Pancakes are one of those paleo items that actually got me on board with paleo. But paleo pancakes were A LOT different almost 6 years ago. They were dry or eggy or banana-y, but they did the job…with lots of maple syrup on top. But paleo pancakes have evolved and these may be my favorite so far. I’ve made so many in the past, both on my website and in my newest cookbook, but these may shine the brightest. And they are scream basicb*tch fallishere and Ilovetowearblanketscavesanduggboots. Aka they are the best. But if you hate all of those things or just everything I just said, not to worry, you should still eat them anyways.

I feel like you and I haven’t talked in forever. And I’m trying to think what’s been going on. I went to Omaha to visit family over the weekend where I had a bloody mary martini at the sushi restaurant Blue and it was pretty much the best drink of my life. I’ve been planning my husband’s birthday which falls right after Christmas so it’s often forgotten about. The only thing I’ve planned so far is where we are going to eat dinner and I made a reservation, which is annoying to him since he absolutely hates plans. But that is already way more than I’ve ever done for him in the past. We have a wedding coming up this weekend. We are doing Thanksgiving with my parents in Colorado this year…after I get a workout in then instantly buzzed afterwards (a Thanksgiving Day tradition at our gym for the past 5 years). And that’s about it. I’m going to break it to my family that I don’t want to do gifts at Christmas anymore. As I get older, I’ve decided that if I want something bad enough, I will work hard to get it. I don’t need my parents wasting any of their retirement money on me anymore. It’s pointless. Not sure they will be on board, but we will see. And that’s that. Hoping for a random vacation to come up in January, but only time will tell. OH SH*T, I almost forgot. We have a hot tub coming in a few weeks!! Now if it would only get cold in Colorado. I’ve never wished that in my life, but I’m not sitting in a hot tub in 70 degree weather so…..

Pumpkin Crumb Pancakes with Nuts.com

Instructions

  1. Whisk together pancake ingredients: eggs, almond milk, pumpkin puree, maple syrup and vanilla extract in a large bowl. Then, while continuously whisking, add coconut flour, tapioca flour, pumpkin pie spice, baking powder and baking soda and a pinch of salt to the large bowl or blender. Mix until batter is well combined.
  2. Grease a griddle pan and place over medium heat. Once pan is hot, use a large ladle to pour a three inch size pancake on the pan then sprinkle with a small amount of chocolate chips on top. Cook until bubbles begin to form on the pancakes, about 3-4 minutes, then lift with a spatula and cook for another 2-3 minutes, until completely cooked through. Repeat until no batter remains – about 14 pancakes.
  3. While the pancakes are finishing up, place all ingredients for the crumb topping in a food processor or blender and pulse until cashews are broken up and everything is combine.
  4. Top pancakes with crumb mixture and extra maple syrup on top!

    HI JB, I’m so on board with the no gifts. I’m so sick of my house being full of stuff I never really wanted. I read the “The Life Changing Magic of Tidying Up” and finally got my household organised so I don’t really want to be gifted some more crap I never wanted.
    I’m also pregnant- two months away from having Baby #2- its so much different the second time around and NOT terrifying.

    tried to make these without eggs…LMAO FAIL! you mention you have issues with eggs sometimes… do you find they don’t bother you when you bake with them ?

      i did not! the blade melts it a little bit, but it keeps the crumb topping a little sticky

    Let us know how it goes in getting the family on board with ‘no gifts’. This has been bothering me for years now; ll the STUFF that gets purchased and we don’t even really need it! I save money all year to pay for Christmas and I know it affects the budgets of both of our families too… it just seems silly. Do you have any ideas for what to do in place of gifts, ie new traditions, or how you decide to cut back. Also, are you going to try to implement the same plan with your husbands family?

      i think it will be pretty easy at this point because none of us have kids. but we have gotten family into it by doing an elephant gift exchange and putting price limit at $50. it’s interactive and fun on christmas day!

    Birthing things….hahaha . I feel the same way! My son is 5 and we’re not planning on more kids, and I feel like I can’t even keep up with how many kids my friends have! Lol. We did get a puppy so I guess a fur baby counts for something 😉

    I recently tried nuts.com and fell in love with their products! The almond milk has some of the lowest sugar and neutral taste! Also the organic cocoa dusted dark chocolate almonds are amazing!

    First, what a clever name for your blog!

    I tend to buy the pumpkin pancake mix from Trader Joes, though I am absolutely interested in trying to make them from scratch, do you think it would be possible to do these with just egg whites? Or are yolks necessary too? I’ve been trying to skip the fatty yolks whenever possible!
