So if you haven’t figured out what leftovers is by now, you’re a little late to the party. It’s cool. You brought beer right? Kidding. I hate beer. It tastes like feet water. Don’t say no. I’m right. Maybe it’s because I’m so young, I still don’t like the taste of alcohol. Maybe. Or maybe because I’d rather waste my calories away on dark chocolate binges and late night serenades with sea side cheddar. Mmmm I love seaside cheddar.

Holy crap, I didn’t even tell you what leftovers means. No, it’s not the leftovers I had in my fridge. It’s a meal I have made in the past, loved, and wanted to make again since my pictures sucked ass back then. This post shows the disgusting picture that was taken back in the day when I was working 4 jobs and only used my camera phone at 5am. So, anyone who still had the balls to try out the recipe, EVEN AFTER looking at the picture, I love you. And applaud your bravery.

I fasted yesterday. A really long time. Like 26 hours long time. I’m going to teach you something so you never make the same mistake I do. So listen closely.

Do not, I repeat DO NOT, fast for 26 hours, while on your monthly gift, and attempt a Regionals wod…all on a Monday. Just don’t do it. Yes, I understand I just lost 10 male readers purely on the fact I said “monthly gift”, but I do not care. It’s all a terrible idea and I wish it on no one. I cried staring at the pull up bar. I cried sitting on the floor after the workout. I cried on my drive home to fix my makeup. AND I cried while doing my makeup. Are you serious Juli? Get your sh*t together. You’ve had your monthly gift, MONTHLY, for 10+ years now. If you don’t know how to control your emotions at this point, there’s no hope.

On the up side…oh wait…there is no up side. I’m kidding people, I’m not that negative. Up side: it was super hot today and my pants got so sweaty, it looked like I peed myself. Always searching for the awkward happiness in the small thing. Positive Polly right here.

Leftovers: Crockpot Brazilian Curry Chicken

Ingredients

Scale
  • 1.52 lbs chicken breasts (or whatever suits your fancy)
  • 3/4 cup canned coconut milk
  • 1 cup chicken bone broth
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1 tablespoon ground ginger
  • 46 tablespoons curry powder
  • 2 bell peppers, chopped into 1 cubes (i used yellow and red)
  • 1 yellow onion, thinly sliced
  • salt and pepper, to taste
  • dash of red pepper flakes

Instructions

  1. Grab out your crockpot!! Wooooo crock pot time!
  2. Add in the coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper, red pepper flakes, and whisk together.
  3. Add in peppers and onions.
  4. Next, add in chicken and pour broth over the chicken.
  5. Mix all ingredients together to completely cover the chicken in the curry mixture.
  6. Cover and cook at low for 6-8 hours or high for 4-5 hours.
  7. Then eat it in a cute Tupperware bowl. Or plate….be that way.

    I work at a bar…and recieved my monthly gift two days ago…and I hate sports…so, needless to say, I was a super happy camper last night to have to serve beer all night while the last game of the hockey season was being broadcast. I love going home smelling like beer and fried food…not really, not at all, makes me want to scrub my skin in the shower for hours. That sh*t is a hard smell to get rid of.

    so much mental imagery in this one, you crack me up. I enjoy one day of involuntary fasting per month because my gift is a mean mfer, but I also stay out of the gym that day!
    Side note: when you finally get your doxie puppy, do not…I repeat….DO NOT, leave your sweaty workout pants on the floor while you shower. Or anything else, my youngest [have two] has destroyed quite a bit of expensive nike apparel. Good thing she’s cute.

    LOL @ your “pee pee pants!” But for serious, denying yourself during your period is almost always a bad idea. Then again, my idea of fasting during my period is not eating chocolate. Sorry male comment readers for excessive use of the word period.

    I never never fast during The Gift. I find I actually have to eat more (“have to” as in, or else I feel faint) during that first day or two.

    Also, beer? You must be doing it wrong! Maybe try darker stuff–it is so very tasty.

    You are so funny and I love reading your stuff, as well as making your recipes. Monthly gift. Mine lasted 9 days and during that time, my joints feel really mushy (I thought all my hard work had finally paid off and I was way more flexible). At the end of a Spartacus workout last week, during cooldown, my knee felt inclined to bend WAY more than it was supposed to in a manner it has never. Needless to say . . . injury and no leg work for a week plus!

    I LOVE my squats & lunges, but I have to wait until my knee heals enough. You’re at 10+ yrs, I’m at about 30 – EEEH!

    I was going to one of the bold ones to make this recipe from your original. Had it all printed out and was going to make it this weekend with Strawberry Shortcake Cupcakes from Bill Haley’s site . . . I’m so looking forward to the Brazilian Chicken Curry, though!!

    were you intentionally fasting for the benefits or did you just do it by accident? Although 26 hours is probably much too long of a time for that to be on accident ahha. Would love to hear about your experience with fasting, trying to figure out if its for me or not…

      I was doing it intentionally Katie. I’ve had some hormone and weight issues so I’ve been testing out different things to help. I like fasting after I get through 12 hours of it, then the hunger pains go away. I feel really good the next day though, my digestive tract just feels more in order. I’d be happy to answer any other questions you have!
