Cherry season! I plan on making at least 6 meals with cherries since I have a huge bag of them. This will be the first. If you hate cherries, well the joke is obviously on you.
Yep. I knew it. I’m not into country music. Nope. I’ve listened to many, many country songs in my day. And used to actually love it when I had a boyfriend many years ago that listened to it incessantly. But after going to the Jake Owen concert, I can say I’m not into country. I mean, don’t get me wrong, he was great. He’s super entertaining, has a great teeth and a really good looking family. But I felt out of place at the concert. It could have been the teenagers dry humping to country music in their cut off plaid shirts or maybe the smell of cow poop in the midnight Greeley air, but it didn’t suit my fancy. I tried, it didn’t work. We even got to go backstage and drink adult beverages with the band, but I still wasn’t into it. We even had to pay a random guy, who turned out to be a band teacher at the local high school, to take us back to our hotel since there are about 2 taxis in the entire city of Greeley. How do college students get home after parties? I don’t get it.
After that delightful experience in Greeley, we went up north one more night to go to a friends house warming party. They have this gorgeous house, huge backyard AND a yellow lab puppy. So Jackson and her went absolutely insane for each other. Meaning Jackson was humping her face half the time, and she let it happen. When he wasn’t humping, they were absolutely adorable. They both were so exhausted but didn’t want to admit it to the other one. So one would lie down while the other one was walking away but quickly get back up if there wasn’t any movement that moved their way. They played, they fought, they tried to hump. They’re pretty much destined to be together. And Jackson even has another doggy date with a different girl puppy tomorrow. This one is a frenchie too. He’s such a slut.
After playing for probably 5 hours on Saturday night, Jackson did NOTHING on Sunday. Along with me and the boyfriend. Seriously, we didn’t do anything. I’m not one to sleep in very long, I usually get to 8am at the latest and it’s usually when I’m sick, but we both slept in until 11am on Sunday. It.Was.Awesome. Then we proceeded to watch as many episodes as possible of Orange is the New Black. And eat waffles. The one productive thing we did was grocery shop. That was it. We completely wasted our Sunday but man was it worth it. I woke up this morning ready to attack the day.
Speaking of attacking the day, guess what’s coming up soon?? Soon we are going to be heading on another book tour!! We haven’t finalized all of our stops yet, but I do know that I will be heading to Houston, Texas on July 15th at 7pm at Blue Willow Bookshop! Where my Houston people at?? Chocolate Cherry Muffins
- Yield: 11 1x
Ingredients
- 1/2 cup coconut flour
- 1/2 cup tapioca flour
- 1/2 cup coconut sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 eggs, whisked
- 1 cup applesauce
- 1/2 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 2/3 cup sliced fresh cherries
Instructions
- Preheat oven to 350 degrees.
- Mix together all dry ingredients in a medium bowl: coconut flour, tapioca flour, coconut sugar, cocoa powder, baking soda and baking powder.
- In a large bowl, whisk together eggs, applesauce, coconut oil and vanilla extract.
- Add dry ingredient to wet ingredient and mix together until well mixed.
- Fold in chocolate chips and fresh cherries.
- Use an ice cream scoop to scoop mixture into amuffin tin. My mixture made 11 full muffins.
- Bake for 30 minutes.

These muffins were phenomenal. I didn’t have fresh so I used dried, but they came out great. They would make an awesome cupcake with frosting. Love all your recipes. I have both of your books. Hey Julie, I modified the recipe partially because I didn’t have the full amounts things and partially because I didn’t think it would need the all that added oil. I doubled the recipe then put 3/4 cup coco powder (it was all I had), 1.5 cups quartered cherries (vs 1 and 1/3rd), left out all the oil, and put 2.5 cups of applesauce vs just two cups. They came AMAZING! My husband LOVED them. I was curious why you put the oil in? Usually oil is used to add moisture but I figured that with all the apple sauce there would be plenty! Either way they were amazing!
Oh yeah, I used mini chocholate chips too by accident and they seemed to add to the richness of the muffin!
These are the best paleo muffins I have ever tried!!! Cherry and chocolate is one of my favorite combos…I had to use arrowroot flour because I didn’t have tapioca!! They came out great!!! I would love to see you come to Florida on your book tour…. If the book has this recipe in it I definitely need to get it for my collection!!! Just yummy!!!

I made them and they were amazing! Only one problem I forgot the applesauce. I was wondering why they were kinda dry. No worries I have enough cherries I can make them again later this week.
Can I use almond flour instead of tapioca flour?
