I’m pretty sure these chocolate cups are the whole reason that I’ve been addicted to sugar lately. I can usually stay away from sugar, but after I made these, they were damn hard to put down. I’m seriously obsessed with them. And now very sad that they are gone…and I’m left craving sugar every night. They were totally worth it, but it’s definitely time to cut the cord. Yesterday was my first day with no sugar and I felt so much better. I know this isn’t exactly selling these cups, but I make dessert all the time and these are the dessert that fishhooked me in! Bastards. You should totally make them.
Can you believe it’s already December?! It’s freaking December 1st. I don’t understand how time goes by so fast nowadays. We don’t even have a Christmas tree up yet. I feel like everyone is on top of their sh*t, except for me. I just have a hard time wanting to purchase Christmas decor that you put out for 1 month a year then it takes up room in your storage. I know that’s totally Scrooge-ish and I should really get in the spirit, but I’m just not there yet.
You know what might help…GETTING A HOT TUB!! Our friends from Nebraska who own a pool and landscaping company are driving out a hot tub for us (after we drove a pontoon boat out to Nebraska for them) so we are going to party it up with them this weekend and take a few dips in our new hot tub! My husband and I both don’t love winter, but he snowboards so he doesn’t mind it as much, but I think this hot tub is going to make us hate winters way less and give us more opportunities to hang out and appreciate time together! So many of our nights are spent vegging out on the couch just watching a show and I’m excited for more moments to connect and actually talk. I’m so pumped for it!
And since the friends who are coming out from Nebraska are also friends who were big parts of our wedding, so we are going to have another Jamaica party! We are going to make cocktails that we had in Jamaica, make some jerk chicken, then take dunks in the hot tub and imagine that it’s the ocean. It will be exactly like Jamaica. Holy crap, I want another beach vacation. I miss that place. That was the best destination wedding ever! If you are engaged, stop planning a wedding and do a destination one instead. It was so freaking awesome.

Pumpkin Chocolate Chip Cookie Dough Cups
- Yield: 10-12 chocolate cups 1x
Ingredients
- 2 1/4 cups mini chocolate chips
- 1/2 cup cashew butter
- 1/4 cup pumpkin puree
- 1/4 cup tapioca flour
- 1/4 cup almond flour
- 3 tablespoons maple syrup
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- pinch of salt
- coarse sea salt, for garnish
Instructions
- Melt 2 cups of chocolate in a double boiler until smooth.
- Use a silicone muffin tray or silicone liners OR line a muffin tin with paper liners. Use a brush or a spoon to spread about ½ – 1 tablespoon of melted chocolate in the bottom of each liner and up onto the sides to create a cup. Place in freezer for about 10 minutes to harden.
- While the chocolate hardens, pulse together the cashew butter, pumpkin puree, tapioca and almond flour, maple syrup, pumpkin pie spice, vanilla extract and salt in a food processor until well combine. Then fold in the chocolate chips.
- Once chocolate is hard, use a cookie scoop to scoop 1 tablespoon of pumpkin pie cookie dough into the middle of the chocolate cup, flattening it out on top and keeping room around the sides so the chocolate cup can be sealed. Repeat with all the chocolate cups then place back in the freezer for 10 minutes to help harden the cookie dough.
- After ten minutes, pour the rest of the chocolate on top of each chocolate cup, sealing up the sides and covering the top. Sprinkle with coarse sea salt on top then place in the fridge for 10 minutes before eating them up!

I just wanted to tell you how much I love your creations! I have bought two of your cookbooks and make weekday dinners from them on a regular basis. My husband loves everything and tells me how awesome all the food is. (I then proceed to shout its Paleo OMG! and then he yells in a high pitched voice “OMG!”-its our new routine). Your recipes are easy and oh so tasty! I threw together some coconut sticky rice last night and it is our new favorite thing. I cannot wait to dive into some of your desserts this weekend!

Looove your podcast. I just started listening last week so I am catching up on all of them. Anyway, wanted to ask you a couple questions that maybe will give you an idea for a podcast or the reader question thing.
#1: paleo snacking. I’m not totally paleo so I usually will eat a siggis yogurt with almonds or an apple with almond butter for snacks throughout the day, but do you have any other snack suggestions?! I like the portability of them but I’m getting a little bored and would love some other ideas that don’t require a ton of ingredients (#gradschoolprobs #studentloanlife)
#2: Jackson!! My boyfriend and I just adopted a puppy and wow it’s hard work. I’d love to know more about Jackson as a puppy, how you trained him, any tips you have, things you love and don’t love about having a dog, etc. etc. Who doesn’t love talking about their dog?!
#3: This recipe looks awesome! Sugar addiction or not I think I need to try it!

I feel ya on the Christmas decorating scrooginess. I hate how the tree takes up my entire living room, so for a whole month I feel like my house has shrunk. I like lights outside but I hate heights so they go up on the lower level only and look lame. My kids beg for those ugly inflatable things every year and every year I say hell no. I’m a great mom.
I’ll make these for my kids and they’ll love me anyway, I hope. Also, my 9 year old makes the crepes from your cherry jam crepe stack weekly. We love them and they’re simple enough that she can make them herself.

I love the concept of these, and am dying to make them, but I’m not big on pumpkin. Do you think it would drastically screw these up to leave out the pumpkin and pumpkin spice? Maybe I should add more cashew butter? Inquiring minds want to know. 😉

Ooooohhh…I agree, Marie. The Magic Pumpkin Bars weren’t too pumpkin-y. I’ll try it without the pumpkin anyway and post an update. I just worry that without the pumpkin it’ll be too dry and not have the gooey deliciousness. I have a couple ideas…

Soooooo…I made these today with my 6 year old. She had a blast! I changed it up a little bit and they came out delicious!
Here’s what I did:
I took a solid handful of gluten free pretzels and broke them up until they were in small pieces but not obliterated into powder. I dumped the crushed pretzels in a flour sifter so I could sift out all the pretzel “powder,” leaving just the chunks. I dumped my pretzel chunks into the melted chocolate and followed the rest of step 2. Then, for the innards, I removed the pumpkin and pumpkin spice and added an extra tablespoon of maple syrup, plus two heaping tablespoons of melted ghee.
The inside still isn’t as gooey as Juli’s (Get your mind out of the gutter!), but totally tastes like cookie dough. The pretzels add a fun crunch (I love adding various textures in my food) and a little more saltiness, which I loved, but that could just be the PMS talking. Next time I make these, I will try dark chocolate, because I used semi sweet and it was too sweet for me. It could also be because I used “normal” chocolate chips instead of Enjoy Life.
