I love and respect waffles. More than pancakes. #factoftheday
I did it. I took my first spin class. Well, not my first one ever, but the first one in my new attempt for more cardio and more exercise. I love my CrossFit, I like to lie and act like I love my running, and now I’m trying to love spinning. I’ve lost some inches by lifting less during my workouts and running more, and feel much more comfortable in my skin, so I’m keeping it going with a little more movement in my day. Spinning makes you real sweaty.
It was funny to walk into a globo gym for the first time in probably over 3 years. I haven’t been in one since I worked at the Rec Center in college. And if you went to a big college, you know what those gyms look like. Lots of cut off t’s, lots of short shorts, and lots of make up. And girls that haven’t eaten in weeks because they are trying to lose 20 pounds in 2 weeks before spring break. Obviously, college students are extremely intelligent about their eating and drinking habits. Maybe if they cut the beer out, they wouldn’t have to starve themselves. And pass out while ellipticalling. That’s not a word. Whatever. Anywho, after being in a CrossFit gym for over 3 years and knowing every person in the gym, it was weird to walk into a gym where no one talks much. Everyone looks so serious. And it was weird to have mirrors everywhere. Not really into that. I like not knowing my pain face.
Anywho, do I need to watch Game of Thrones? I feel like I’m the only person in the world of Facebook that isn’t watching it then Facebooking about it. I don’t even know what it’s about. But now I’m interested. And curious. I want to be part of the in crowd.
Do you ever wonder how many fake people exist on Facebook? No? I do. I totally do. Facebook is kind of really creepy.
OMG. A new season of The Kardashians is on. I don’t care what you think of me, I LOVE that show. L.O.V.E. It’s so addicting. I don’t really know why. Probably because their makeup is so awesome, or because they have lots of money. People with lots of money are interesting to watch. Not really, but kind of.
I’m really boring myself today. I can’t imagine how you’re feeling.
Cinnamon Banana Waffles
- Yield: 5 1x
Ingredients
- 2 medium bananas, very ripe
- 2 eggs
- 3 tablespoons maple syrup
- 1 tablespoon coconut oil
- 1/4 cup coconut or almond milk
- 1 cup almond flour/meal
- 1 cup unsweetened shredded coconut
- 2 tablespoons arrowroot powder
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Preheat waffle iron.
- Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
- Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
- Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
- My batter made 5 waffles total.
- Top with bananas, syrup, and even some grass fed butter. That would be real good.

I love both spin class and Crossfit. If you stick with spinning I definitely recommend investing in padded shorts with a long inseam, your crotch will thank you 😉

If you substitute the almond flour/meal and arrow root powder for coconut flour is the amount still the same? While I’m here I wanted to let you know that I love your blog I’m new to paleo and this has been a huge help. Made your sweet potato brownies, buffalo chicken meatloaf, and shredded beef all delicious. Thank you for sharing your delicious recipes and making paleo easier for us folks who aren’t so used to eating healthy.

I love love LOVE your blog! You’re hilarious. You make paleo fun and interesting! Game of Thrones rocks; totally recommend it. Also, I’m so happy to hear that a paleo/crossfit-er is okay with doing cardio. I’ve been reading a lot of paleo blogs that recommend sprinting or walking as the only acceptable cardio. I love/hate running, too, but I’m not about to give it up. I like to mix things up. Can’t wait to try these waffles! Waffles for dinner are okay, right?
First of all, I love you! If you really want to laugh at yourself and do more cardio, try zumba. I do it twice a week and sweat like crazy and feel like a fool. But it is awesomely amazing if you want to add more cardio. Secondly, I’m going to make these waffles right now, they look that amazing. Third, you should just know you are awesome and I enjoy reading your blogs and trying out your recipes!
