I literally got stuck in my sports bra yesterday. STUCK. I had a certain hair-do going on yesterday and didn’t want to mess it up. Meaning a messy bun that I was about to run in. But, you know how it goes. Don’t ever mess up the perfect bun. Whatever. So I put it over my head first, then tried to get my arms through it. One went through, the other one had a much tougher time. It took me at least 4 minutes to get my other arm through. I started to have a panic attack, sweat emerged, and had to talk myself through it. I got through it. The sports bra made weird sounds. Lululemon has some snug stuff.
So the other day, before I headed off to South Dakota, I grabbed my comforter that had been stuffed into the trunk of multiple cars because of camping, to take with me to keep me snuggly warm while traveling. Well, once I picked it up, stuffing fell out of it. I should explain that this comforter has been with me since my freshmen year of college and it was a bit cheap. BUT, stuffing was never falling out of it. So I tried to figure out why the hell it was dying on me. And I came to find out some sort of greenish stain that was eating away at the comforter. How creepy is that? What do you think it was? I had to throw her away so I wouldn’t get die of a flesh eating virus. Sad day in comforter land.
Why does the Bachelorette suck so much more than the Bachelor? Well, they both kind of suck. But the Bachelorette is extremely boring to watch. But I still seem to have a girls night every Monday to watch it. Even when it’s the men tell all episode. Which is the worst episode of all since the bros really have nothing to tell. Would you be on that show? My best friend tried out. I want her to get on it so I like the show more. But I’m selfish. And it seems like it may be completely awful to be there. How can someone take 6 weeks off of work to be on a fake dating show? It’s just so confusing.
Wow. I obviously don’t have much to talk about today. I do have some muffins to talk about though. Even though I thought my muffins were delicious, I thought some muffins I tried yesterday topped mine. They’re called Nourishe and they have chocolate ginger macadamia muffins and and cinnamon raisin pecan muffins. Both are awesome. Check them out here. And try mine in the meantime. DUH!
Chocolate Chip Protein Muffins (nut free)
- Yield: 10 1x
Ingredients
- 1 cup sunflower seed butter
- 3 eggs, whisked
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened shredded coconut
- 35 grams (1 scoop) Chocolate Primal Fuel (or 1 tablespoon coconut flour if you don’t use protein powder)
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 cup Enjoy Life Mini Chocolate Chips or other dark chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Add sunflower seed butter, eggs and vanilla extract to a large bowl and mix well.
- Then add protein powder, cinnamon, baking powder, and salt and mix well.
- Fold in chocolate chips and coconut.
- Pour batter into 10 baking cups in amuffin tin. I used silicone baking cups to keep them from sticking.
- Bake for 15-20 minutes.
- Let cool slightly before eating. Ummmm YUM!

I subbed the sunflower seed butter with almond, used coconut flour instead of protein powder, and they came out like biscuits, very dry and grainy. not muffin like at all. other then that i followed the recipe as described, any suggestions? i just didn’t want to go out and buy sunflower seed butter and protein powder when i had the other ingredients already.
You can’t sub protein powder 1 for 1 with coconut flour. You can swap different protein powders, but coconut flour can make things brutally dry if you don’t know how to substitute it…sorry you got a 1-star batch out of the whole deal. Brutal.

I substituted almond butter for sunflower butter, and coconut flour for the protein powder. The batter was very doughy, and after reading these comments, I decided to add 1/4 cup of coconut milk. This added the perfect amount of moisture in order to make the batter a little less doughy and yield muffins instead of dry biscuits. They were delicious! Great recipe 🙂
ok I tried this again bc i was determined to get it right! it worked while using the recommended substitutes. i just omitted the shredded coconut, but added 1/3 cup coconut milk (not canned), added more cinnamon and some nutmeg. Came out great and fluffy!

I bet I could sub 1/2 almond butter + 1/2 sun butter like I do for your cookies (nut eaters here) for even better flavor. I bet I could even get my kids to eat these since they have chocolate in them. Love me some Enjoy Life chocolate chips!

I just made similar muffins with 1 cup of sunflower seed butter and they turned green, and weren’t great…any tips on making them better or not having them turn green???
Leslie, its my understanding that the reaction between sunbutter & baking powder causes the green hue. Shouldn’t change the taste, though. So that part was maybe the recipe? If the green bugs you can you sub almond butter? Or just try Juli’s recipe (cuz she’s amazing & it’ll be delish), & love your greenish muffins!
sunflower seed butter and baking soda react and turn green. it’s normal. still fine to eat!!
I love it when sun-butter turns green! I make Paleo Parents’ frozen waffles with it and my daughter gets a kick out of it. Unfortunately, I does affect the taste…it’s not a sharp difference, but it is noticeable.
I can’t wait to try this I was trying to look for a plain chocolate chip muffin paleo recipe and couldn’t find one that wasn’t mixed with pumpkin or some other vegetable purée. 😀
Do you have a particular sunflower seed brand you could recommend? I’m personally more on the nut butter obsession at the moment and will probably also use almond butter (OmG so yummy!) but I really would like to test sunflower seed butter! Your recipe looks scrumptious, with or without the original butter and I can’t wait to try it 🙂

YUM! Every time I try to add protein powder in something, it sucks, so I am excited to try this recipe. Also, I’ve gotten stuck in my triathlon tops more than once. At least you didn’t have to seek assistance like I did.
