So if you haven’t figured out what leftovers is by now, you’re a little late to the party. It’s cool. You brought beer right? Kidding. I hate beer. It tastes like feet water. Don’t say no. I’m right. Maybe it’s because I’m so young, I still don’t like the taste of alcohol. Maybe. Or maybe because I’d rather waste my calories away on dark chocolate binges and late night serenades with sea side cheddar. Mmmm I love seaside cheddar.

Holy crap, I didn’t even tell you what leftovers means. No, it’s not the leftovers I had in my fridge. It’s a meal I have made in the past, loved, and wanted to make again since my pictures sucked ass back then. This post shows the disgusting picture that was taken back in the day when I was working 4 jobs and only used my camera phone at 5am. So, anyone who still had the balls to try out the recipe, EVEN AFTER looking at the picture, I love you. And applaud your bravery.

I fasted yesterday. A really long time. Like 26 hours long time. I’m going to teach you something so you never make the same mistake I do. So listen closely.

Do not, I repeat DO NOT, fast for 26 hours, while on your monthly gift, and attempt a Regionals wod…all on a Monday. Just don’t do it. Yes, I understand I just lost 10 male readers purely on the fact I said “monthly gift”, but I do not care. It’s all a terrible idea and I wish it on no one. I cried staring at the pull up bar. I cried sitting on the floor after the workout. I cried on my drive home to fix my makeup. AND I cried while doing my makeup. Are you serious Juli? Get your sh*t together. You’ve had your monthly gift, MONTHLY, for 10+ years now. If you don’t know how to control your emotions at this point, there’s no hope.

On the up side…oh wait…there is no up side. I’m kidding people, I’m not that negative. Up side: it was super hot today and my pants got so sweaty, it looked like I peed myself. Always searching for the awkward happiness in the small thing. Positive Polly right here.

Leftovers: Crockpot Brazilian Curry Chicken

Ingredients

Scale
  • 1.52 lbs chicken breasts (or whatever suits your fancy)
  • 3/4 cup canned coconut milk
  • 1 cup chicken bone broth
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1 tablespoon ground ginger
  • 46 tablespoons curry powder
  • 2 bell peppers, chopped into 1 cubes (i used yellow and red)
  • 1 yellow onion, thinly sliced
  • salt and pepper, to taste
  • dash of red pepper flakes

Instructions

  1. Grab out your crockpot!! Wooooo crock pot time!
  2. Add in the coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper, red pepper flakes, and whisk together.
  3. Add in peppers and onions.
  4. Next, add in chicken and pour broth over the chicken.
  5. Mix all ingredients together to completely cover the chicken in the curry mixture.
  6. Cover and cook at low for 6-8 hours or high for 4-5 hours.
  7. Then eat it in a cute Tupperware bowl. Or plate….be that way.

    God I love your website, you make me laugh with every post…ohhhh and your food is great too:) I want to try Crossfit so bad but I am scared sh*tless, I’m super tiny, severly lacking any muscle and way out of shape so all the weight lifting has me freaked out! I can’t even get up the nerve to go to my local Crossfit and just check it out.

      Don’t be scared Kristin! Seriously!! The coaches will be super helpful and will help you do whatever you can no matter what your strength level is! We all start somewhere, might as well start sooner rather than later! I coach a girl who literally just started CrossFit and it was her first time ever working out. She’s getting strong so fast! I know you can do it too!

      @ Kristin…I’m with you. Crossfit is crazy intimidating. I’d walk in and hear “why’s the fat girl here? Look she can’t even do push ups…on her knee’s? ha. ahhh…self mocking is fun.

        are you kidding me Farrah?! a lot of girls AND EVEN GUYS have to do push ups on their knees!! You would NEVER be considered the fat girl. CrossFit gyms are not like that. at all. i promise you

          HEY…I am a fat girl and I do crossfit to dump the fat chick and gain the beauty! girl…do the knee thing. I was doing push up and looked up and seen the other starting guy doing them too.

          CrossFit gyms are NOT that way, last week, the two other girls stood there catching their breath counting my jump ropes, I felt weird but it helped me get through TRY IT! You can do it.

          I just talked a friend into going with me, who is my size. Eh…its awesome. I recommend it to everyone.

    So, when you fast what do you drink? Do you workout that day? And do you eat anything at all? I suppose this should be a question on one of those Q & A “Sesh” days, huh?

      Haha I’ll try to write something up soon about fasting. BUT I just drink a little coffee in the morning and water through the day. I do usually workout, but i’m going to try my next fasting session on a rest day. I don’t eat anything, just drink a ton of water 🙂

    I was laughing at the pant thing. Girl…I experience that sitting! Reason #301 why I want to lose weight..so it doesn’t look like I pee’d every time I walk or work out.

    Reason black pants are my fav to work out in!

    This looks so amazing! I also want to know more about fasting, but I’ve always been told because I’m a type 1 diabetic that I shouldn’t do fasting. I’m going to check with my doctor, but I would definitely be interested in a post on fasting!

    Threw it in the CP before work yesterday – ate it for dinner, breakfast this morning…a little more for breakfast this morning, and will have again for lunch. I think that will be the extent of the leftovers. Used a mandoline to thinly slice two whole vidalia onions (just chopping off ends; not chopping into smaller pieces before slicing), and they became almost like vermicelli noodles – totally fork wrappable and delicious, but without intestinal inflammation!! Delish! Thanks.
