Chocolate “Peanut Butter” Ice Cream with Chocolate Shell

Remember when you first found out about chocolate shell? The kind of chocolate that was liquid when you poured it on your ice cream, then solid once it hit the ice cream? And how insanely exciting it was? No? That’s just me. Whatever.

This ice cream is BY FAR my favorite ice cream I have made. Truly. I absolutely love it. And had to put it in the freezer right away to make sure I didn’t eat the whole batch in one sitting. So don’t act like you weren’t warned.

OMG. Remember when I talked about coke head guy on Monday? I totally forgot to show you guys his picture. Don’t worry, his face is hidden, so I can’t get sued. But I wanted to prove to you that a hobbit really was on my plane.

proof: hobbit feet

Anywho, back to real life, since obviously he wasn’t a real human. Let’s talk about reality shows, since that’s total real life. These love reality shows are ridiculous. I mean why else would we like them. These shows are stupendously outrageously unrealistic. And when I say this, I’m mostly just talked about The Bachelor. It’s so addicting, you can’t turn away. We even have a weekly girls night dedicated to watching that blasphemy. Those girls are doing literally doing anything to win the heart of a man they know nothing about. Example A: the polar plunge. Oh yeah, I’ll totally get hypothermia in hopes of a guy giving me a rose that means absolutely nothing other than he’ll make out with me first before he makes out with 7 other women. Makes total sense. I guess it’s not sloppy seconds. Not really. It still kind of is. Gross.

Speaking of love, but in more realistic terms, OMG, Valentines Day is soon. Real soon. You know what that means? Well, it means Sergio gets back to Colorado from Afghanistan. Yep, after 6 months in a really lame place, he is back into our lives and back into our gym. So exciting!! It also means I’ll probably be eating large amounts of chocolate. Not because of Sergio, but because chocolate should always be consumed on Vday. ALWAYS. Hopefully it will be Taza. Maybe I’ll make a chocolate filled cake for that special someone. Or maybe for myself.

Did you know Schmidt from New Girl signed up for the CrossFit Games Open? He’s just the greatest.

I have a sore throat. I want warm orange juice. Yes, warm. Laura taught me that. It’s delicious.

Chocolate “Peanut Butter” Ice Cream with Chocolate Shell

  • Yield: 3-4 1x

Ingredients

Scale

For the ice cream

For the chocolate shell

  • 1/4 cup coconut oil, melted
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sunbutter (or other nut butter)
  • 2 tablespoons raw honey
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Place a saucepan over medium heat and add all ice cream ingredients to it, except for the sunflower seed butter. Stir until cocoa powder is completely broken down and ingredients are smooth.
  2. Place saucepan in the freezer until cool. Mine took about an hour.
  3. Pour ice cream ingredients in your ice cream maker and turn on.
  4. When ice cream is almost done mixing, pour in the sunflower seed butter directly into the ice cream maker to churn with your chocolate ice cream.
  5. While ice cream is churning, place the chocolate shell ingredients in a bowl and in the microwave for about 30 seconds until everything is mixed. Whisk together until smooth.
  6. When ice cream is done churning, place in bowl and bowl chocolate shell on top! Maybe even a little extra sunflower seed butter! Boom.
  7. Eat up peanut butter cup!

BUT I totally love all your rants and am seriously gonna stalk Schmidt on the OPEN website….. YESSSSS!!! you just made my day! Also, my boyfriend loves dessert and maybe I can trick him into eating paleo with this…. HA! He has no idea what I am up to!

  2. Oh em gee, this looks fantastic. And to think, my ice cream maker’s bowl has just been sitting in my freezer, waiting for such an occasion…

Thanks for posting this… I’m drooling already!

  3. Schmidt doing the Open, that is just plain awesomeness! Just watched an episode last night. Didn’t think it was funny at first, now love it! Chocolate shell was the bomb. I love reading your blogs and can’t wait for your cookbook to come out!!! Once I can, I am going to pre-order so I can get it sooner!
    Happy Thursday:)

  4. This looks awesome. I have been wanting ice cream all week, but haven’t let myself cave b/c I didn’t have a “healthy” option. I reeally want to make this. Schmidt is my fave!

  5. Next time you’re in Boston you should check out this ice cream place, FoMu. They make all their ice cream out of coconut milk (Faux Moo…get it?), AND they even have a Taza Chocolate Rocky Road flavor. It’s addictive.

  6. I love your blog!! You make the most amazing recipes!! I think this ice cream is perfect to make with my kids during the blizzard we are going to have this weekend!! Thank you!!

  7. Oh wow, this looks incredibly delicious!! I was wondering – do you know of an alternative way to make it without an ice-cream maker? Thanks!

  8. I remember my first chocolate shell – it was on a frozen ice cream cone dessert (Drumstick?) It was like chicken skin on a chicken – the best part of the whole thing.

  9. Now we can watch Schmidt in the CrossFit Open while eating chocolate peanut butter Ice cream….really…does life get any better than this?

  10. I loved putting way too much chocolate shell on vanilla ice cream, waiting until it all hardened, then mixing is up to make a sort of cookies-and-cream effect. delish.

how long would you recommend letting the ice cream churn? until it looks about right, I’m guessing?

