Carrot Breakfast Cookies

I have a carrot problem. Ya see, I have to grocery shop almost daily so 50% of the time, I order my groceries online and have them delivered right to my home. That way I don’t have to interact with other humans or get out of my pajamas. The problem with that is that you have to really pay attention to what you’re ordering instead of simply grabbing the one item that you need at the store. Well, I wasn’t paying attention and I thought I was ordering 10 individual carrots. Instead…I order 10 32-ounce bags of carrots. If you weren’t sure – THAT’S A LOT OF DAMN CARROTS. So we’ve been eating carrots almost every single day in this household. I’ve been roasting them, I made a Moroccan carrot salad, then these cookies, then muffins. And I still have 6 bags to go. Someone warned me to be careful because if you eat too many in one day, the beta carotene can turn your skin a yellowish-orange color. I’m personally hoping for that at this point to save some time at the spray tan salon. Fingers crossed it works.

Since I still have 6 bags to go, I was thinking about making a carrot-harissa dish tonight. And I still need to whip up a carrot soup. So many people have been sending me carrot soup recipes from other people but the problem is – I hate following recipes. It’s the whole reason I have my own blog and create my own recipes daily. I hate having to pay attention while I’m cooking. Or being told what to do. My ADHD is way too intense for that. But if you have any more carrot inspiration for me, send it my way! 192 ounces still to go.

But enough about carrots, let’s talk about bathrooms. Because we are getting closer to finally breaking ground on our new master bathroom. We live in a 1950’s home with a pretty small master bathroom and we haven’t done much construction on our own home since it was a fix-and-flip and everything was pretty much done when we moved in. ALSO, our sewer line collapsed about a year in to living in this home which took away a huge chunk of change. But finally we are ready to change some things and make the house a little more our own. We had a plumber and electrician come in the other day because we our breaking down a wall and moving another so almost everything will have to move in the bathroom. It will be a bit of a nightmare.

So far, I’ve ordered the floating vanity and I’ve started figuring out the tile. All the fun stuff. Designing spaces is so much damn fun. We are even going to do a heated floor in the bathroom. My MIL has that in her home back in Omaha and it’s THE BEST! Cold feet in the bathroom is my least favorite part of the morning. Now I need to start finding all kinds of other things like drawer handles, sinks, faucets, shower door, mirrors, and even a new toilet. I hate our current toilet. Who knew that you could even hate a toilet?

Now that you toilets on the brain, let’s eat! What a great segway.

  1. OMG…the comment about turning your skin orange…yeah, it totally happens…talking to an expert here! I was easily eating a 1lb bag of carrots daily a couple years ago. The soft fatty areas of my hands/feet and my elbows completely turned orange! My friend asked me “did you just apply self tanner?” That’s when I knew my carrot consumption was an issue! But that won’t stop me from making these! They look delicious! Thanks, Juli!

  2. These look so good! I made some carrot fritters last week and my family went crazy on them – I can’t wait to try these out now!

  3. OMG, I can’t help laughing at your carrot story. Do you know anyone who rides horses? I can promise you a few horses could clear up your carrot problem in a matter of minutes. I’m going to try out these carrot delights for my toddler, I really appreciate that they don’t have any extra sweetener added.

Hang in there for the bathroom odyssey. Construction is a huge hassle but it’s awesome to end up with a (space in your) home that suits you perfectly. How do you feel about taking chances? Check out used furniture for great fixtures in your bathroom. When we built my house, I panicked over the cost of cabinetry and went to craigslist. I scored a fantastic midcentury stereo console for fifty bucks which looks amazing in my bathroom with vessel sinks on it. I feel a glow of victory every time I sit on the toilet and look at it.

  4. I second Laura’s suggestion 🙂 If you’ve never tried it, the cardamom carrot soup from nomnompaleo is very good and a go to for me :). I love carrot soup so I eagerly look forward to a recipe from you!!

  5. This looks great!

I don’t have paleo baking flour but I do have paleo pancake mix —— I’m guessing that is hopefully close enough?

Love your recipes so much they are weekly staples in our house! My picky toddler loves everything I make from your site, it’s amazing!

    1. no clue, i only tried this recipe with the baking mix not the pancake mix so i can’t say for sure. but fingers crossed in case you try it that way! and let me know if it works!

  6. Love all your stories and posts! I say make a Thai coconut carrot soup and freeze it so you don’t OD on carrots.. it does make you turn color.. it happened to my daughter when she was a baby, it looked hysterical… also, enjoy the Reno, it’s sooo fun ?… FYI, I’m a huge Jackson fan as well, I want one

  7. When I was a baby my mother had trouble getting me to eat anything but pureed carrots. She took me to the pediatrician when my skin started turning yellow! BTW, apparently carrots don’t help with your eye sight – I’ve worn glasses since elementary school.

  8. Just pulled these out of the oven and couldn’t wait 10 minutes to eat one they smelled so good. Absolutely delicious 🙂

  9. How did you store these? I put them in an airtight container on counter overnight and this morning the tops were sticky. Is fridge better?

    1. i had a tough time storing these as well. they definitely get a bit sticky no matter if they are on a counter or in the fridge, sadly.

  10. Melanie Gibson

You could try shredding the carrots or chopping them up and putting them into some sort of plastic bag, and then storing them in the freezer. Unless you are having so much fun being creative that the thought of waiting for them to thaw is unbearable.

  11. How would you modify the flour if you add collagen powder to this recipe? Always looking for a way to sneak in protein!

  12. LOL…if you like fresh juicing then carrots with another few things like apples, celery are nice. I have had good luck with carrots lasting quite awhile. These cookies look wonderful . So…new around here…what do you mean by paleo flour mix? Is there one on your site, or do you purchase a mix? Thanks.

  13. These are delicious! I only had almond flour so I used that and it worked great. Tastes like carrot cake for breakfast! Will be saving this recipe. Thanks Juli!

  14. Carrot cake is my favorite kind of cake–I have been meaning to make a healthy carrot cake for the longest time. I just need to purchase a cake tin! Anyhow, these carrot breakfast cookies looked so freaking easy and lovely. I don’t know if I can use an egg replacer for this batch, but I would love to try!

  15. Kathleen Higgs

Delish! My husband asked me to make these again for a fat bike race he is doing.,He loved them so much! In the oven now! Thanks for all of the recipes. Please stop though..I can’t keep up!:)

  16. I’m stuck on the bathroom.
Consider a Hollywood mirror-wall mirror that has an arm and adjust like you find in a hotel. Best ever! Guests will think you are soooooo fancy. ?

    The cookies look awesome.

  17. Aside from the orange zest, I followed the recipe to a T but the batter was really runny and the cookies came out flat. I even went out and specifically bought Bob’s red mill paleo flour. Any suggestions on how I can help these sad cookies? Maybe my almond butter was too runny?

    1. i’m guessing that was the issue. every almond butter is so different. some are thick and some are thin. for this recipe, my almond butter was definitely on the thicker side. i would give that a try!
