Holy crap, I can’t believe it’s already Monday! This holiday weekend is really throwing me off. We planned to be at the lake all weekend, but then my husband dislocated a rib, so he’s just been in a lot of pain ever since so we’ve been sticking to our roots at home. Yesterday we had a handful of people come over to bbq and help us perfect a spicy margarita. The cocktails kept getting spicier. Then I bought spicy burgers. And we ate spicy salsa. I had weird dreams last night and I think it was from all the spicy food. Some of our friends who were over asked if there were buns and I didn’t get any for the party because only 1 or 2 would get eaten then we would have a whole package of uneaten gluten. Am I a bad hostess for not having buns? Do you think those friends are judging me? Or do you think I just did them a favor? I’m going with favor? They’ll thank me today? Right? Probably not. They’re never coming back over, are they? I officially suck as a hostess.

I just really got off track. Let’s get back on. So it’s a holiday today which means most people aren’t working out. Your gym might not even be open today, which is bullsh*t! I’m about to head in to workout then coach on this holiday. Holidays are the perfect time to make any excuse up to not workout or not eat your best, but today is just like any other day. What is going to keep you motivated this Monday? Do you need to get a workout in first thing? Or a run? Or a bodyweight workout at home? Who is going to hold you accountable if your personal trainer has today off? The answer is always YOU. You have to find a way to stay motivated on a holiday weekend, you have to find a way to get a workout in when it’s more challenging, you have to work your way around a BBQ to make the best food choices. It all comes down to YOU and the decisions you decide to make. There are always obstacles and excuses when it comes to reaching your goals, but if you keep your goals in mind, if you hold yourself accountable, and if you remember why you set those goals, you’ll be able to conquer this holiday weekend!

What I Ate in a Day:

I started the day off with a cup of brewed coffee with a splash of heavy cream and some liquid stevia extract. For breakfast, I heated up some ají de gallina (which is a recipe that will be on the blog this week) but since there wasn’t much left (this is just a photo I took a day before when it was getting its close ups) I had a probably 1/4 cup of gluten free granola in some almond milk!

After taking Jackson on a 3 mile walk, I snacked on some plantain chips while I worked.

For lunch, I heated up one of my microwave Freshly meals. I’m seriously obsessed with this company and their gluten free and/or paleo meals they offer. This time I tried cajun meatballs and they were delicious. I couldn’t even finish the 4th meatball because it was a surprising amount of food. If you’re looking for easy weeknight meals, this Freshly company is spot on!

After lunch, before I left for the lake, I had a couple bites of a pumpkin magic bar, which you can see here. The recipe will be up on the blog next week so stay tuned!

Later on in the afternoon, I ate a Justin’s chocolate hazelnut butter packet. I keep these in my purse for any time I am hungry and don’t have anything else around!

After spending the afternoon in urgent care after my husband hurt himself, we swung by Five Guys so we could have a lazy afternoon on the couch while he rested. I got us lettuce wrapped burgers and some fries.

Later on in the evening, I had a piece of Eating Evolved Signature Dark Chocolate. It’s so bomb!

    I’ve been reading your blog for years and I never comment (internet anti-social) but I wanted to let you know that your weekly pep-talks are really appreciated, and NEEDED in my life lately. I’m in a rut, borderline burnt out and I don’t know what I need. Or, rather, I kind of do but making changes can be easier said than done. I am an endurance runner but lately have wanted to delve into HIIT/Crossfit to see what else I am capable of but it is intimidating as shit. One day I will kick my own ass and give it a shot. Maybe.

    Anyway you are awesome, thank you for all your free recipes and advice!

      Erin, as a fellow endurance runner who started doing crossfit 4 years ago, let me tell you you will love it! I’ve been running for 18 years, and have had my share of ruts, especially after finishing my college running career, but I’ve really found that crossfit helps me through those ruts, and I’m right back to running within a week or two.

    First, this cracks me up because I literally keep ONE package of whole grain hamburger buns in the fridge for blog photos and guests. Second, over the holidays my in-laws come to visit and I realize there are a lot of things I don’t have that most people would consider normal staples: 1) coffee creamer or milk 2) bread/tortillas etc 3) shelf stable processed peanut butter 4) soda. I don’t think that makes me a bad hostess, people are not going to die just because they don’t have milk, buns, hydrogenated oil and caramel color – in fact they might live a little longer! ha ha hah a ha great post, now I want 5 guys!

    I always buy buns for burgers when I am having company over… but it really bothers me when they are in my cart… to the point where I have to cover them up on the bottom of the cart because I hate looking at them. haha. I think it is awesome that you did not have any burger buns… good for you!!!! Unfortunately, I am the minority and not the majority in terms of bread eating people that I surround myself out : (

      For some reason, I’m obsessed with the Midnight Coconut, I love it and am fine just eating a little bit at a time…since there is no sugar, it doesn’t trigger that need to eat the entire bar! I never thought I’d get to the point of loving 0 sugar chocolate!

    My friends and family know that if they need buns or soda to have a good time at our parties they have to bring their own! 😀 Turns out MOST people would rather eat two delicious brats than one brat on crappy bread.

    I do the same when I host. I don’t provide meat or dairy. Instead I make delicious plant based foods that people can’t shut up about. It’s a good time to broaden their tastes or they’ll simply say no the next time they’re invited, lol. I don’t compromise my values for social norms.

    I really enjoy reading your what I ate in a day – it is a helpful benchmark! Do you have any suggestions for standard daily snack? Perhaps for those of us chained to a desk ☺️ When I plan the night before, I neve pack a snack (maybe an apple), but the day of that apple never seems filling or I desperately need something to break up office monotony. Instead an oversized handful of smokehouse almonds ends up happening ????! Any suggestions for an easy snack staple for us office folks that isn’t as nutrient dense as almonds (which are too easy to over consume!)? Thanks!

      i think having small snacks in the form of a small meal is always helpful. so if i have chili for lunch, sometimes i’ll have a small amount of chili for a snack. i always like sheep’s milk yogurt, larabars, fuel for fire protein snacks, almond butter packets, a protein shake or just some meal and veggies! hope that helps!
