Are you seeing the theme this week? I sure am. It’s called laziness. Easy breakfast crockpot thingy, now easy shredded crockpot pork. Come on Juli, get your sh*t together. Just kidding, I like easy. And most guys do too. Bastards.

In all honesty, I’ve just been real busy. Like real, real busy. So meals have turned into the easier-the better. The more fall comes into play here in Colorado, the more I want to use my crockpot. Like, everyday. Problem is, I always smell like meat. My clothes, my shoes, my jackets, my blankets. It’s obnoxious. Even my god damn headbands smell like onions and pork. Do you know how uncomfortable it is to do power cleans and pull ups when you have the smell of pork and onions wafting off your forehead?? It’s disgusting. I don’t care how much you like meat. It’s gross.

Speaking of things making your life easier, I got something for you. Easy Shredded Pork over Caramelized Mashed Plantains

Ingredients

For the crockpot pork

  • 12lb pork loin
  • 1 yellow onion, sliced
  • 2 cups beef bone broth – add 3 cups if you go with a 2lb pork loin
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper, to taste

For the plantain mash

  • 4 brown plantains, peeled, sliced in half lengthwise
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • pinch of salt
  • 34 tablespoons canned coconut milk

Instructions

  1. This recipe is so easy, you may cry from excitement.
  2. Add all your pork ingredients to a crockpot and cook on low for 8-10 hours. I’m pretty sure mine cooked for 12 hours because I forgot about it. Oops. It was bomb still.
  3. Once your pork is done cooking, use two forks and shed it to pieces.
  4. Now place a large skillet under medium heat, add your coconut oil and once your pan is nice and hot, add your sliced plantains into the oil.
  5. Sprinkle with cinnamon and salt.
  6. Cook on both sides for 4-5 minutes or until soft.
  7. Add your plantains to your food processor and puree. While the food processor is still running, pour in your coconut milk until you get a smooth plantain puree.
  8. Add a dollop of plantain mash to your plate, top with pork, and add a little avocado just for sh*ts a giggles.

    Another great recipe, Juli. Thanks. This was the first time I had cooked with plaintains and they’re really good. I ended up working from home while the pork was cooking and it smelled so good all day long.

      just different cuts of meat! loin is a bit leaner then the butt and shoulder

    this is fabulous (mashed plantains are to die for, who knew?) but I think this pork could use some spice to complement the sweetness of the plantains. will try to jazz it up a little next time, but if you have spice suggestions, do tell!

      Holly, I made this last night and added the following: 1/4 – 1/3 teaspoon of ground cumin and ground coriander, 1 1/2 – 2 teaspoons dried cilantro. It smelled soooo good all day and the flavor was out of this world!

    The pulled pork was kick-ass, but my husband’s friend who thinks he’s some kind of culinary genius insisted I could have used a less expensive cut of pork, since it was going in the crock pot anyway. Would a pork shoulder still be considered paleo? Also, I couldn’t wait to make the pork, so I made it as soon as I got home from the grocery store. I figured the plantains would ripen in a few days and I could have the puree with the leftovers. Um… It’s been 10 days and they still aren’t ripe. Oh well!

      I have made this a few times now as well as the meat crust quiche and me and my husband both love it! My husband is Colombian so he really enjoyed the plantains. I love that this recipe is so easy to make. I need easy with us going to school, working, and raising a 3 year old while still training 6 days a week.     This was great! I couldn’t find plantains at my grocery store so I had to use bananas. And I couldn’t find coconut oil so I had to use olive oil. It was still great, but I think the coconut oil would give it that little extra sweetness that it needed. The pork was so much more flavorful that I imagined it would be. And the avocado was a perfect match!

    Oh man. What did you just do to me with this recipe???? The mashed plantains are like the best pseudo mashed potato ever. Which is great, b/c I don’t like white potatoes. And the pork. Man, the pork. I don’t really like pork either, but this was so good. I added a crap ton of fresh smashed garlic to it because it was sitting around, and more garlic makes everything better.     i can’t wait to make this pork. i ordered a 3lb pork butt from a local farm just so i could make this. it’s coming in 2 days and i just wanna throw it in the crockpot as soon as it gets here- without even defrosting it.

    i always loved barbaque pulled pork with sauce but i have a sensitive belly and can’t have anything spicey. this recipe looks perfect since it won’t make my insides cry. the best part is that nobody in my house eats paleo so it’s ALL for me.
