I love summer so freaking much. I really don’t understand why we still live in a state where it snows because we both hate snow at this point. But we also don’t want to live somewhere with terrible humidity and bugs the size of spaceships. So for now, we stay in Colorado and we enjoy every single second of summer. And with summer comes frozen desserts! We’ve been craving ice cream from an cream shop lately, but we more so want to head into a shop to taste all the flavors then leave with a tiny cone since we are already full. But that’s not a possibility right now during quarantine so instead I make ice cream at home! Maybe someday I’ll be making ice cream from a house in Hawaii. That’s the dream right there.

But for now, we are spending Memorial Day weekend at home. Which I’m honestly totally fine with. Being home is my favorite, especially since my sister-in-law is living with us. She’s been living with us for about 9 months at this point. The hubs and I decided to buy a condo back in July to use as a rental property. At the same time my SIL found out her apartment was closing down so she needed to find a new one and since our condo was supposed to be built by late September-early October (at the latest), we told her she could move in there if she wanted! So she moved into our house in August thinking she would only be with us for a couple months. Well, turns out by late October, they meant late May. WTF. Thank god she loves us and she was able to live rent-free for almost 10 months because I have no idea what the other people in that building have been doing. I heard some were living out of hotels or at their parents house. What a mess. But the building is finally built and she starts moving out of our house this weekend and into hers! I’m so excited for her yet so sad I won’t have feminine energy around the house. Living with a best friend AND husband at the same time is pretty great.

And I think she feels the same way, especially since I bring her afternoon snacks to her office in our house whenever I make recipes for the blog. Warm banana bread while at work is pretty much the best quarantine life possible. And she also gets to snuggle with our pup Jackson while she lives with us. My SIL loves Jackson as much as I do, which is A LOT. She thinks everything he does is adorable so not getting to see him every day is going to be a major bummer. She also just got new rollerblades that match mine and now we won’t be able to skate around together every night after dinner. BTW if you don’t have yourself a pair of rollerblades, I highly recommend getting some! They have been my favorite quarantine activity by far!

Now if you’ll excuse me, I have some frozen snacks to chow down on. I also just made my coffee ice cream! Kloveyoubyyyyyyeeeee.

3-Ingredient Easy Honeydew Ice Cream

Ingredients

Scale
  • 1lb cubed honeydew, frozen (56 cups)
  • 1 1/4 cup water
  • 1/4 cup honey (add more if you prefer sweeter)

Instructions

  1. Place frozen honeydew, water and honey in a food processor or high speed blender.
  2. Blend until smooth, using a spoon to push around the honeydew until completely broken down.
  3. Once smooth, eat it up OR place it in a bread pan and into the freezer to serve up in the future.* Before serving from the freezer, let rest at room temperature for about 10 minutes before using an ice cream scoop to scoop it out!

Notes

*The sorbet will be a great consistency right out of the blender, but if you want a sorbet that won’t melt quite as quick, you can always freeze it first before serving.
