Do you serve appetizers at your holiday party? Because that’s exactly why I made these! So you could have delicious little snacks while you wait for the main meal! OR for New Year’s Eve when everyone be snackin’! These are my spin on those cream cheese stuffed jalapeños that are so bomb but so not great for a person who can’t do dairy. I ate these for leftovers for days and they just get better with time as all the flavors meld. Stop what you’re doing right now and go make these!

So lately, I’ve been absolutely hating our gyms workouts. Which blows. So I’ve been adding in more of my own workouts and trying movements I’ve never done before. And it’s been really damn fun! So I’ve been sharing some of those workouts with you guys on instagram and since lots of people responded to them, I’m thinking about putting together a little New Year’s packet of workouts you can do while you’re traveling or just at your own gym and send it out to my email subscribers in 2017! Speaking of excited, what I’m NOT excited to do is drive to Omaha for Christmas. Not into it. But my mother-in-law just had knee surgery and can’t bend her knee much yet so we are going to visit her for the holidays instead of her coming here. And there was no way I was leaving Jackson dog with a friend for Christmas. Hells to the nah. So we are packing up the car and heading out. Sadly, my family isn’t into murder podcasts and think I’m a psychopath for being into them, so I think I may have to keep my headphones in the whole time and listen on my own. No family murder listening. Alas, I need to find some new podcasts to listen to! Here’s what I’ve finished so far or have listened to most so far:

What are you listening to and loving right now?! I need stuff to keep me entertained while driving 7-8 hours and music just doesn’t cut it for me. I need stories. And these murder podcasts are beginning to make me trust absolutely no one and look over my shoulder every 14 seconds, so if you have any other positive or fun podcasts (or murder, I’ll always take murder) then send them my way! My friend recently sent me a couple Ted Talks about dealing with some of the negativity I get on my website, so I was thinking about listening to those too! And if you think I should finally man up and download audible to listen to books on tape, well I’ll do that, too! I can’t believe I haven’t yet anyways! Tell me stuff!!

Bacon Wrapped Buffalo Chicken Jalapeños

  • Yield: 22 jalapeños halves 1x

Ingredients

Scale
  • 11 jalapeños, cut in half, seeds removed (leave seeds if you like it spicy)
  • 2 cups rotisserie chicken
  • 1/3 cup mayo
  • 1/3 cup hot sauce (I used Frank’s Red Hot Sauce)
  • pinch of black pepper
  • 1 pound bacon (thin cut), each piece cut in half
  • sliced green onions
  • flake salt, for garnish

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with foil.
  2. Place rotisserie chicken in a stand mixer with the flat beater attachment and mix until completely shredded. Add mayo, hot sauce and black pepper and mix once more until completely combine.
  3. Scoop mixture into each jalapeño half (about 1-2 tablespoons worth) then wrap with 1/2 piece of bacon, with the ends tucked underneath the jalapeño. Repeat with all jalapeños.
  4. Place in oven to bake for 25-30 minutes, until bacon is completely cooked.
  5. Garnish with flake salt and green onions.

    Hi Juli, I’m sure you have heard of the podcast “Homecoming” by Gimlet Media but if you haven’t…I highly recommend it. It is a psychological-thriller and has an all-star cast (David Schwimmer, Catherine Keener). They just wrapped up with their first season. The episodes are short (20 min or less) and you can definitely get lost in the story and sparks good conversation for road trips 🙂 Merry Christmas Juli! You are awesome!

    One of my favorite podcasts is “How did this get made?”: http://www.earwolf.com/show/how-did-this-get-made/

    Two of the hosts are from “The League,” and the premise is the hosts (Paul Scheer, Jason Mantzoukas, and June Diane Raphael) watch horrible movies and then make fun of them for an hour. Just imagine an awful movie; they probably have an episode for it.

    It’s more entertaining when listening with a group–especially when there are conflicting perceptions of what constitutes a bad movie 😉

    Irony… I’m only on instagram and listening to podcasts because of your blog… Then I realized that when I have to do boring production work/design, podcasts really make the time go by and help me focus on the task at hand, instead being all A.D.D… So I subscribed to GOW, and then accidentally found Behind the Brilliance (it was under black voices in business… I was looking at the photos instead of reading the captions…) meh… even though I’m not particularly black, the entrepreneurial aspect and messages resinate with me. Plus inside me I feel is a no sass check yourself before you reck yourself ambivalent kind of homegirl begging to emerge. Her Q&A episodes 103 and 110 (get past the first 10mins of 110 then it gets good) kind of lend themselves to the same kind of messaging that you promote and that I’m into right now – progress, self love, growth etc. etc… blah blah blah. Books – I like author JD Robb if you’re into murder mysteries – it’s fiction, but good stuff. Patricia Cornwell is kinda dark… they made me anxious, but you might like them. If you like funny nonsensical mysteries – Janet Evanovich is the bomb.

    I love Stuff You Should Know! They pick a thing to talk about (sometimes the thing is interesting, like the unsolved disappearance of the Sodder children, and sometimes it seems uninteresting, like the one where they talk about garbage dumps, but it ends up being SO INTERESTING). My husband and I listen to that one a lot. Alec Baldwin has a podcast called Here’s The Thing that is also great and not super long.

      I also love Alec Baldwin’s “Here’s The Thing.” He’s so interesting, not to mention a comedic genius based on his recent skits playing Trump on SNL…but that’s a totally different topic, ha ha. Happy holidays!!!

    Love this recipe and think it would work great without the dairy, but I am such a blue cheese fanatic that I would probably have some type of dip or dressing on the side for those who want to add some funk to the appy.

    Second This American Life. Love books on tape for long trips in the car. Makes the time go by so much faster. Have you got your Instant Pot yet?

    The Savage Love cast (Dan Savage’s sex and relationship advice)
    Criminal (20ish min episodes about all types of topics in the criminal justice system)
    Reveal (investigative reporting)
    Strangers (good for stories)

    The newest one I have found is Crimetown – it is really well produced and tells the story of a different city’s crime scene in each series. The current series is on the mob in 1970’s providence, RI.

    Also audible is awesome – I listen to about a book every two weeks in addition to all my podcasts on my walk to work. Do it!

    It’s funny, I never really listened to Podcasts until you did yours. And then when you mentioned Serial, I was kind of skeptical, I’m just a big scaredy cat. Anyway, someone I worked with mentioned it too, so I figured I’d listen to just one. Holy COW! It’s addicting. And crazy. I listen to it as much as possible and am amazed. It really makes you think and wonder and question everything. Love it! I wish I know more people who listened to it so I could talk with about it.

    Try Last Pod Cast on the Left! It is a true crime comedy pod cast and they even have a cross over with My Favorite Murder. And there are a TON of episodes to get through.
