Do you follow me on Snapchat yet? I’ll let you guess what my username is…because it’s the exact same as every other social media channel I own. Can you guess? I trust your brain. Anywho, I am slightly obsessed with it. Well, only somedays. It’s my therapy session. So whenever sh*t is hitting the fan in my life, I’m chatting on Snapchat. Except my profile is set so that whoever is watching but isn’t my friend on there, they can’t message me. I do that to have some peace and quiet. That way I can be weird AF and I have no one telling me that I’m weird AF. Or people telling me that goat cheese isn’t paleo. THANK YOU, YOU HAVE HELPED ME SO MUCH WITH YOUR INSIGHT. People still let me know that I’m weird AF by writing me on instagram, but they’re weirder for taking the time to switch social media channels to let me know I’m weird. Weirdo. Did you keep up with that?

A couple of my friends, including my fiancé, told me that I have an alter ego on snapchat. He also told me I’m slightly annoying on it sometimes. Jokes on him since he’s marrying me! I don’t think it’s an alter ego, I think it’s just my true personality that has to be pushed down by being an adult. When you’re buying a new sewer line, you have to act like you wear mom jeans on a daily basis instead of having emotional break downs. So snapchat let’s me tap into my teenage side again…minus the acne, small boobs and constant fear of being too weird.

You know what is just the worst? Listening to divorced people talk about marriage. I get it, you hate marriage right now because you’re newly divorced and probably slightly poor since divorce in Colorado is a 50/50 split. I’m sure I would feel the same way. But right now, I don’t. I’m pumped about marrying a human being that makes me a better person. I’m excited to put that dress on, say those vows, and celebrate this exciting time. I don’t need a Debby downer stepping in trying to poop all over my excitement. Knock that sh*t off divorced people! Others still deserve their own happiness!

Speaking of happiness, we’ve been trying to put together a playlist for the wedding reception. We sent out any email to all of our guest asking for requests and they all wrote back in some sort of short joke or unhelpful answer like, “There better be some country!” Well, you idiot (I can say that because they’re my friends), if you want country, request a country song. There are about 16889012942.2 country songs out there, many of which should not be played at a wedding. Like, “The Thunder Rolls” by Garth Brooks. Not the best wedding song. Good country soon, but not a great way to ring in the wedding night. So we’ve put the entire playlist together ourselves. And since YOU are more reliable than the friends coming to our wedding, any songs you think should be at the wedding? I’m not playing the YMCA or macarena kind of bullsh*t, but I’m totally down for Katy Perry or Beyonce. You know, the good stuff. Help me, I trust you!

Salted Caramel Cookie Ice Cream Cups

Instructions

  1. Make ice cream and set in freezer to set up more. (You can also buy coconut milk ice cream if you are in a pinch).
  2. Preheat oven to 350 degrees. Place pecans in a food processor and pulse until they have broken down into a flour consistency.Add almond flour, ghee, egg, honey, vanilla extract, baking powder, cinnamon and salt and puree until is combines completely together (it will form a ball in the food processor). Using a mini muffin tin, use a cookie scoop to scoop out a ball of the crust mixture and place into 14 muffin tin holes. Use your fingers (or the bottom of a spice jar) to press the dough into each muffin tin hole, into a cup formation. Use a fork to poke a few holes in the bottom of each to keep from rising as it bakes. Bake for 20 minutes. Let cool completely.
  3. While the cups bake, make the caramel and let cool slightly.
  4. Melt chocolate in double boiler or microwave.
  5. Once cups are cool, pour 1 teaspoon of melted chocolate into the bottom of the cups. Place in fridge for 2-3 minutes until set. Then use a 1-2 tablespoon cookie scoop to scoop ice cream into each cup. Top with a spoonful of caramel and a pinch of coarse sea sat! Eat up right away!

    I didn’t suggest many songs at my destination wedding and the DJ did a great job! I just told him no “chicken dance” or “shout”…you know the typical bull shit that you don’t want either. I did have them play some Bob Marley during dinner bc cmon you have to in Mexico. You’ll have a blast, forget worrying about the little shit. Congrats again!

    I feel your pain- I was so upset when the response I got from my coworker when I told him I was getting married was “why?”. he totally killed my buzz! Don’t let anyone bring you down- being married is SO MUCH FUN. I love it. enjoy every second of it!
