Say whaaaaaa?? I was recently inspired by Vanessa of Clean Eating with a Dirty Mind and her amazing recipes, but specifically her paleo churros. She’s pretty much a genius. Look at all of her other recipes because, you’ll die. She’s so rad. Anywho, I made churro waffles instead! Yay!
What is up with people loving the movie ‘Risky Business’? It’s suppose to be a classic, right? I mean, people dress up like Tom Cruise in that movie all the time on Halloween. Well, I watched it the other day, and I wasn’t that impressed. Was it a huge movie since making movies about whores was more of a big deal back then than it is now? Because I felt like I was going through the movie ‘Drive’ again. And if you ever read that blog post, I HATE that movie. So boring. Too many awkward silences. Too many weird human to human interactions. I don’t understand popular movies. I’m just not hip enough.
So the other morning, I woke up, looked outside, and noticed that something was missing from our backyard. You know that meathead Jake that I talk about sometimes? He’s the one who found my car after it was stolen right outside the front of my house. And since he’s so smart, one night he left his scooter in our backyard, not the garage, but in the backyard. And we don’t exactly have a tall fence. At all. So the scooter sat there, in the wide open for 2 months, and on Saturday, it sat no more. Someone decided it was dumb that we were keeping it out in the open for someone to steal, so they stole it. Makes sense, but still rude. They shut the gate behind them, though. At least they were polite.
Churro Waffles
- Yield: 2-3 1x
Ingredients
- 1.5 cups almond meal/flour
- ½ teaspoon baking soda
- 1/2 teaspoon cinnamon
- pinch of salt
- ⅓ cup canned coconut milk
- 2 eggs, whisked
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 3 tablespoons grass fed butter, melted (or coconut oilif you don’t do butter)
- 1/4–1/3 cup coconut sugar
Instructions
- Place almond flour, baking soda, cinnamon and salt in a bowl and whisk together.
- Then add coconut milk, eggs, honey, and vanilla extract and mix well.
- Place mixture into hotwaffle iron and cook until cooked through. I used a non stick waffle iron but you may want to grease it just in case.
- Melt butter in a wide bowl and place coconut sugar in another wide bowl.
- After waffles are cooked through, place each other into the melted butter, soaking it on both sides, then place them into the coconut sugar to coat.
- Then eat!
Notes
Made 6 small waffles. Should make 3-4 large waffles

I am so grateful for you and your blog! I am eating a churro waffle right this moments and it is amazing! I have three kids and struggle with feeding them low carb food, especially at breakfast time ( eggs again?!). I am sure they will ove these as much as I do. I enjoy your blog and think we would get along great so look me up if you are ever in MN!!!!
Hello quick Q: Can you sub the almond flour for something else, like Oat flour or maybe Coconut flour or spelt flour?

No clue. I’ve honestly only worked with paleo flours
These were da bomb!!! I ate 2 and my husband, non-paleo, ate one! Thank you so much!!!
I love the waffle recipe. I put too much sugar on mine though. Next time I think I’ll sprinkle the sugar on instead of dipping the waffle in it. Thanks for another great recipe. =)
I went out and bought a waffle maker just to try this recipe. Totally worth it. My husband had the audacity to argue that I didn’t need a waffle maker – now he keeps begging me to make more of these. I take that as a total win in the marriage department. I feel like Churro Waffles should be illegal or sold at the Texas State Fair – maybe both. Do you want to just move to Boulder and be my best friend Julie?? 🙂
Made these the other day! Very tasty!
Julie, I just made these this morning (it’s my birthday, so I wanted a special treat) and they were AMAZEBALLS! What an awesome recipe.
I made these yesterday morning and OMG were they good. What a treat!
These would be delicious with a scoop of peanut butter ice cream!
They turned out amazing! I’ve been eating paleo for five months now and this recipe is perfect for when I get my dessert cravings. Love it!
