My bean experiment continues! If you’re new here, I’ve been following the bean protocol since May to help get rid of acne. And guess what? It works like a charm! By simply eating beans and removing caffeine, I’ve been able to get my skin under control for the first time in my life without prescription medication. Pretty rad. That being said, no, beans are NOT paleo. I did not eat them for 10 years and it felt really weird to add them back into my diet, like I was doing something wrong. But it was the exact amount of fiber that was lacking in my diet and it has helped me become a much healthier person ever since. And since it’s helped me, I’m spreading that knowledge and experience to others through my blog posts and through my recipe posts. If these bean recipes don’t work for you, not to worry, I have thousands of other paleo recipes to choose from and will have many more to come! I’ll have a huge mixture of recipes moving forward that help me thrive and hopefully help you do the same! We cool? Cool.

Now let’s talk about these blondies for a second. They are absolutely lovely. I made them one day when I had a can of garbanzo beans sitting around. Chickpeas don’t work very well for me so I rarely eat them, so I thought why not make them into a dessert for my high friends? My favorite smoothie shop, Whole Sol, makes a chickpea cookie dough to put on top of their smoothie bowls and it’s delicious, so I decided to play around with my own chickpea treats. I also had a bag of chickpea flour that a friend brought over so I added it all together and BOOM, here you got yourself a lovely batch of blondies and they are filled with fiber! Get that fiber, girl!

Now before I let you go so you can dig into these blondies and live your best life, let me get a little woowoo on you for a second. If you’ve been following along closely lately, I’ve been talking all about being curious this year. And this curiosity is starting with spirituality. Not religion, but more so how I’m connected to the world around me. And on this curiosity spirituality quest, I recently had a marconic reading, which is an energy and spirit reading. And as the story goes, the spirits told this reader that I need to let go more, I need to have more fun. So tonight I’m kicking that off by going to a hip hop dance class. I’m a pretty strict person, meaning I stick with my schedule and I don’t do many things outside my comfort zone. And going to a dance class is not TOO outside my comfort zone, but it is a little bit. So I’m doing it and I’m working on myself to become a little more fun to be around. Sure, I would rather stay inside and simply bake my life away, but a little dance class here and there can’t hurt, right? Right. Now I’m off! Go enjoy a big ole batch of sweet, sweet fiber!

Chickpea Blondies

Ingredients

Scale
  • 14 ounce can of unsalted garbanzo beans, drained and rinsed
  • 1 cup coconut sugar
  • 1/2 cup cashew butter
  • 1 egg
  • 2 tablespoons melted ghee, coconut oil, grapeseed oil, etc
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup garbanzo bean flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8×8 baking dish.
  2. In a food processor, add garbanzo beans and blend until it begins to become smooth. Add coconut sugar, cashew butter, egg, ghee, maple syrup, and vanilla extract. Pulse and blend until the mixture becomes smooth. Add in flour, baking powder and soda, cinnamon, and salt. Blend once more to completely combined. Add to a bowl and fold in chocolate chips.
  3. Pour mixture into the greased baking dish and place in the oven to bake for 30-35 minutes. Let cool for 10-15 minutes before slicing into 16 squares.

    They just came out of the oven! So yummy! I didn’t have chickpea/garbanzo bean flour so I used almond flour and that substitution worked great.
    Also, cooked them for only 28 minutes. I made the black bean brownies last week and they were a hit! Thanks for the recipes!

    Garbanzo beans don’t work well for me as well, but if I peel the clear shell I’m good to go. I feel ridiculous every time I peel them but it is kinda rewarding. Can’t wait to make these, loved the brownies. thank you for the recipe!

    I just made these with a few minor subs (ran out of coconut sugar, so I mixed some regular brown & monkfruit sweetener to make up the difference). I immediately ate 3 and had to stop myself from just having them for dinner because I have chicken that needs cooking! I’m happy to see the almond flour sub worked for another user above, because I only took 1/4 C of the chickpea flour from my in laws, though I like the idea of the added fiber from layering chickpeas. Mine were definitely not as cooked as the photo after 30 minutes, though the edges were nicely browned. Our oven is notoriously uneven though, and I kinda like gooey centers so it works for me.

      This looks so good! Any ideas on how to make this if you can’t eat eggs or the cashew butter (allergic to nuts and gluten and eggs). This recipe is so close to working for me so wanting to see if there is any way to modify it?

    Oh these look great. And I already have all these ingredients. I never know what to do with additional nut flours/flax/misc flours other than the one recipe I searched and it all just sits there.

    I made these for the Super Bowl and they were a hit! I used almond flour instead of the garbanzo bean flour since I didn’t have it on hand. Your recipes never fail!

    Does the chickpea flour bother you too or is it just chickpeas? I don’t seem to tolerate chickpeas well but also have some flour laying around that I need to use before we PCS. Thanks Juli!

      i don’t eat enough of the blondies to have an issue with it! i’ve only had 1 blondie at a time and had no issue!

    There’s no way anyone would know these aren’t just insanely delicious blondies! I followed the recipe to the letter except I subbed 85% chocolate bar chopped for the chocolate chips. It contrasted the sweetness of the batter so nicely. Keeper!