  11. Hello cheat meal! I got the KitchenAid ice cream bowl attachment and have used it WAY too much, but just on boring old vanilla coconut milk ice cream. This will be my first sexy ice cream flavor. Yes, I said sexy.

I finally started watching New Girl! It’s genius.

  12. A: I feel like you’ve answered my paleo ice cream prayers with this one!
B: I Freaking LOVE new girl and Schmidt! I am even more excited to watch the games!

  13. Ballin…ironic that i just prepped a chocolate peanut butter base for my ice cream maker today…great minds

  14. 1. Going to buy an ice cream maker today. I CAN’T WAIT TO MAKE THIS!

    2. Yes, yelling was necessary!

    3. The Bachelor is so ridiculous but somehow I keep watching it every week.

    4. Could you do another post showing what a typical day in the life of Juli looks like? I like knowing what other people eat (is creepy).

    5. This is my first time commenting! I’ve been reading (aka stalking) your blog for a while now but I’ve never commented before. So, hi!

  15. Oh yum. I’ve been missing that shell stuff. I’m so glad I can have sugar/honey/maple syrup again–it makes it even more fun to read your blog since I don’t have to scroll
    past the superyummydessertpicsreallyfast any more!

  16. I’m freezing the bowl for the ice cream maker right now! We’re expecting a blizzard here in NY this weekend, and ice cream is perfect for a blizzard!!! Thanks for another awesome recipe Juli!!!!

  17. hahahah you are so funny. I usually scan through the pics before I read the post and I literally laughed out loud when I saw the pic of the barefoot man. So sneaky!!

  18. Schmidt! They should just film an episode there. My roommates just don’t get the magic of New Girl – they’d rather spend their nights watching Housewives (then again, they’d rather eat oatmeal over eggs & bacon for breakfast…)

  19. I’m with everyone else – I’m buying an ice cream maker this weekend. Is there any other way to make this in the interim? I feel like my paleo world is now complete!!

  20. omg this is AMAZINg. i have an ice cream maker… i tend to overmix the coconut milk and it just goes runny again!! Shmidt…yes!!!

  21. Looks amazing Jules! I have a question for the group… my first batch of ice cream was awesome right out of the ice cream maker but when you put it in the freezer, good luck trying to get a scoop after it froze. It was like an ice cube! Any suggestions? 🙂

  22. Thank you for reminding me there was a second episode of The Bachelor on this week! I need to get caught up. And New Girl, it just keeps getting better and better! Your ice cream, OMG!! I can’t make that, I WILL eat it all in one sitting.

  23. This sucks! It looks so good but I don’t eat chocolate 🙁 I suppose I can nix the cocoa, huh? Did you say, “duh?” …Whatever, Juli 🙂 (my sister used to say that all the time)

Hey…I left you some questions on an old blog post. Would you mind checking it out? Yeah? You’re the greatest “Jewl” – hee hee

Seriously, if you don’t mind, it’s on here: https://paleomg.com/superbowl-snacks-avocado-chorizo-sweet-potato-skins/

    Thanks, Charlie

    1. Hi Juli:
I reread my comment and it might have sounded like I was angry. I PROMISE, I AM NOT…cross my heart.

I was being a “wise butt” and trying to flow with your humor.

I hope you didn’t take my comment wrong 🙁

I’d love to hear your answer to my questions….pretty please:)

      Thank you!!

      Charlie

  24. Oh! And I have a complaint, Juli B! WTH with no new video’s?? No cooking, no dancing… you are depriving us! Just sayin! 😉

  25. You used straight up ground coffee beans (ground coffee = beans that are ground) or instant coffee that is ‘ground’ and dissolves like all instant coffee?

  26. Hi Juli, Hope I can ask you a question since I totally respect and love your attitude and smarts. I am struggling with very late night “binging”…I don’t necessarily “overeat” for the day , I eat consistent big meals and snacks, but not necessarily insane calorie overload…but at night I get emotional and want to be comforted…so I eat. Like tonight: 2 oranges, 40 grams of dark chocolate (yes, 40 grams 🙁 ), a tablespoon of nut butter and a carton of yogurt. I know I know.
I am NOT overweight, but I can’t exercise due to a very low iron status and adrenal fatigue. I try to walk when I can but,,,,we get a lot of snowstorms here and walking is near impossble (like it will start again tommorow, and I’ve binged, oy). My digestion is so off and I’m terribly costipated. I can’t exercise indoors due to numerous older roommates. I feel quite lost.
When you are constipated and binged the night before and can’t get out and move …ugh, nightmare.
How can I “recover” from a binge, etc. How does one “detox” in such a situation. I feel like its hopeless. Thanks for any help.

    1. Hey Rach! I know how that goes, I can totally connect with you. The thing about that stuff sometimes is just cutting it cold turkey. making yourself not eat those things you usually do. that’s what helped me, just drank some tea before i went to bed and forced myself not to eat. that was really all that worked for me. good luck rach, lots of people go through this just like you

  27. I loved the chocolate shell on ice cream. I would add a layer, eat the shell and some ice cream, then add another layer, and keep going with the chocolate shell additions until the ice cream was gone.

