I’m not a huge fruit eater. I find that fruit normally gives me some heartburn or I would just prefer to eat vegetables instead. Give me some roasted carrots and I’ll pick those any day over pineapple. But I do love adding some frozen fruit into smoothie sometimes. But not just any fruit. Never will I go to a smoothie spot and order the mango/pineapple/papaya smoothie. That sounds DISGUSTING to me. No no. I want my smoothie to taste like dessert. Chocolate and/or peanut butter are absolute must or I’m not ordering a smoothie. But there is something about mixing frozen blueberries with chocolate that makes me oh so happy. And guess what? This smoothie has hidden beans in it! Since doing the bean protocol last year, I like to add in beans to any meal I make these days, savory or sweet. But not to worry – you can’t taste them. Pretty good for a snack that will definitely hold you over for hours!

Today was such a good day! This time last year I had just brought our french bulldog Jackson home after 16 days at the vet. Those 16 days were so brutal and getting him back home was such a relief. Jackson had neck surgery because of a disc extrusion, but he had major post surgery complications which made everyday a gamble for him. Since CSU Vet Hospital saved his life in March 2020, he’s been on the up and up ever since! Well today I took him back for a routine check up so they could take his blood pressure and luckily it’s normal, which means we will be able to ween him off of his blood pressure medications! When Jackson got home a year ago, he was on 10 medications…now he’s down to 3 medications. And after today’s check up, he may be down to only 1! Seeing him run on our walks again makes me so incredibly happy and I can’t believe how far he’s come. It’s such a reminder that life is such a gift and we are so incredibly lucky every minute we still are able to take a breath, take a walk, and even jog with our pup. Remember that. And also drink a smoothie with beans in it.

Chocolate Blueberry Protein Smoothie

Ingredients

Scale
  • 1/2 cup frozen blueberries
  • 1/3 cup frozen cauliflower rice (it blends better than cauliflower florets)
  • 1/4 cup cannellini beans, drained and rinsed (remove for paleo)
  • 1 scoop chocolate protein powder (code PALEOMG for 10% off)
  • 1 cup almond, oat, or flax milk
  • optional add ins: spinach, cacao nibs, flax seeds, chia seeds, hemp hearts

Instructions

  1. Place all ingredients in blender.
  2. Blend.
  3. Drink up, babyyyyyy!

      Made it per the recipe, except for the beans because I didn’t have any. Also, my protein powder was chocolate-peanut butter. It’s very delicious. Had no idea riced cauliflower would work so well in a smoothie. Thanks for the yummy recipe
