These little morsels of heaven are fan-freakin-tastic, but sadly, i cannot take credit for them. But Stacey from Stacey’s Paleo Kitchen obviously knows what she is doing and is so wonderful to share it with paleo community! I TOTALLY recommend making these for a cheat meal or whipping up a batch for a BBQ this summer! You will not regret trying these!

Chocolate Coconut Stacks

Instructions

  1. In a small saucepan add the coconut milk, coconut butter, maple syrup, cocoa powder, and almond butter. Stir all the ingredients together until smooth and warmed through. Remove from the heat and add the vanilla.
  2. In a medium bowl add the coconut and sliced almonds. Pour the chocolate mixture over the coconut and almonds and stir to thoroughly combine. Drop on a parchment lined cookie sheet and cool in the fridge until set.

    I have not used it in any of my paleo stuff and no one at my damn box seems to have any! I am assuming whole foods? Any other places you know of?

    2) I live in Portland, Oregon and I dont think we have a Vitamin Cottage!
    3) I am just going to hit up Whole Foods tonight because I need some enjoy life chocolate chips anyway, but I dig the rebel spirit.

    PS – If you are ever in the Pacific Northwest, I am totally making you some awesome paleo food. (Refer to numbers 1 and 2 of my original post) Thanks for the advice!!

    Made these last night for non-Paleo friends, who loved them. A tip for others, it works great even if you are a bit “loose” with ingredients – a little short on syrup, a little over on coconut milk, etc. I had to shape them a little more to get them to stick, but the flavor was still great.

    Bonus ingredient: I used the mocha-flavored Nikki’s coconut butter and HOLY CRAP BOMB DIG.
