I have a carrot problem. Ya see, I have to grocery shop almost daily so 50% of the time, I order my groceries online and have them delivered right to my home. That way I don’t have to interact with other humans or get out of my pajamas. The problem with that is that you have to really pay attention to what you’re ordering instead of simply grabbing the one item that you need at the store. Well, I wasn’t paying attention and I thought I was ordering 10 individual carrots. Instead…I order 10 32-ounce bags of carrots. If you weren’t sure – THAT’S A LOT OF DAMN CARROTS. So we’ve been eating carrots almost every single day in this household. I’ve been roasting them, I made a Moroccan carrot salad, then these cookies, then muffins. And I still have 6 bags to go. Someone warned me to be careful because if you eat too many in one day, the beta carotene can turn your skin a yellowish-orange color. I’m personally hoping for that at this point to save some time at the spray tan salon. Fingers crossed it works.
Since I still have 6 bags to go, I was thinking about making a carrot-harissa dish tonight. And I still need to whip up a carrot soup. So many people have been sending me carrot soup recipes from other people but the problem is – I hate following recipes. It’s the whole reason I have my own blog and create my own recipes daily. I hate having to pay attention while I’m cooking. Or being told what to do. My ADHD is way too intense for that. But if you have any more carrot inspiration for me, send it my way! 192 ounces still to go.
But enough about carrots, let’s talk about bathrooms. Because we are getting closer to finally breaking ground on our new master bathroom. We live in a 1950’s home with a pretty small master bathroom and we haven’t done much construction on our own home since it was a fix-and-flip and everything was pretty much done when we moved in. ALSO, our sewer line collapsed about a year in to living in this home which took away a huge chunk of change. But finally we are ready to change some things and make the house a little more our own. We had a plumber and electrician come in the other day because we our breaking down a wall and moving another so almost everything will have to move in the bathroom. It will be a bit of a nightmare.
So far, I’ve ordered the floating vanity and I’ve started figuring out the tile. All the fun stuff. Designing spaces is so much damn fun. We are even going to do a heated floor in the bathroom. My MIL has that in her home back in Omaha and it’s THE BEST! Cold feet in the bathroom is my least favorite part of the morning. Now I need to start finding all kinds of other things like drawer handles, sinks, faucets, shower door, mirrors, and even a new toilet. I hate our current toilet. Who knew that you could even hate a toilet?

Carrot Breakfast Cookies
- Prep Time: 15 minutes
- Cook Time: 35 minutes
- Total Time: 50 minutes
- Yield: 12-14 cookies 1x
Ingredients
- 3 cups finely shredded carrots
- 1 cup almond butter
- 1/2 cup paleo baking flour
- 1/2 cup maple syrup
- 1 egg
- zest of 1/2 an orange
- 2 teaspoons cinnamon
- 1 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/3 cup raisins
- 1/4 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together all ingredients until combined.
- Use an ice cream scoop to scoop out 12-14 cookies on the baking sheet. Then use the bottom of a glass to slightly flatten out each cookie. Bake for 35-40 minutes, until completely cooked through in the middle. Let rest for 10 minutes before eating!

When I was a baby my mother had trouble getting me to eat anything but pureed carrots. She took me to the pediatrician when my skin started turning yellow! BTW, apparently carrots don’t help with your eye sight – I’ve worn glasses since elementary school.

How did you store these? I put them in an airtight container on counter overnight and this morning the tops were sticky. Is fridge better?
i had a tough time storing these as well. they definitely get a bit sticky no matter if they are on a counter or in the fridge, sadly.
You could try shredding the carrots or chopping them up and putting them into some sort of plastic bag, and then storing them in the freezer. Unless you are having so much fun being creative that the thought of waiting for them to thaw is unbearable.
How would you modify the flour if you add collagen powder to this recipe? Always looking for a way to sneak in protein!

LOL…if you like fresh juicing then carrots with another few things like apples, celery are nice. I have had good luck with carrots lasting quite awhile. These cookies look wonderful . So…new around here…what do you mean by paleo flour mix? Is there one on your site, or do you purchase a mix? Thanks.

Carrot cake is my favorite kind of cake–I have been meaning to make a healthy carrot cake for the longest time. I just need to purchase a cake tin! Anyhow, these carrot breakfast cookies looked so freaking easy and lovely. I don’t know if I can use an egg replacer for this batch, but I would love to try!
