Well hello, from California! I’m in California right now, if you didn’t get that from my intro. Ya dummy. I decided to come out here to hang out. Not really. I’m working on a project right now. It’s still a secret project. Ughhh. How annoying is that? I tell you everything. My relationship woes. My body issues. My bodily functions. Ew. That’s gross. And I don’t do that. I’m a lady. But I can’t tell you about this project yet. Wtf? I swear it’s a cool one. And it has to do with you. Which is evenly more cool. So just sit tight. Soon I’ll tell you why I get to bask in California’s beauty very soon. And eat at Trader Joe’s all the time. Damn that place is cheap. Whole Foods, you’re rude. I still like you, but you are just raking in that doe. Swimming in it, actually. Hot tubbing in it. I don’t know what I’m saying at this point. Read this article. It’s funny. It trended the hell out of Facebook yesterday. It be #trendin’.

So, before I left for California, I was stuck in the dilemma of if I should take my car to the airport, pay something like $64 for the time it was there OR have a friend take me and pick me up and pay nothing. You’d think the answer would be clear as day, right? Wrong. Remember last year, when my car was a straight up hooker, getting picked up by any person on the street? Did you get that analogy? I’ll spell it out for you. She was stolen and broken into a few times. Poor girl. My little red 1997 honda civic was in the red light district. Well, that makes me nervous even though I have a different car nowadays. So I decided to pay $64 so my car can be safe at the airport. How sad is that? Kind of funny, but still sad.

I think it’s funny how rare it is to hear from a guy on my blog or on my Facebook. I definitely hear from a couple guys sometimes, mostly married men who are cooking for their family and lovely wife. You lovely humans, you. But not as many straight-up-bros comment on my blog. Sergio and Jake sometimes comment, but Jake usually just comments under the name ‘girlygirl’ and says “omg.yummmmmm” because he thinks only girls read my page. He’s obviously contradicting himself. Either way, I love when guys comment since it’s so rare. But the other day, when I asked on my Facebook what people would say their perfect breakfast sandwich would be consist of, I got at least 5 male comments out of 300. WHOA. New record. My favorite male comment was this one from Chad: “a piece of white bread between two whole wheat slices of bread, with bread pudding, and unfiltered wheat beer to drink.” Haha. We got a funny one.

Now here are the other sandwich combinations I loved in the comments! And some of my own ideas. Thanks for partaking in my Facebook questions. It’s always such a bummer when I take at least 16 seconds to write something and people don’t write back. The work I put into those questions. All that damn work.

  • Me: Smoked salmon, arugula, pesto, and a fried egg
  • Sergio: Fried chicken (paleo style? sure), bacon and a fried egg
  • Me: Prosciutto, asparagus, caramelized onions
  • Claire: grilled peaches, gorgonzola, and bacon
  • Me: Pork green chile and scrambled eggs
  • Brien: Bacon, runny egg, prosciutto, avocado and tomato
  • Me: Eggs, bacon, rutabaga hash browns, avocado and tomato
  • Nicholas: We do bison and sweet potato hash with avocado
  • Me: Cuban hash, a fried egg, and garlic aioli
  • Jessica: Smoked salmon, bacon, runny egg, avocado
  • Me: Shredded chicken, hot sauce, and a fried egg
  • Kat: Eggs, chorizo sweet potato hash, avocado, cheddar cheese, cilantro sour cream.
  • Me: pork breakfast sausage, summer squash pancake, and bacon
  • Hunter: Bacon, maple syrup, bananas, cinnamon, dark chocolate, 2 eggs, and cheese between two sweet potato pancakes
  • Kelly: Chopped liver, crispy pancetta, poached egg, Arugula, Fifty year balsamico.
  • Stephanie: mashed sweet potato and pulled pork pattie, runny egg, and bacon
  • Melinda: Crab cake (breadless, made w/homemade truffled mayo), caramelized onions, and a fried egg.
  • Jill: almond butter, blueberries and banana
  • Mandy: I’d take some thick maple bacon, simple scrambled eggs & some sweet potato/onion hash & sandwich it all between some maple syrup covered pancakes.

