Stop right now. Stop thinking I’m a genius. This idea was not mine. I altered it and made it to what I think is better, and you know I’m always right. So I guess you can still think of me as a genius. And worship me. Wow, that was a bold statement. I’m kidding about that. We all know I’m just a single female with crazy hormones who needs a chocolate fix regularly. Thank god for google which led me to Paleo Perfectly who answered my prayers for an easy, delicious chocolate cake on a Sunday afternoon, hungover, while alone at my house.

Let’s talk about girl things. If you didn’t know by now, I’m a female….a super single female to be exact. I make that clear in about….every blog post. But here’s my issue. I dress in spandex EVERY DAY. And I wear a headband EVERY DAY. It’s my job. I coach then I workout. Hard life. But I tend to lose my femininity. So what did I do this week?! I got my hair did. Oh yes I did! My amazing friend Baylee from Rebel Salon did a fantastic job, adding multiple colors and layers. I know you all care so much about this and all, but I had to tell you.

So you know what I did with my new hair-do? I styled it, put on a dress that becomes shorter with every step, AND added a pair of boots to the mix. I proceeded to add strong drinks, drinks meaning shots, and found my way to the dancefloor at Blake Street Tavern. The whole plan of this night was to look cute enough to get a number, hopefully by a sober male who loves CrossFit, is hilarious, and loves paleo baked goods. Let’s be realistic, that failed. I was flailing across the dancefloor with all couples. I looked cool, real cool.

To sum up this night, I don’t like drinking. The cleaner I eat, the less I drink, the more my body hates when I do mean things to it. So to recover from poisoning my body, I made paleo cake in a mug, watched ‘Chopped’ on my computer, and curled up in my bed trying not to vomit. Thank goodness for being single. When you’re single, you can make yourself paleo cake in a mug, on a Sunday afternoon, and no one can tell you any different. You can sport headbands, spandex, and an uncomfortable odor that no one in the room will talk about, and that’s cool! And you can flail across the dancefloor, never getting hit on, and that’s perfect. Being single is so fantastic.

    I’d SO love to try this!

    I can probably figure out how to make it using only coconut flour, as I’m broke and out of anything else.
    However, I fished through the rest of the comments and noticed the question has yet to be answered:

    How long and at what temp should we try this in a conventional oven?

    Hmm… maybe it took me writing that out to think of it. Duh.
    It’s a CUPcake!
    So then, I may just attempt this in my little toaster oven (so as to not heat up the house for 2 little mugs o’ cake).

    Yeah, well, thanks for the therapy session here. Nice to talk it all out, realize I knew the answer to my problem all along, and get rewarded with warm chocolate cake.

      Hey Julie! I’m honestly not totally sure, I’m guessing at about 350 for maybe 12-15 minutes? But I haven’t messed about with it. I love chocolate therapy sessions

    I think the best part about this is it actually has the texture of regular cake (I was worried about that, since I’ve tried other paleo sweet recipes where the texture just was wrong). Husband didn’t even know it was paleo, and now he asks for it! I feel extra sneaky.

    Usually sub coconut oil for the walnut oil, since we always have coconut oil in the house. Use the extra virgin stuff that actually smells/tastes like coconut. YUM!

    So, am I missing something? I followed the recipe above to the letter (save the walnut oil – I don’t have any of that, so I used ghee)… and this was the thickest cake batter I’ve ever seen – the consistency of peanut butter. Are you sure you’re not supposed to add some almond milk or something to it? (it also seems to need baking soda or powder…) It’s quite dry and a bit on the bitter side. I want to love this like everyone else, but I’m wondering if you’re missing an ingredient or two up there…because mine was definitely not spectacular.

      i’m not sure what went wrong. did you use the egg? that’s what should make it more of a batter consistency.

        Yep. Still peanut butter. (For the record, I just want to state that I’m not a n00b to cooking…I have a culinary degree and I’m a former pastry chef. It’s just difficult for swinging to non-dairy, non-gluten cooking!)

        From previous experiments, I’d say it’s the coconut flour, and the lack of liquid (like almond milk or something). This is the first recipe I’ve seen where there are equal parts almond flour and coconut flour. Usually the coconut flour is far less than this. Usually, when I use coconut flour, my ratio is 4Tbsp coconut flour : 1 cup regular AP flour. Since you can swap out almond flour for regular, the next time I try this, I’ll be cutting the cocnut flour back to about 1.5 teaspoons instead.

        Or maybe it’s the brands of what I’m using. Or the climate. Who knows. There’s a lot of 5-star ratings on the recipe, and even being skeptical and thinking that a lot of them are fake (which I don’t, but some might say that) they can’t ALL be, so I guess I’ll have to chalk it up to some weird unknown factor.

        I the meantime, I’m adding milk (I’m out of almond milk, so it won’t be strictly paleo this time) and attempting to fix what I’ve got. Thanks for the recipe, though!

          I used coconut oil instead of walnut, half the amount of agave nectar instead of honey (I really dislike honey, unfortunately), and cayenne instead of cinnamon, and loved the result. I AM a noob to cooking, but in my admittedly small amount of experience in paleo baking, I’ve noticed that the textures simply haven’t been quite like the flour-based versions despite the flavors being very similar. I grew up on Chinese pastries though, which tend to be less sweet and more dry than American counterparts, and this recipe (with my minor alterations) was simply perfect for me. I hope you can figure out how to alter it to suit you!

    Okay, this actually works. With my super powered microwave it only took about a minute, and I used plain old sunflower seed oil instead of walnut. Just slightly on the dry side, may use a wee bit of hot water to get the cocoa powder to bloom next time. NOM <3
