So if you haven’t figured out what leftovers is by now, you’re a little late to the party. It’s cool. You brought beer right? Kidding. I hate beer. It tastes like feet water. Don’t say no. I’m right. Maybe it’s because I’m so young, I still don’t like the taste of alcohol. Maybe. Or maybe because I’d rather waste my calories away on dark chocolate binges and late night serenades with sea side cheddar. Mmmm I love seaside cheddar.

Holy crap, I didn’t even tell you what leftovers means. No, it’s not the leftovers I had in my fridge. It’s a meal I have made in the past, loved, and wanted to make again since my pictures sucked ass back then. This post shows the disgusting picture that was taken back in the day when I was working 4 jobs and only used my camera phone at 5am. So, anyone who still had the balls to try out the recipe, EVEN AFTER looking at the picture, I love you. And applaud your bravery.

I fasted yesterday. A really long time. Like 26 hours long time. I’m going to teach you something so you never make the same mistake I do. So listen closely.

Do not, I repeat DO NOT, fast for 26 hours, while on your monthly gift, and attempt a Regionals wod…all on a Monday. Just don’t do it. Yes, I understand I just lost 10 male readers purely on the fact I said “monthly gift”, but I do not care. It’s all a terrible idea and I wish it on no one. I cried staring at the pull up bar. I cried sitting on the floor after the workout. I cried on my drive home to fix my makeup. AND I cried while doing my makeup. Are you serious Juli? Get your sh*t together. You’ve had your monthly gift, MONTHLY, for 10+ years now. If you don’t know how to control your emotions at this point, there’s no hope.

On the up side…oh wait…there is no up side. I’m kidding people, I’m not that negative. Up side: it was super hot today and my pants got so sweaty, it looked like I peed myself. Always searching for the awkward happiness in the small thing. Positive Polly right here.

Leftovers: Crockpot Brazilian Curry Chicken

Ingredients

Scale
  • 1.52 lbs chicken breasts (or whatever suits your fancy)
  • 3/4 cup canned coconut milk
  • 1 cup chicken bone broth
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • 1 tablespoon ground ginger
  • 46 tablespoons curry powder
  • 2 bell peppers, chopped into 1 cubes (i used yellow and red)
  • 1 yellow onion, thinly sliced
  • salt and pepper, to taste
  • dash of red pepper flakes

Instructions

  1. Grab out your crockpot!! Wooooo crock pot time!
  2. Add in the coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper, red pepper flakes, and whisk together.
  3. Add in peppers and onions.
  4. Next, add in chicken and pour broth over the chicken.
  5. Mix all ingredients together to completely cover the chicken in the curry mixture.
  6. Cover and cook at low for 6-8 hours or high for 4-5 hours.
  7. Then eat it in a cute Tupperware bowl. Or plate….be that way.

    Hello! I am the girl who had the balls to try out the original recipe, EVEN AFTER looking at the picture. I just found this one today. So that means I have been making the original Brazilian curry chicken once a week for about 3 months (I found your blog June 2012) It’s my second favorite night of the week…and the leftovers are my most favorite night of the week. I’m also the girl who never takes the time to comment on the few blogs I read…but felt compelled to express some sort of thank you b/c I look forward to brazilian curry chicken night every week!!!

    made an amazing medium/hot curry! Adapted from this recipe. https://paleomg.com/leftovers-brazilian-curry-chicken/ Changes: for a double recipe – I used a 3.8 lb whole bird, w/ skin and removed skin & shredded it after. I used 10ish Tablespoons yellow curry 3T thai kitchen red curry paste (this is key!) omit ground ginger, use 2T fresh grated ginger rounded, omit bell peppers, double everything else. I chopped my onions. cook, On high about 3.5 hours, on low 6-7. then, 1.5 to 2.15 hrs from chicken being done /end of cooking add 1 extra large or two small, peeled, sliced, salted on paper towel & patted dry then cubed eggplant (1.2lbs skinned) the Thai kitchen has some other authentic ingredients, but no preservatives. Feel free to try it and re post it with another name or whatever. I also made the recipe just using the yellow curry ( also with eggplant) and while quite good not near the complexity of flavor as with the thai kitchen curry paste. I garnished with cilantro.

      I am eating it again with the above adaptations, and loving it more than ice cream (my favorite indulgence) PLEASE everyone, try it with the Thai red chili paste. It takes this recipe from like a 9.5 to a 12! I was going to freeze some, that’s why I made doubles, but I truly think I will eat it for lunch and dinner until it’s gone. okay, I am done now.

    made this tonight for the family, and everyone had seconds. The ‘sauce’ was a bit thin for us, so I added coconut cream, then it made it not as spicy so I added 2tsp thai green curry paste. NOMNOMNOM, ‘o’ on a plate.

    How awesome! I just found this recipe but I don’t cook in a crock pot because I have not had luck with them. SoooOooOooOoo I used your ingredients, but added kale (because it’s yummy and pretty) and whipped it up in about 30 minutes. Woah. It is DELICIOUS!!!!     Okay… Ive been loving on your site for a couple of months now, But today i finally felt compelled to say something. I felt like we were soul sisters when u said beer tastes like feet water…. I FELL OUT LAUGHING (not an understatement). It totally does… and anyone who thinks otherwise is lying through their beer/feet water breath mouth!!! In all honesty though.
