Simple is always better. Especially when I’m incredibly lazy on the weekend. Seriously lazy. I mean, I still always work out, but then I tend to not want to do anything else. So my cooking is extremely simple on the weekends. I make lots of eggs, some Applegate Farms precooked chicken sausage, and other people’s dessert recipes. I love trying out other bloggers recipes. Like Brittany Angell’s cosmic brownie recipe. I about cried when I tried that brownie recipe. Seriously the best thing you will ever taste. I swear. You have to try it.
Ok, let’s talk more about the weekend. So it started off on Friday, interesting huh? Well, my gym CrossFit Broadway does the CrossFit Games open workouts on Fridays. A bunch of us get together so we can do a quick, miserable workout and then drink together. I usually don’t drink because all we usually have in the gym refrigerator is beer. And well, beer is gross. I keep thinking that my taste buds will mature and I’ll actually enjoy beer at some point, but I don’t. I still tastes like dog food. But luckily this Friday, my friend Jeremy was oh so wonderful to pick me up some canned champagne. Anywho, after doing that god awful 14.3 workout and getting 108 miserable reps, I started chugging away. I never knew that champagne had such a high alcohol content. Well, my body figured it out pretty fast. My feet did the normal swelling how it always does, even with one sip of alcohol, and I felt a good buzz in no time. It’s always fun being buzzed with people you workout with. You think everything is funny. Especially watching other suffer through the workout you just did. And you REALLY think things are hilarious when you drink 4 of those little bastards. Man do they pack a punch on an empty stomach.
Well, after stuffing my face with some gluten free pizza and tucking myself into bed around 9:30pm, I woke up with one hell of a hangover. Instead of sleeping it off or eating my body weight in greasy food, I went straight to the gym. Sometimes a workout is all you need to cure a hangover. This was not that kind of day. My workout was sh*t and I felt worse afterwards. So I went grocery shopping to get it over with before the Sunday rush, then went straight home, ate some food and found my happy place right on the couch. I did not move from that spot until I had to get dinner. Then I ate dinner and parked my ass right back on the couch for some Modern Family and E! network.
The next day was a bit more productive. I actually showered and put on make up, then biked to brunch with friends. After biking home, I made these wonderful pancakes and then the brownies and proceeded on to watch three movies. Yes, three. First, The Hunger Games. Then Catching Fire (the second hunger games). Then Boondock Saints (had to celebrate St. Patty’s Day somehow). I also folded laundry and cleaned the kitchen. That’s productive, right?
Again, I like lazy weekends.
Damnit. I missed the premier of Total Divas. My weekend was not completely.
Stop judging me.
3 Ingredient Simple Protein Pancakes
- Yield: 2-3 1x
Ingredients
- 2 bananas, mashed
- 2 eggs, whisked
- 1/2 cup vanilla Primal Fuel protein
- Enjoy Life Chocolate Chips (optional – or whatever else you want in the pancakes)
- 1 tablespoon butter (or other oil – to grease the pan)
Instructions
- Mix together bananas, eggs, and protein powder until well combined.
- Place a pan or pancake griddle over medium heat. Grease the pan with a bit of oil. Once pan is hot, add a large spoonful of the pancake mixture to the pan, about 3-5 inches wide.
- Sprinkle chocolate chips on top of the pancakes.
- Once the pancakes begin to bubble, flip them. Cook for about 1 minute each side, depending how hot the pan is.
- Regrease the pan, as needed.

I was skeptical when I read the recipe, but wowza, these are good! Cooked in bacon fat. Yummers!
These were awesome. I am a Paleo newbie and they definitely helped with my no bread cravings. I changed they powder to 50% almond powder and 50% coconut flour they came out great!!
Love these pancakes. Your recipe called for protein powder, which I thought might allow them to keep their shape. It did help a little but I had a hard time keeping them in pancake form….ended up looking like scrambled eggs. Topped with some almond butter it was so good, just not pretty. Thanks!
Mine didn’t scramble, but my batter was too runny and my pancakes would burn before cooking. I did add some unsweetened cocoa powder and that helped. I want to try adding a 1/4 cup almond flour.
I made this with a UK protein powder, which isn’t the most natural in the world but I am using it up before I switch to a better brand. The problem was, I found this very sweet! Since cutting out a lot of carbs and sugar from my diet, I’ve lost my sweet tooth. Next time I’m going to leave out the vanilla and see what it is like – don’t know if it will be too eggy. Going to try the lemon raspberry pancakes tomorrow. But my Mum loved these!
Think you could make this in a rice cooker as one big pancake?

I didn’t have any protein powder so I used about 2 Tblsps of coconut flour. I added a dash of nutmeg and two dashes of cinnamon. They were great! Side note: I’m at sea level. Not sure if that makes a difference for how much coconut flour to use.
For some reason, I wanted pancakes for breakfast. However, since I have been paleo for the last 3 months, I wasn’t sure I could have them. Thanks goodness this came to the rescue. Very delicious recipe!
Have you (or anyone) had success heating these up for leftovers? Love this recipe and was hoping to make a batch to heat up a couple days before breakfast.
