Remember when you first found out about chocolate shell? The kind of chocolate that was liquid when you poured it on your ice cream, then solid once it hit the ice cream? And how insanely exciting it was? No? That’s just me. Whatever.

This ice cream is BY FAR my favorite ice cream I have made. Truly. I absolutely love it. And had to put it in the freezer right away to make sure I didn’t eat the whole batch in one sitting. So don’t act like you weren’t warned.

OMG. Remember when I talked about coke head guy on Monday? I totally forgot to show you guys his picture. Don’t worry, his face is hidden, so I can’t get sued. But I wanted to prove to you that a hobbit really was on my plane.

Anywho, back to real life, since obviously he wasn’t a real human. Let’s talk about reality shows, since that’s total real life. These love reality shows are ridiculous. I mean why else would we like them. These shows are stupendously outrageously unrealistic. And when I say this, I’m mostly just talked about The Bachelor. It’s so addicting, you can’t turn away. We even have a weekly girls night dedicated to watching that blasphemy. Those girls are doing literally doing anything to win the heart of a man they know nothing about. Example A: the polar plunge. Oh yeah, I’ll totally get hypothermia in hopes of a guy giving me a rose that means absolutely nothing other than he’ll make out with me first before he makes out with 7 other women. Makes total sense. I guess it’s not sloppy seconds. Not really. It still kind of is. Gross.

Speaking of love, but in more realistic terms, OMG, Valentines Day is soon. Real soon. You know what that means? Well, it means Sergio gets back to Colorado from Afghanistan. Yep, after 6 months in a really lame place, he is back into our lives and back into our gym. So exciting!! It also means I’ll probably be eating large amounts of chocolate. Not because of Sergio, but because chocolate should always be consumed on Vday. ALWAYS. Hopefully it will be Taza. Maybe I’ll make a chocolate filled cake for that special someone. Or maybe for myself.

Chocolate “Peanut Butter” Ice Cream with Chocolate Shell

Ingredients

Scale

For the ice cream

For the chocolate shell

  • 1/4 cup coconut oil, melted
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sunbutter (or other nut butter)
  • 2 tablespoons raw honey
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Place a saucepan over medium heat and add all ice cream ingredients to it, except for the sunflower seed butter. Stir until cocoa powder is completely broken down and ingredients are smooth.
  2. Place saucepan in the freezer until cool. Mine took about an hour.
  3. Pour ice cream ingredients in your ice cream maker and turn on.
  4. When ice cream is almost done mixing, pour in the sunflower seed butter directly into the ice cream maker to churn with your chocolate ice cream.
  5. While ice cream is churning, place the chocolate shell ingredients in a bowl and in the microwave for about 30 seconds until everything is mixed. Whisk together until smooth.
  6. When ice cream is done churning, place in bowl and bowl chocolate shell on top! Maybe even a little extra sunflower seed butter! Boom.
  7. Eat up peanut butter cup!

    Quick question, do you think it’s necessary to use canned coconut milk? Or could I use the stuff in a carton?

    You used straight up ground coffee beans (ground coffee = beans that are ground) or instant coffee that is ‘ground’ and dissolves like all instant coffee?

    Hi Juli, Hope I can ask you a question since I totally respect and love your attitude and smarts. I am struggling with very late night “binging”…I don’t necessarily “overeat” for the day , I eat consistent big meals and snacks, but not necessarily insane calorie overload…but at night I get emotional and want to be comforted…so I eat. Like tonight: 2 oranges, 40 grams of dark chocolate (yes, 40 grams 🙁 ), a tablespoon of nut butter and a carton of yogurt. I know I know.
    I am NOT overweight, but I can’t exercise due to a very low iron status and adrenal fatigue. I try to walk when I can but,,,,we get a lot of snowstorms here and walking is near impossble (like it will start again tommorow, and I’ve binged, oy). My digestion is so off and I’m terribly costipated. I can’t exercise indoors due to numerous older roommates. I feel quite lost.
    When you are constipated and binged the night before and can’t get out and move …ugh, nightmare.
    How can I “recover” from a binge, etc. How does one “detox” in such a situation. I feel like its hopeless. Thanks for any help.

      Hey Rach! I know how that goes, I can totally connect with you. The thing about that stuff sometimes is just cutting it cold turkey. making yourself not eat those things you usually do. that’s what helped me, just drank some tea before i went to bed and forced myself not to eat. that was really all that worked for me. good luck rach, lots of people go through this just like you

    I loved the chocolate shell on ice cream. I would add a layer, eat the shell and some ice cream, then add another layer, and keep going with the chocolate shell additions until the ice cream was gone.

    Yay, Sergio’s coming back! Does this mean we’ll get more stories about his ridiculousness? I mean, it’s cool about Schmidt, but I’m much more excited for you about the news about a real person – Sergio!

    Tried this tonight and couldn’t get it to freeze in my ice cream maker. Any suggestions? Brand new to Paleo lifestyle, so I’m not sure what I did wrong. But it was delicious after I threw it in the blender with some ice! 😉

      was it warm when you put it in the ice cream maker? it has to be cool or at room temperature for it to freeze correctly

    Do you think I could add some mashed strawberries, or other berries to your basic ice cream recipe (I don’t mean the chocolate one of course) and make fruit flavored ice cream that way? Do you think you may post a strawberry ice cream recipe or anything like that in the close future? That would be wonderful! I don’t really like to experiment with stuff myself:))
