Hey, you little cute pumpkin butt! We’ve had to move away from peach butts because people are so obsessed with fall to start. I’ve said it before and I’ll say it again…fall can go to hell. Right to hell. Because you know what fall means? Fall means winter is coming. And if we’ve learned anything from Game of Thrones, it’s that winter is a BAD thing. Very bad. And since we still haven’t figured out where we are going to live that doesn’t include cold weather, we are stuck with it. I’m not really sure how this whole conversation came to be since I was more so interested in telling you about these soft bean tacos, but here we are. If you’re a weirdo who loves fall, aka 90% of the population, you must love some comfort food, too. So here you go, fall lovers! It’s not a pumpkin spice latte, but it is a meal that will give you way more nutrition. And that’s what you’re looking for, right? RIGHT?!

If you’re an OG PaleOMG follower, I don’t need to repeat this to you. But if you’re new around here and wonder how beans and cheese are paleo…well they aren’t!! BUT after being paleo for 10+ years and figuring out a lot of my health issues stemmed from the lack of soluble fiber in my diet, well beans entered my life and changed everything around. So these days I just share whatever recipe is getting me excited about life. And these little soft tacos are just the ticket. They are easy to make, sooooo freaking tasty, and they are even delicious completely cold. I love them for breakfast, lunch, and dinner. But I also love anything from breakfast, lunch, and dinner…as long as it includes beans, so I’m a bit biased.
Speaking of health, I just had my first functional medicine doctor appointment! After not going to the doctor for YEARS because I had been so let down by so many in the past, I finally found a practice I really connected with. I’m so excited to start digging into what is going on in my body, working on a cellular level to not only live my healthiest life but slow down the aging process at the same time, and see how much I can THRIVE! I’m already a person that feels really energized and healthy each day, but there is always room for improvement in all areas of life. I can’t wait to get the results back from my tests and find out what’s going on inside. Bodies are so damn cool and I can’t wait to see what story mine tells! Anywho, you could care less about this and just wanted a recipe for these sexy looking tacos so apologies. Eat up, pumpkin fall lovers.
Black Bean Soft Tacos
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 5-6 servings 1x
Ingredients
- 14oz can black beans, unsalted, drained
- 1–2 tablespoon bone broth
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 5–6 grain-free tortillas
- 1/2 cup shredded goat cheese (or dairy-free alternative)
Instructions
- Place black in a blender and blend until smooth. Add a bit of bone broth along with cumin, garlic powder, chili powder, and salt. Blend until smooth with some thickness still to it – aka you don’t want bean soup.
- Place a nonstick pan over medium heat. Spray with a little avocado spray, add just a little sprinkle of the shredded cheese to the pan, and place the tortilla on top. Add 2-3 tablespoons of the black bean mixture on top of the tortilla and spread out, leaving 1/4 inch around the edge of the tortilla. Add a sprinkle of cheese on top of the beans. Let the tortilla cook for 1-2 minutes then use a spatula to fold it in half. Cook for about 3 minutes before removing from the pan and setting on a cutting board to cool. Repeat with the rest of the tortillas and black beans. Let cool for a couple minutes before slicing then serve with your favorite hot sauce on the side! It’s that easy!

Hello Juli, this recipe looks amazing. I am currently on the bean protocol for hormonal issues and wondering how it turns out long term. How much are you able to diverge from the protocol at this point? Do sweet impact you negatively? Coffee? Very curious! Thanks
i don’t follow the protocol at this point. and i definitely have caffeinated coffee now and then, but i have a decaf coffee every day. i still have sweets every day, i just try to not overdo it because they don’t make me feel great. it’s hard to say how my skin is reacting to not being on the protocol since i’m currently postpartum so my hormones are totally out of whack to what they normally are
