I thought I was done traveling. But I’m not. Sadly, I had a family emergency back in Wichita last week, so I haven’t had much time to cook. Just to drive. Driving to Wichita takes something like 7-8 hours. Whoever invented road trips must have been on drugs or alcohol at the time. Because driving through Kansas is not fun. It has grass. Dirt. And wreaks of urine. I’m not sure why. I swear it wasn’t me though. I get nervous on road trips, so I drink a total of 8 ounces per 10 hours. Extremely healthy, but I’m definitely not the one that has to stop at all those creepy rest stops. Those things are the creators of scary movies. Not peeing there.

So road trips are boring, obviously. I brought snacks, which is a given, in hopes of keeping myself entertained. Food gives you endorphins, endorphins make you feel good, feeling good makes you feel like you’re having a good time. So I stayed pretty entertained. And I actually found some great food options on the way there. I made mini muffins from Health-Bent and brought with me some Steve’s Paleo Krunch, but I needed some real protein to keep me from eating constantly. So we first found a Qdoba and I got a shredded pork bowl with guac and pico and it lasted 2 meals. Awesome. Then on the way back home, we stopped on Subway and I got a salad. Did you know you can get any sandwich a salad? That’s pretty rad. The chicken didn’t taste real, but whatevs. Better than the Taco John’s option. I would have been a terrible traveling buddy if I ate tacos and tater tots.

Why does Subway smell so weird? The smell seriously sticks to my hair within 15 seconds of being inside Subway. It creeps me out.  I guess I smell like broccoli most of the time anyways. I shouldn’t hate.

We played some pretty interesting games on the road trip. Like finish my sentence. And would you rather. Out of the 16 hours total of driving, we played those games for a total of 35 minutes. So in all honesty, they weren’t interesting at all. But I’m really good at using cruise control now.

Have you ever slept on your arm wrong and woke and your arm is broken? Ok, that’s an exaggeration. But I did wake up the other day, after not working out for 2 days, and my shoulder is completely wrecked. It aches so bad. I mean, it hurts to turn a door handle. But not to snatch. What? I think I’m broken.

Holiday Salted Peppermint Bark

Ingredients

Instructions

  1. Melt coconut butter and chocolate chips.
  2. Mix peppermint oil into chocolate.
  3. Pour coconut butter on a parchment paper lined baking sheet. Pour melted chocolate on top of coconut butter. Use a knife to make designs in the coconut butter and chocolate mixture.
  4. Sprinkle with salt on top.
  5. Place in freezer to harden for 30 minutes or more.

    What brand of dark chocolate do you use???

    Ummmm, and yes, the smell of subway is horrid. When I go there it’s the rule of IN-AND-OUT ASAP! It totally sticks to the hair….nasty.

      I usually use enjoy life chocolate chips, but with this recipe I used Eat Evolve baking chocolate!

    Hope everyone in your family is ok; there’s obviously no GOOD time to have a family emergency, but during the holidays could well be the worst!

    This sounds delicious!!! Quick (possibly dumb) question – I’ve never seen peppermint oil (the edible kind, haha) in the store… Is it in the baking aisle at just a typical grocery store, or at a Whole Foods-type store only, or what?

    I am from Windsor, Ontario Canada originally and I still remember when I was in University, there was this bar downtown that was right beside a Subway, and when the air conditioning turned on in that bar I swear it blew the subway smell on everybody there. barf. So I always walked out of that bar with my hair smelling like Subway. Great post by the way..you can never go wrong with peppermint and chocolate! Can’t wait to try it 🙂

    I made this last night and found that I needed to keep it in the freezer or refrigerator. I put some in little bags for friends and set them on the counter and it melted. Did this happen to anyone else?

      It was probably just warm in your house so it melted
