Valentine’s Day Dairy-Free Cream Cheese Chocolate Chunk Cookies (+cooking video!)

Happy almost Valentine’s Day! I hope you’re prepped and ready to have a delicious and romantic night in because I have this treat ready for you guys and a decadent dinner idea tomorrow on the blog! Until then, let’s chat Bachelor!
Remember, I’m a week behind on my Bachelor recaps so this recap is from last night. Thankfully because last night was a total bore. Ok, let’s do this! Last week’s episode started off on some hideous boat that you would never actually want to walk on to, yet inside it was awesome. Arie tells producers that he can see himself with every single woman he’s dating. And that’s because he has absolutely no conversations with them, he only makes out with him. It’s easy to see yourself with 8 women when you’re dry humping all of them.
The episode starts off with Lauren and Arie going on a one-on-one date and they walk around Paris in silence. Arie keeps saying how pretty the architecture is and Lauren says “wow” in the mousiest monotone voice possible. Maybe because she was wearing high heels while walking around Paris and her feet were probably bleeding. I’m guessing all she could say was wow because she would let out a cry if she tried to elaborate. Arie really helps get the conversation going by asking, “How’s everything going after everything?” Way to use those words of yours, Arie. Then Lauren says she always puts people in the friend zone for about 6 months…great show to come on then, huh? She goes on to tell Arie that she was engaged and he broke her heart so Arie does what needs to be done and gives her the rose. This is a sad rose though, it’s got about 3 petals left on it. How romantic.
Next up, the group date. A bunch of the ladies meet Arie at the original Moulin Rouge and Jenna says that it’s the best thing to ever happen to her. Poor Jenna. If a brothel…I mean cabaret joint…is the best thing that’s ever happened to you, it’s time to experience a really good piece of cake. I could show you a thing or two. And that’s coming from a person who has the entire Moulin Rouge soundtrack memorized. F*ck, I loved that movie. Ok, Jenna, my bad. I get it now. Tia was more excited about her date in the everglades where she ate frog legs and almost became a statistic. They all have to dress in thongs and parade around in front of Arie. Not a great look for ABC during this Harvey Weinstein era. BeKAH ends up parading around the best and gets to perform on stage with Arie while he tries to lip sync a french song and does worse than my dog would do. It’s all quite boring.
Then the dramatic two-on-one date goes down and DUH, it’s includes Krystal. Krystal starts off on the show saying, “There’s no one on my level” so of course she’s going to be on the date. And her and Kendall had one conversation at some point so they’ve somehow become rivals. Krystal obviously knew she would be on this date and she seems happy to go on it. But she makes the mistake of showing up wearing 90’s trousers and a choker. If you’re trying to win a guys heart, wearing pants that give you a fupa probably isn’t your best move. Since Krystal always talks like a therapist, Kendall turns it around on her and asks her all sorts of therapist questions and throws Krystal off her game. I like Kendall. She’s super well spoken. She may like weird stuffed animals, but she calm AF. Kendall ends up getting a rose and Krystal is left in some castle while Kendall eats Arie’s face. During two-on-one dates, the person who doesn’t get the rose is usually left in some sh*tty area like the desert or a crappy island, but Krystal got a castle that overlooks the Eiffel Tower. Not half bad. Something I found out on a Bachelor podcast is that when Krystal was all pissed at Arie, she was telling everyone that she wished the Bachelor was Peter because he would never lie to the girls like Arie. And Arie got word of this which was Krystal’s demise. I miss Krystal. She was the only entertainment on this show.
Last up, Jacquelyn’s one-on-one date. Jacquelyn is the girl who always looks like she just woke up for the 4th day in a row with the same makeup. It’s so strange. It’s like she does her makeup then she rubs her eyes in hopes of it making a smoky eye but it just turns into a methy look. They get to go shopping in Paris where you can tell that Jacquelyn is suuuuupes nervous and a total awkward turtle. But Arie seems to love it and does what he does best…makes out with her. Arie says that Jacquelyn is too smart for him…that’s one of the most intelligent things he’s ever said on the show. Jacquelyn is in the process of getting her PhD and since he told Lauren that he’s looking for someone with a flexible schedule, she’s obviously not going to last long. You’re too smart for him, Jacquelyn. GET OUT!
The episode ends with Arie getting dressed for the rose ceremony with his entire outfit laid out on the bed…including his shoes. WHO PUTS THEIR SHOES ON THE BED? Arie ends up letting Jenna (the crazy one that should have been shown more), Chelsea (the mom), and I think someone else but I stopped paying attention. Jenna says she had her heart ripped out, but she just needs to sleep off her drunk from the day. At the end of the episode, Lauren still looks like she’s sleeping during every conversation, but she suddenly has an opinion about him dating 8 other women and goes off to some producer when she thinks no one is recording her. Someone is always watching, Lauren. Including us. Who are constantly judging.
I miss Krystal.
Dairy-Free Cream Cheese Chocolate Chunk Cookies

- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 16 cookies 1x
Ingredients
- 4 ounces almond milk cream cheese, room temperature
- 1/2 cup melted ghee
- 1/2 cup maple sugar
- 1 teaspoon vanilla extract
- 1 egg, at room temperature
- 1/2 cup + 3 tablespoons cassava flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 cup Enjoy Life chocolate chunks
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- Using a hand mixer, beat cream cheese until smooth, then add the melted ghee, maple sugar, vanilla extract and egg and beat until smooth and pale in color.
- With the hand mixer on, slowly add the cassava flour until combine, then add baking soda, baking powder, and salt and mix until combine. Lastly, fold in chocolate chunks.
- Use a cookie scoop to scoop out 14-16 cookies and place on the baking sheet evenly throughout.
- Bake for 20 minutes. Let rest on the baking sheet for 5 minutes before placing on a cooling rack. Then eat ‘em up!

lol right?! I don’t watch it either but the recaps are so entertaining! lol!
Just a tip but if you want flatter cookies, just press them down before baking (dip fingers in water) so they look like regular cookies. This is good to do for cookies that dont spread when baking or else they look like mounds.
And the problem with Mounds? Especially Cookie Mounds ? Bring ’em !
Great video! As I was watching, I kept expecting some cuss words to bust out (bc I listed to every single one of your podcasts lol) and thought it would be hilarious to if they had a cooking show with you that allowed all the cuss words. And that reminded me of this cook book that I heard of a few years back called Thug Kitchen. I’m sure you have heard of it, but if not, check it out! Healthy cookbook with tons of cussing!

Yes Juli, I am totally trying to give my (super amazing!) coworker the hint to make these cookies. I am proud to say that I introduced her to your blog a couple of years ago and she has now surpassed me as a fan! She keeps all of the necessary ingredients in her pantry so I’m hoping she’ll make these and bring a few extra to the office for me to taste test 😉
I absolutely love seeing all of your creative sweets but I’m not best at baking with different flours so I tend to stick to your savory recipes. My (super awesome!) coworker loves to bake so here’s hoping I’ll get to taste these cookies soon!

Do you think coconut sugar would work as a sub for maple sugar? That’s just what I have on hand, but if maple sugar would be better, I’ll have to order some! These look so good!

you could always use a dairy cream cheese if you can eat that!
Hey Juli, this is the second time I have made these cookies. I subbed a few things, almond flour and coconut sugar. I knew the color would change, but they turned out super flat. Any suggestions? They still taste amazing! Thanks 🙂
i definitely would suggest sticking with the cassava flour like the recipe readers. changing up the flours is going to give you a completely different outcome.
