I love and respect waffles. More than pancakes. #factoftheday
I did it. I took my first spin class. Well, not my first one ever, but the first one in my new attempt for more cardio and more exercise. I love my CrossFit, I like to lie and act like I love my running, and now I’m trying to love spinning. I’ve lost some inches by lifting less during my workouts and running more, and feel much more comfortable in my skin, so I’m keeping it going with a little more movement in my day. Spinning makes you real sweaty.
It was funny to walk into a globo gym for the first time in probably over 3 years. I haven’t been in one since I worked at the Rec Center in college. And if you went to a big college, you know what those gyms look like. Lots of cut off t’s, lots of short shorts, and lots of make up. And girls that haven’t eaten in weeks because they are trying to lose 20 pounds in 2 weeks before spring break. Obviously, college students are extremely intelligent about their eating and drinking habits. Maybe if they cut the beer out, they wouldn’t have to starve themselves. And pass out while ellipticalling. That’s not a word. Whatever. Anywho, after being in a CrossFit gym for over 3 years and knowing every person in the gym, it was weird to walk into a gym where no one talks much. Everyone looks so serious. And it was weird to have mirrors everywhere. Not really into that. I like not knowing my pain face.
Anywho, do I need to watch Game of Thrones? I feel like I’m the only person in the world of Facebook that isn’t watching it then Facebooking about it. I don’t even know what it’s about. But now I’m interested. And curious. I want to be part of the in crowd.
Do you ever wonder how many fake people exist on Facebook? No? I do. I totally do. Facebook is kind of really creepy.
OMG. A new season of The Kardashians is on. I don’t care what you think of me, I LOVE that show. L.O.V.E. It’s so addicting. I don’t really know why. Probably because their makeup is so awesome, or because they have lots of money. People with lots of money are interesting to watch. Not really, but kind of.
I’m really boring myself today. I can’t imagine how you’re feeling.
Cinnamon Banana Waffles
- Yield: 5 1x
Ingredients
- 2 medium bananas, very ripe
- 2 eggs
- 3 tablespoons maple syrup
- 1 tablespoon coconut oil
- 1/4 cup coconut or almond milk
- 1 cup almond flour/meal
- 1 cup unsweetened shredded coconut
- 2 tablespoons arrowroot powder
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Preheat waffle iron.
- Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
- Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
- Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
- My batter made 5 waffles total.
- Top with bananas, syrup, and even some grass fed butter. That would be real good.

These are great! Making these for the husband and kid for dinner tonight with blueberries and choc chips. We make the cinnamon plantain pancakes for waffles all the time and they freeze well!
Yes you should watch Games of Thrones! You have to start at season 1 though because it’s (in my opinion) important. I usually don’t like shows or movies set in that time period but my husband talked me into it and now i’m addicted! It’s fantastic! Typical HBO show (lots of nakedness and violence).
I’ve debated taking a spin class for, geez, probably years now and have never done it. Would you recommend it? Crossfit has made me bigger than I want to be too and I’m struggling finding something else I enjoy that isn’t going to make me bigger. Tried swimming. It’s fun but i suck at it and not efficient at all.

Well, I can’t eat almonds, so will have to pass. However, back in the old wheat flour waffle days, I just remember them as being a big delivery system for butter and maple syrup.
Now you are going to make me go look for my waffle irons (yes multiple) I’ve even got an old Wagner cast iron one from around 1910 or 1920. We might have to have a Mile High Paleo Walffle Day. Could be an annual event.
My one-year old ate these this morning like it was his job oh, and I loved them, too!

Yes, for those of us with nut allergies, what is a good substitute for almond flour? And why is soy a bad ingredient? I love soy milk and want to try soy flour in some recipes.
coconut flour or tapioca flour. and soy is a legume which is not something we want to be eating regularly
Made these yesterday, first they were super simple to throw together, second they smelled so good while cooking, third they didn’t stick to the waffle iron, and fourth…they taste great!! And to add to all of that, they warm up well in the toaster. Kids and I enjoyed these 2 days in a row. 🙂 Thank you for the recipe. I’ve tried 5-6 paleo waffle recipes and this one is in the top 2. Yum!

How do you hold back from crossfit. I so badly want to increase in weights and do more pullups but it does make me larger… I notice the cute small girls can’t really lift their own body weight.
Substitute for arrowroot powder? I’ve got everything else on hand.. Thanks!
