighbor who didn’t try. It’s funny because in general life, I absolutely do not give a sh*t what people think, but when it comes to what my neighbors think, I care. What’s that about?

Thanksgiving No-Bake Chocolate Caramel Tarts

Instructions

  1. First, make the caramel then set aside to let cool a bit.
  2. Make the crust: Pulse the walnuts and almonds in a food processor until a nut meal begins to form. Then add the rest of the crust ingredients and pulse until completely combined.
  3. Press the crust mixture into the bottom of five 4-inch tart pans or 10-inch tart pan or a rectangle tart pan and up the sides as much as possible.
  4. Pour about 3 tablespoons of the caramel into the middle of each tart pan or pour all the caramel into one large pan, leaving a little bit of crust around the outsides (this will help the chocolate seal the tart later). Place in the freezer for about 5 minutes, until caramel is hard.
  5. While caramel hardens, melt chocolate in a double boiler. When caramel is hard, pour chocolate over the top of each caramel tart, covering all the caramel and smoothing the chocolate out to the sides of the tart. Sprinkle a pinch of coarse sea salt in the middle then place in the fridge for about 10 minutes, until chocolate is set and has hardened.
  6. Before serving, remove from refrigerator for 10-15 minutes then run a knife under hot water for a bit, wipe dry then slice.

    Well I did have my menu planned… might have to change up the dessert now though. Or maybe I will make both… caramel apple crisp and chocolate caramel tarts… and I was hoping for left over caramel for the salted caramel mocha or caramel cinnamon rolls. I don’t like caramel at all.

      i personally use cream, but have made it with coconut milk and it turns out great as well!

    It’s really disappointing that this isn’t a complete recipe. The only way to make it is to buy the book and with Thanksgiving less than two days away not enough time to do so.

I think if you had included that in this recipe it might have helped sell the book as well or better than forcing the sale.

    Alrighty. The caramel sauce is cooking. I love the fact that you love food this much. Seriously. I’m actually also making the slow cooker short rib tostadas. Man that stuff is good. Especially the tortillas. Just wanted to say thank you and I really hope you have an excellent thanksgiving. Your cookbook has absolutely inspired my paleo cooking. It’s like paleo on crack. I like it SO SO SO much more than any of the other ones I own (actually including the paleo kitchen). We have similar taste buds (I guess). 😀 My kids love it too (they’re 4 and 2). OH and the shrimp stuffed peppers-ohhhh, that stuffing is to die for.

      i’m sorry you feel that way lala. i worked very hard on that cookbook and on that recipe and i can’t share all of the recipes from the book (since I shared 6 or 7 already on my site and others have shared the recipes on their blogs as well) but many people do own my book and i want to give them the chance to create a new recipe with the book they already own, as well as share the book with people who don’t already own it. this isn’t click bait, this is me sharing my hard work with the world and being proud of that work. remember, i have over 500 FREE recipes on here to choose from, so there is no need to be mad or unhappy in this situation.

      I have to admit I felt a little bit like you did when I too clicked on the link expecting to see the FULL recipe. And then I checked my ego. Who am I to demand all of these recipes, and all of this information be handed to me for FREE? What in the hell did I do to receive Juli’s recipes just because I want them? Not a damn thing. I cannot even fathom how many hours, how much money, how much emotional and mental brain power Juli has spent thinking of recipes, shopping for AND buying the ingredients, testing out the recipes, re-testing the recipes, DOING CROSS FIT, TEACHING CROSS FIT, taking care of her adorable pup, washing clothes, cleaning her house, etc. etc. etc. Just writing all of that exhausts me and I’m sure I missed at least a dozen things. SO, I hunkered down and proudly purchased her book, for $10. That’s pennies on the dollar compared to all of the above. And I’ll be one happy, satisfied chick making each one of the recipes in the book, plus being able to pick through ALL of the recipes she has posted here for FREE. It’s all perspective honey.

      Emily, i can’t speak on Lala’s behalf but not everyone can afford extra purchases, if I wasn’t on such a tight budget at this point in my life, I’d have for sure purchased Juli’s book, but it seems some people especially bloggers have lots of cash and don’t get it. I appreciate Juli’s hard work and free recipes but honestly, *I* for one feel she has been pushing the book really hard and in this case I personally feel this was in poor taste.

        i’m sorry you feel as though i push my book too hard, but remember, this is my job. my blog, my books, my hard work is MY job. so i have to work my hardest to promote something i worked so hard to create. i don’t have a PR team doing that for me, I AM doing it on my own. so when you feel as though “i don’t get it” please understand that just a few years ago, my income was below the poverty line and i had to create this business on my own, scraping pennies to still create recipes for FREE for people like you. so “i get it”, 100% i get it. but me promoting myself and my hard work is never in poor taste, ever.

        I don’t think it was fair of Emily to assume someone is being cheap because they haven’t bought the book. I have lusted over your new book, Juli, and contemplated repeatedly if I could swing it, but have had to muster the will power and realistically reel myself in to wait for a time when hopefully, life is going a little smoother.
        On the flip side, I also don’t think it was fair of Lala, or others, to take such a harsh or demanding tone. I apologize, Juli, for saying what I said, because I DON’T know what it’s like to be a blogger, nor do I think I could do it because I wouldn’t be comfortable having to push/promote myself as hard as a blogger has to. But thank you for responding, for sharing a little of what it’s like, and for all your free recipes. You are my favourite paleo recipe creator, I don’t think I’ve ever had a bad one from you, and out of all the different paleo bloggers, I’ve made by far the most from you. Whenever I make one of your recipes and my husband says “that was great”, I reply “Paleomg”, and he says “ok, no surprise then”. In other words, in my house, Paleomg is automatically synonymous with awesome.