So if you don’t like my sandwich invention, you got a milli more to choose from. YAY! Now get to sandwich making!

Breakfast Biscuit Sandwiches

For the innards

  • 45 pieces of bacon
  • 1/4 cup coconut oil, divided
  • 1 yellow onion, thinly sliced
  • 6 eggs + 4 leftover egg yolks
  • 45 cups fresh spinach
  • 1 teaspoon garlic powder, divided
  • salt and pepper, to taste
  • 1/3 cup maple mayo

For the biscuits

  • 1 cup almond flour/meal
  • 1/2 cup tapioca flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 4 egg whites (save the egg yolks for later)
  • 2 whole eggs
  • 2 tablespoons bacon fat, melted (or butter, ghee, lard, coconut oil, duck fat, etc.)


  1. Preheat oven to 350 degrees.
  2. Place bacon on a foil lined baking sheet and place in oven to cook for 15-18 minutes or until cooked to preference. Set aside.
  3. Now for the biscuits. Sift together almond flour, tapioca flour, coconut flour, baking soda and powder, and salt in a large bowl.
  4. In another bowl, beat egg whites until frothy. Pour frothy egg whites into the almond flour mixture bowl and mix well. Then add the 2 whole eggs and bacon fat and whisk together. Place batter in fridge for 30 minutes.
  5. After 30 minutes, line a baking sheet with parchment paper. Use an ice cream scoop to scoop out the some batter and pour onto the baking sheet. The batter will spread out just a little bit, but should still set up. Make 4 biscuits on the baking sheet.
  6. Bake for 15-18 minutes. If you poke the biscuits, you’ll be able to tell that they are done. Let cool.
  7. While the biscuits bake, finish the insides for the sandwiches. Place a large sauté pan over medium heat, add 2 tablespoons of coconut oil along with sliced yellow onions. Let onions cook down until caramelized. They will just need a stir once in a while to keep from sticking to the pan.
  8. In a medium pan over medium heat, add 1 tablespoon of coconut oil along with 1/2 teaspoon garlic powder and a bit of salt and pepper. Cook until spinach is soft and wilted. Set aside.
  9. In that same pan over medium heat, add 1 more tablespoon of coconut oil. Whisk together eggs and egg yolks and pour into the pan. Sprinkle with 1/2 teaspoon garlic powder and a bit of salt and pepper. Continuously stir eggs with a spatula until cooked through.
  10. Once onions, spinach and eggs are done cooking, cut biscuits in half and then start building: bottom biscuit, bacon, spinach egg, caramelized onions, and maple mayo, and top biscuit.

    I made these and they turned out perfect. I did sub arrow root powder for the tapioca. We have been Paleo for 5 months. Between my wife and I we have lost 95 lbs, however lifting heavy things up and down might have something to do with it. Keep up the strong work. Love the recipes!

    Have you ever made the batter the night before & let it rest in the fridge? It would save time in the crazy rush of getting the kids going etc.

      i haven’t. it’s worth a try, but these flours can sometimes thicken up and change over time if they are sitting too long

    Okay, I have always wondered…and since you got so many FB comments to this effect, I’m gonna just risk looking stupid and ask it here. How in the heck do you eat RUNNY egg on a SANDWICH? I mean, how does all the yolk not just run out? (Messy sandwiches can still be cool. But then there’s no more egg-yolky goodness ON the sandwich?)

      you take pictures early on and really fast haha! But if you could an egg a little longer than over easy, then it will still be runny but not go everywhere as much

    These were a teeny bit dry, but GREAT! Halved the recipe, and the batter didn’t run at all when I plopped it on the. Cookie sheet- not sure if I was a teeny bit off on the liquid to flour ratio or left them in the fridge a bit over 30 minutes. Regardless, they were perfect for a breakfast sandwich! Thanks for a great recipe!

    this was such a HUGE success!!
    I can see so many ways to vary this recipe. I’m thinking maybe rosemary garlic biscuits for dinner on Friday! This is a life time keeper!!
