With Labor Day coming up this weekend, I thought I would make some special boozy cocktails for the adult parties out there. I wasn’t completely sure if these would work since they have alcohol in them, but they do! Since watermelon has such a high water content, these freeze up perfectly! And in my opinion, they have the perfect amount of alcohol in them. I personally don’t like to taste the alcohol I consume and these popsicles just simply taste like watermelon. It’s lovely. These would be especially good on a boat, in the water, with the last bit of summer sun pounding down on you. Just sayin’. Make it happen this weekend!

So I’m currently in Bali battling jet lag like a MF while my body tries to acclimate to this time change. The time is pretty much completely opposite from Colorado. I was up at 5am yesterday texting my SIL who was snuggling on the couch with my pup after getting off of work. Time change is stupid. And not sleeping is even more stupid. I barely slept for at least 35 hours while we were traveling to Bali and I’m still having trouble sleeping now. I get really jealous of the people on planes who can just pound some shooters on the flight and sleep for 13 hours straight. Alcohol makes me sleep less. Along with planes, crowded spaces, fart smells, bad breath, airplane food, and everything else that is included in a 13 hour flight around the world. As soon as we landed in Bali, I upgraded our flight home. YOLO, right?

We’ve only been in Bali for two full days but so far – Bali is AWESOME. It’s super health conscious, there are gyms everywhere, the food is amazing, and the people are insanely nice. The only thing that suck is that there is a huge stray dog population. And if you’re a dog person, you want to pet all of them. But you can’t. Because they hate you. It’s a real bummer. Everywhere you turn, there is a pup who has no clue how great having an owner could be. While we were flying over to Bali, a reader reached out to tell me about a company called Bunny’s Buddies. They rescue dogs from slaughterhouses, shelters, and meat farms in China and South Korea and get them on a plane with someone heading back to the USA to adopt out to a family looking for a new pup. When I found out about this, I immediately offered to take a dog back home with me from South Korea to find its new home. BUT sadly Delta doesn’t allow this for some reason (and I’m flying Delta). So no pup will be coming home with us to find a home. But if you are reading this and flying through South Korea at any point, you should contact them and help them out! They just need someone on the flight to help get the dog to the US. Such an awesome company!

This post got reallll sidetracked. Airplane farts, adopted dogs, and alcohol. I guess that’s how consuming alcohol goes, especially when consuming alcohol in popsicle form. Just FYI – alcohol is bad for you. So enjoy responsibly. Actually, this is probably how sleep deprivation goes. Be prepared for my post for the next 2 weeks on my blog to not make any sense, whatsoever.

Watermelon Margarita Popsicles

  • Yield: 6-8 popsicles 1x

Ingredients

Scale
  • 3 cups cubed watermelon
  • 1/2 cup freshly squeezed lime juice
  • 1/3 cup silver tequila
  • 1/4 cup agave nectar

Instructions

  1. Place watermelon in a high speed blender, blend until smooth, then strain through a fine mesh strainer, removing all the excess pulp.
  2. Add the watermelon back to the blender then add the lime juice, tequila, and agave. Blend once more to combine. 
  3. Pour mixture into 6-8 popsicle molds (the number will depend on the size) then place in the freezer for 6 or more hours, until completely frozen. Eat immediately with friends on a hot summer day!

    I’m probably gonna sound like a dick, but PLEASE do not bring dogs here from other countries!!! They are bringing diseases that can threaten our own animals and the shelters here are already overcrowded. It sounds awful, but it’s true. Also, many of these dogs are feral to almost feral and have immense problems adjusting to domesticated life. It’s a sad situation. AND many of these “rescue” groups profit handsomely for these dogs. Its not a good thing. And I AM a dog person.

      two sides to every story. i’m sure the people who have adopted those dogs from other countries have a very different opinion on this topic.

    Oh I love that you want to rescue the street dogs! My husband is from Brazil and we actually rescued a street dog that had broken her legs. After she spent 6 months recovering at the vet in Brazil we flew her to the USA (it was a lot easier than I ever thought it would be!). Sadly, though, she suddenly died from kidney failure about 4 months after she arrived. But we gave her the best life ever for those four months. 🙂