Yay, Sergio’s coming back! Does this mean we’ll get more stories about his ridiculousness? I mean, it’s cool about Schmidt, but I’m much more excited for you about the news about a real person – Sergio!

  28. I made this today after a long week of very strict eating and hard workouts….it was AMAZING…and just what I needed. Thanks for the recipe!!

  29. Tried this tonight and couldn’t get it to freeze in my ice cream maker. Any suggestions? Brand new to Paleo lifestyle, so I’m not sure what I did wrong. But it was delicious after I threw it in the blender with some ice! 😉

  30. This looks fabulous!! Any recommendations on what kind of ice cream maker to buy? I don’t know anything about them. Thanks for sharing all of your awesome recipes!!!

  31. I just made this and it’s amazing! Thank you for the post!!
Also, I live in the town where Taza is made, so I’ve been to tastings, and lemme tell ya. It’s special! We went to a whiskey and chocolate pairing, and the husband was in HEAVEN.

  32. Julie, this chocolate ice cream is fantastic! My 2-year-old loves it as well:))
Do you think I could add some mashed strawberries, or other berries to your basic ice cream recipe (I don’t mean the chocolate one of course) and make fruit flavored ice cream that way? Do you think you may post a strawberry ice cream recipe or anything like that in the close future? That would be wonderful! I don’t really like to experiment with stuff myself:))
    Thanks, your recipes are great!

  33. So, i gotta know…. can you taste the coffee? Because I want to make this, but if you can taste the coffee, then my BF will not eat it, and I will have to eat the whole thing myself…. Not that I am complaining, but homegirls trying to lose body fat and… sweets need to be kept at a min around here right now!!! thanks 🙂

  34. Amazing! I made this today but I didn’t have any cocoa powder. I melted 3oz of unsweetened chocolate in the coconut milk mixture. It came out perfectly 🙂 I’ll definitely try it again with the cocoa powder!

  35. I made this today in preparation for our Valentines Day meal. It is amazing, one of the best ice-creams I’ve had. I hade a slight addition and added some unsweetened chocolate and used coconut butter as its my husbands favourite. I’ll be very surprised if it lasts until tomorrow!

  36. What type of ice cream maker do you use? Which one is a good one to get. No idea about ice cream makers. 🙂
This looks so relish, btw. Must try. Soon!

  37. As I read your blog and see things like this ice cream, I can’t help but wonder, is this really paleo? Sure, all of the ingredients fit into the guidelines. But aren’t we swaying from our goal to eat like our ancestors. What caveman would eat chocolate “peanut butter” ice cream with chocolate shell? Just a thought.

  38. Definitely going to borrow my SIL’s ice cream maker.

By the way, a book you and your ladies night group might want to check out is by Jennifer L. Pozner. It’s called “Reality Bites Back” and even has a game in the back that you can play while watching these shows. It was such an eye opener, and shocked even me.

  39. Made this today! This is the reason I come back to this site time after time. I have never been let down! This is far and away the best ice cream I have ever made. Paleo or not! Great job Juli. P.s. I ave a cuisinart ice cream maker as well it totally rocks!

  40. I made this today and its fabulous! Couple questions. Can I leave the coffee out, I can really taste it. And after I freeze it, it becomes hard as a rock. How do you scoop it out? Is it ok to let it thaw a bit, scoop what I want and refreeze the rest?

  41. If I wanted to make the ice cream to put in a container in the freezer (therefore more than 3-4 serves) is it fine to double the ingredients or is there a different ratio I should go by’?

  42. I am making this tonight! In “standard” ice cream recipes, a tiny bit of cornstarch will bind to the free water molecules and prevent the ice cream from getting icy and rock hard. I am guessing arrowroot starch would work in the same manner.

I think people calling you out as “is this really Paleo” should hold their tongue- I don’t think cavemen had ovens or gas grills either!

  43. Carol Anne Miller

Is coconut “cream” the same as coconut milk in the can?? I am buying at Trader Joes, thanks.

  44. Made it today. Super yum! No need to spend $7 on coconut ice cream ever again. I didn’t heat it on the stove (don’t have much time with 9 month old!) and it still came together nicely. Just mixed and put it in fridge for a few hours.

  45. As per my husband: “This is pretty good, for YOUR people’s type of ice cream.” (By ‘your people’ he means ‘lactose intolerant people.’) I LOVE the chocolate shell, which is made of cocoa, honey, love, and magic. I will be making this again; it has me feeling pretty proud of myself.

  46. I just made this today and it is so good! I’m gluten/casein intolerant so this was truly a real treat for me 🙂 Thank you!!

  47. I never comment on websites. I am a silent stalker really. However, I must comment. Ice Cream is my first love and chocolate peanut butter my favorite. I have been dairy free now for almost 4 months so it could just be my memory is not the best or it could just be that this is the best ice cream I have ever had – ever. THANK YOU!!!

  48. I know that this is an old post, but I have to say that this is the most amazing dairy-free ice cream that I’ve ever made…or eaten for that matter. Every other recipe I’ve tried has sounded amazing, but fell totally short. This one…AMAZING!
