Now I don’t usually do this, but with the current times, I said f*ck it. Today on the blog I’m sharing (GASP)…a recipe that isn’t paleo. I know, I’m a fraud. But since Denver has a shelter in place and I’m trying to not go to the grocery store much, I decided to whip up these oat bars I made a while back while living in our old house. Since we are asked to leave our house as little as possible right now, I decided to make these bars the other day with everything I had in my pantry! I love that this recipe creates the most delicious bars with hardly any ingredients! It’s the best. Now I have a very happy husband every morning and I’ll bet you’ll have very happy kids, if your kids are home from school right now.

I feel like I keep talking about kids and parents on the blog lately, but I’m FEELING for them right now. It must be so incredibly stressful to have the kids home full-time, while trying to teach them their school curriculum, and also work full-time to continue to pay the bills. Being a parent was a full-time job to begin with, but now it’s REALLY a full-time job. You parents out there are saints. So I’m hoping that some of my recipes are helping you guys out these days. I recently made my No-Bake Protein Brownies then shared 50 Kid-Friendly Paleo Recipes to hopefully help parents in a small way during this stressful time. I don’t know what it’s like to have kids, but I see my friends with kids and it’s hard freaking work, especially right now. So to all you parents out there – keep it up. You deserve an oat bar for your 24/7 hard work.
It’s so weird to think that this lockdown could go until June. It sounds like it will definitely go through April, which I can wrap my head around, but June? Sh*t man. I’m thinking our trip to Spain in July might be a bust. But hey, I have my health right now so I can’t complain. And honestly, this shelter in place hasn’t changed much about my life. I didn’t leave my house much to begin with, so now I have an extra excuse to not leave the house. Before I had to lie and tell my friends I couldn’t make it to the bar they were all at. Now I just don’t have to lie. This pandemic has made me less of a liar and I am thankful for that. I’m also thankful for these oat bars. Speaking of, it’s time for breakfast.

OMG you’re a mind reader! I stayed up stupid late last night looking for a chocolate chip oat bar recipe. All of them had tons of butter and sugar, so I was gonna have to experiment myself. Thanks for saving me the time! I’m going to the grocery store right now (mask, gloves, and all…I don’t care – I NEED these bars, lol!)
hope you like the recipe Priscilla!
Hi Juli! For the nut butter is it 1 cup by volume or weight? My almond butter is 32g/2T.
by volume!
Definitely trying this one!
hope you like the recipe Jill!
Do you think it would be possible to sub the nut butter for regular peanut butter?
absolutely!
I totally just had my kids make these for me as a part of their “culinary arts” pandemic homeschooling program 😂 We all loved them!
yay!! glad to hear it Jamie!
These were amazing. Husband and children approved too!
awesome!! thanks for trying out the recipe Meghan!
I made these Friday night and I ended up using regular milk chocolate chips. Apparently everyone was wanting chocolate chunks so they were sold out just like toilet paper. They turned out great! So moist and yummy! I also put them in a glass 7×9.5×3(WxLxH) pan and they cooked perfectly. I enjoy all your social media and blogs etc. I am so glad Jackson is doing well. I know that was so scary. You Rock Girl! You, your husband and Jackson stay safe and healthy! 😘
so glad you liked the recipe Mary Anne!!
I don’t have any bananas. What could I substitute? Or do I have to go buy some and wait days for them to go brown? LOL
i would recommend getting bananas!
Any thoughts on a substitute for baking soda? Don’t have it on hand but have all other ingredients!
no, i would recommend getting that ingredient before making the recipe
I have everything on hand aside from maple syrup. Do you think honey would be an ok sub?
What do you recommend to replace the eggs for this recipe? Want to try it but I’m allergic to eggs 🙁
you could try bob’s red mill egg replacer!
