Yayyyyyyy!! Another cassava recipe! A couple weeks ago, I tried cassava out for the first time with my Applesauce Spice Bread and it made me want to try out more recipes! I’ve worked with almond flour, coconut flour, and tapioca flour on all sorts of different recipes so it’s been fun to mix it up with a different kind of flour! If you don’t have cassava flour, well I have no idea how much of the other flours you would need and if they would work 1:1. If I did know, I would tell you. But something that’s realllll nice about these brownies is that they just get better with time. Try to stay in control of your life and after you eat just one of these, put them in an air tight container and into the fridge. Then when you go back for hopefully just one because hopefully you still have your life together, you will reap the benefits of your patience because I think they are even better when they’re cold. And when I tell you that hopefully you can keep your life together, it’s because I couldn’t. I went HAM on these things.
Sooooo I’ve been traveling solo since Sunday which means I’ve had A LOT of time by myself wandering around Walla Walla, Washington, searching for food then trying to walk off my food. So I walk pretty much everywhere with my headphones in to keep me entertained. And I have a new obsession…Wine & Crime Podcast. To the reader who introduced me to this podcast – I LOVE YOU. It’s out of control hilarious…as long as you like true crime. If you don’t like hearing about murder and super f*cked up things, it’s probably not for you. But if you like listening to 3 hilarious chicks get drunk off wine and crack jokes about all things depressing and frightening for over an hour…this is the podcast for you! I actually completely screwed up my makeup yesterday because I laughed so hard that I cried and smeared my eye liner everywhere. So cute. They’re awesome.
Just a quick How Ya Doing With Your Life note – I cannot explain to you how much dry shampoo I have in my hair right now. My goal was to not wash my hair the entire time I was in Walla Walla because I wanted to pack a carry-on and had absolutely no room for shampoo or conditioner. Then they ended up making me check my bag at the gate…the bastards. Well, I’m going strong with my being dirty AF regimen because my hair is pure grease and cake. And that’s not because I ate a gluten free cupcake yesterday and almost died from happiness. No, it’s because there is so much dry shampoo caked in my hair at this point and it’s clinging to the grease so now it’s simply become a slippery slope of sketch. Plus I’m spraying it over and over with root touch-up to cover up my blonde (yet maybe grey) hair. So.Much.Sketch. Also, I have a grey eyelash that is double the length of my other eyelashes and grows SO FAST. Is this what 30 looks like? Because I’m not into it!!!

Cassava Chocolate Chunk Brownies
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 16 brownies 1x
Ingredients
- 1/2 cup ghee
- 1 cup maple sugar
- 1 teaspoon vanilla extract
- 2 eggs, whisked
- 1/2 cup cassava flour
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons espresso powder
- 1/4 teaspoon baking powder
- pinch of salt
- 1/2 cup chocolate chunks
Instructions
- Preheat oven to 350 degrees F. Grease an 8×8 baking dish.
- Using a handheld mixer, beat together ghee, maple sugar and vanilla extract in a medium bowl for about 1 minute then add eggs and beat for another minute until mixture becomes light in color.
- Add in cassava flour, unsweetened cocoa powder, espresso powder, baking powder and salt and mix until completely combine. Then fold in chocolate chunks.
- Place batter into the greased baking dish and spread out evenly. Place in oven to bake for 30-35 minutes, until the middle is cooked through and a toothpick comes out clean. Let brownies cool 10 minutes before slicing!

I had the long grey eyelash thing happen to me too! I tried just trimming it but then my SIL showed me the Guinness World Record for longest eyelash. I immediately plucked it out, because…umm…gross.

These look stupidly amazing. And perfect, because I’ve been wondering what to do with the bag of cassava flour I have lying around…oops! I can’t believe you have 9 brownie recipes. That is insane! Paleo/gf baking is just not my thing, props to you for having that patience (and being able to control your life/hold it together) to test it out multiple times, haha!

you can try but i don’t think it will work. they are different. tapioca is the bleached and extracted starch while cassava flour is the entire root, minus the peel
I made these today and the flavor is delicious. The only thing is that they turned out a little chalky. I wonder where I went wrong! The only thing I can think of is that I used melted Kerry gold instead of ghee. I’m thinking maybe I shouldn’t have melted it? Not sure. Let me know if you have any feedback please.
