I’m not a person who cares about presents or gifts or jewelry or any of that. The only thing I hope to receive when my birthday or a special holiday rolls around is simply chocolate. Don’t give me the latest electronic or a robot that is bad at googling. No thank you. I want a cake or brownies or ice cream. If you buy me a treat, it feels like you truly care about me. If you make me a treat, now I know you REALLY love me.

Chocolate Chip Raspberry Shortbread Cookie Bars

Ingredients

For the crust

Instructions

To make the crust

  1. Preheat oven to 325 degrees F. Grease an 8×8 glass baking dish and line with parchment paper. Add all ingredients for the crust into a food processor and pulse until completely combine. The dough should mix into a slight ball once combined. Put dough in a pan and use your fingers to press dough around evenly throughout the pan. Poke holes with a fork in the dough to keep it from rising in the oven. Bake crust for 18-20 minutes, until golden brown. Remove then let crust cool for about 10-15 minutes.

For the chocolate layer

  1. Place 1 cup of chocolate chips in a double boiler over low heat and melt chocolate. Stir until chocolate has melted and becomes shiny. Remove from heat and let cool for about 5 minutes then add in vanilla and mix.
  2. Scoop coconut cream from the can and place in the bowl with the melted chocolate. Fold coconut cream into chocolate and continue to fold until no white coconut cream remains.
  3. Pour chocolate layer onto crust and smooth out throughout the baking dish. Press raspberries throughout the dish and top with the last 1/3 of mini chocolate chips.
  4. Place cookie bars in the fridge to set for 1 or more hours before serving. Slice into 16 bars and eat up!

Notes

*remove the cream layer from the can of coconut milk and use the water in shakes or just drink!

      1. Is there coconut flour in the Bobs? If not, I would sub the BOB’S in for the almond but still add the coconut.

  10. I made these the other day before Father’s Day and they were a huuuuge hit. My parents are really old fashioned and usually don’t like any “clean” treats I make but they couldn’t stop gushing about how tasty and “light” these were for shortbread cookies. It usually takes me a lot of time to decide what to bake because I live in Mexico and I bring the almond flour, tapioca/arrowroot (I used arrowroot flour) and the enjoy life chocolate chips/chunks/morsels whenever I travel to the U.S. since I cant find those ingredientes here. So, I tend to be very selective with what I bake, I can’t waste my ingredients, you know! but I looked at the pictures you posted and I LOVE the chocolate cake that you have in your newest book (another purchase I did on my last travel) so I knew you wouldn’t disappoint me, and you DIDNT! like, at all. I love the shortbread base in these, it is so sooo good that I am sure it can work with a lot of different toppings, and the chocolate…oh the chocolate! with the sweet/tartness of the raspberries, it really rounds the whole flavor profile. Thank you for creating and sharing, for free, this great recipe! I really, really liked it 🙂

  16. Sooooooo good especially when other treats are not! I used cassava flour as I am following an autoimmune paleo diet and cannot have the almond flour, and I used sliced strawberries instead of raspberries because that’s just what I had. I had to cook the base a bit longer to get it to brown, and I added more chocolate chips just to ensure I had enough of a chocolate layer. Fabulous!!!! Next time I will try it with raspberries and just use the amount of chocolate chips you have in your recipe because it will be plenty chocolatey! Thank you for being real, creative, and making your recipes out of ingredients we mostly have at home already without 500 trips to Whole Foods. 😉 Keep up the great work!

  18. Any tips for making these sugar free? I’m avoiding pretty much any sweetener right now except for stevia due to Candida ???? These look soooo yummy!!
