Do you serve appetizers at your holiday party? Because that’s exactly why I made these! So you could have delicious little snacks while you wait for the main meal! OR for New Year’s Eve when everyone be snackin’! These are my spin on those cream cheese stuffed jalapeños that are so bomb but so not great for a person who can’t do dairy. I ate these for leftovers for days and they just get better with time as all the flavors meld. Stop what you’re doing right now and go make these!
So lately, I’ve been absolutely hating our gyms workouts. Which blows. So I’ve been adding in more of my own workouts and trying movements I’ve never done before. And it’s been really damn fun! So I’ve been sharing some of those workouts with you guys on instagram and since lots of people responded to them, I’m thinking about putting together a little New Year’s packet of workouts you can do while you’re traveling or just at your own gym and send it out to my email subscribers in 2017! Speaking of excited, what I’m NOT excited to do is drive to Omaha for Christmas. Not into it. But my mother-in-law just had knee surgery and can’t bend her knee much yet so we are going to visit her for the holidays instead of her coming here. And there was no way I was leaving Jackson dog with a friend for Christmas. Hells to the nah. So we are packing up the car and heading out. Sadly, my family isn’t into murder podcasts and think I’m a psychopath for being into them, so I think I may have to keep my headphones in the whole time and listen on my own. No family murder listening. Alas, I need to find some new podcasts to listen to! Here’s what I’ve finished so far or have listened to most so far:

What are you listening to and loving right now?! I need stuff to keep me entertained while driving 7-8 hours and music just doesn’t cut it for me. I need stories. And these murder podcasts are beginning to make me trust absolutely no one and look over my shoulder every 14 seconds, so if you have any other positive or fun podcasts (or murder, I’ll always take murder) then send them my way! My friend recently sent me a couple Ted Talks about dealing with some of the negativity I get on my website, so I was thinking about listening to those too! And if you think I should finally man up and download audible to listen to books on tape, well I’ll do that, too! I can’t believe I haven’t yet anyways! Tell me stuff!!
Bacon Wrapped Buffalo Chicken Jalapeños
- Yield: 22 jalapeños halves 1x
Ingredients
- 11 jalapeños, cut in half, seeds removed (leave seeds if you like it spicy)
- 2 cups rotisserie chicken
- 1/3 cup mayo
- 1/3 cup hot sauce (I used Frank’s Red Hot Sauce)
- pinch of black pepper
- 1 pound bacon (thin cut), each piece cut in half
- sliced green onions
- flake salt, for garnish
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with foil.
- Place rotisserie chicken in a stand mixer with the flat beater attachment and mix until completely shredded. Add mayo, hot sauce and black pepper and mix once more until completely combine.
- Scoop mixture into each jalapeño half (about 1-2 tablespoons worth) then wrap with 1/2 piece of bacon, with the ends tucked underneath the jalapeño. Repeat with all jalapeños.
- Place in oven to bake for 25-30 minutes, until bacon is completely cooked.
- Garnish with flake salt and green onions.

I cannot recommend Happier with Gretchen Rubin enough, SO INTERESTING. I also like the Reply All series someone mentioned. Also Being Boss is great if you’re looking for some women in entrepreneurship stuff. Savage Lovecast is also just so awesome.
But my biggest tip with podcasts is to listen to them through an app that allows you to SPEED UP the playback. My mind wonders on some of them (especially ones that are just one person talking into the microphone and not a conversation or interview) but speeding them up seems to make everyone sound more interesting, lively and engaging.
UM. YUM.
Also, you should create a category under food titled “apps” or “party foods” or something. You have great shindig treats, you can just plop them all in there for easy access.

My new favorite Podcast is “Homecoming” by Gimlet Media. It’s this fictional story about the mystery behind a government program for helping soldiers overcome PTSD. So addicting and suspenseful. They just finished the first season so you wouldn’t be behind at all.

You might like Podcast series called Stranglers, it is about the Boston Strangler, early 1960. Very interesting, creepy too!

My husband totally thinks I’m psycho because I was so into Serial on our drive from KC to Ohio for Thanksgiving. Weird how it can be so enthralling and disturbing.
I personally didn’t like Sword & Scale–seemed a little cheesy. But I heard Undisclosed is awesome so I think I’m gonna listen to that one next! Thanks for all the suggestions 🙂
the guys voice definitely comes off cheesy at first, but the effed up stories are far from cheesy. they are freaking insane and hard to listen to sometimes
